Introduction

Japanese food reflects the culture and


traditions of the people passed down from
generation to generation. Aside from this,
Japanese people use a lot of stock or dashi,
which is the base of their cooking.
Secondly, a Japanese dish is a balanced meal
of different components, including but not
limited to rice, nori, tsukudani, broth,
pickles/fermented food, proteins, vegetable,
and a homemade drink.
You will be seeing lots of raw foods, but they
are delicious. Note, always use fresh
ingredients when cooking Japanese food.
Below are 30 Japanese recipes to get you
started on your journey to the Far East
region?

Methods:
Cut the pork meat into small lines. Prepare
them in an oiled frying pan. Add salt to taste.
Cut potatoes, carrots, and onions into cubes.
Add them to the meat.
Cover them with 1 cup of water. Cook for 15
minutes.
When potatoes become soft, add soya sauce,
sake, red wine, and sugar. Cook for another
15 minutes.
Serve and enjoy!
Japanese Spring Rolls

Total Prep Time: 60 minutes

Ingredient List:
For the dough :
2 cups of flour
6 tablespoons of starch
5 cups of water
½ teaspoon of salt

For stuffing :
4 garlic cloves
1 onion
2 carrots
1 cup of spinach
1 zucchini
1 red bell pepper
1 cup of mushrooms

Methods:
Cut garlic cloves, onion, carrots, spinach,
zucchini, pepper, and mushrooms into
smaller pieces to taste.
Mix flour, water, starch, and salt together.
Use a mixer and then let the mixture sit for at
least 30 minutes in a fridge.
From the resulting mixture, make thick
pancakes in an oiled frying pan.
Fry vegetables in a frying pan. Spice them to
taste (soya sauce, ginger, salt, pepper, red
pepper…).
Fill pancakes with vegetables and then roll
them.
Fry the resulting rolls in deep oil for 3
minutes each.
Serve and enjoy!
Sour Ginger Sauce

Ideal for sushi!

Ingredient List:
7 oz. of ginger
1 teaspoon of salt
1 tablespoon of sugar
½ cup of rice vinegar

Methods:
Clean and peel the ginger.
Cut ginger into small pieces, pour salt over it
and let it sit there for 60 minutes. (To release
the water)
In one cooking pot, cook vinegar with sugar
for 10 minutes.
Pour vinegar mixture over the ginger and
then let it cool.
Keep in a fridge!
Japanese Pancakes

Total Prep Time: 45 minutes

Ingredient List:
1 cabbage head
1 zucchini
1 red bell pepper
4 tablespoons of oil
1 onion
2 cups of flour
2 tablespoons of water

Methods:
Cut onion and pepper into small cubes and
then sauté them in an oiled frying pan.
Wash the zucchini and cut it into small cubes
too. Grind the cabbage.
Add them to the frying mixture and continue.
Then prepare the pancakes:
Combine flour and water. Use mixer.
Add fried vegetables to the mixture.
With the kitchen spoon, pour the
mixture into an oiled frying pan and
make thick pancakes.

Serve with sauce to taste and enjoy! (We


suggest Yum Yum sauce, which you can find
on the next page) 
Japanese Cheesecake

Total Prep Time: 100 minutes


Portion Size: 6
Ingredient List:
6 eggs
9 oz. of cream cheese
2 oz. of butter
7 tablespoons of milk
3 oz. of flour
1 oz. of starch
½ teaspoon of salt
3 tablespoons of lemon juice
½ teaspoon of baking powder
6 oz. of sugar

Methods:
Separate egg yolks from egg whites.
Melt butter with cream cheese until you get a
homogeny mixture.
Gradually, one by one, add flour, starch, salt,
2 oz. of sugar, egg yolks, and lemon juice to
the butter mixture. Mix until you get a
homogeny mixture.
Blend egg whites until you get foam. When
you get foam, add baking powder and 4 oz. of
sugar.
Carefully, combine the white and yellow
mixture.
Bake the resulting mixture in the oven for 60
minutes at 200°F. (Use a cooking pot or a
cake mold).
After 60 minutes of baking, turn the oven off
but keep the cooking pot inside for another 30
minutes.
Serve with powdered sugar and fruit to taste.

Vegetable Vegan Sushi

Total Prep Time: 40 minutes

Ingredient List:
1 cup of rice
2 cups of water
½ cup of lemon juice
1 carrot
1 cucumber
1 avocado
6 nori layers
½ cup of soya sauce
4 tablespoons of sesame oil
1 red bell pepper

Methods:
Prepare rice in 2 cups of saltwater. Cook for
10 minutes.
When it is done, combine it with lemon juice.
Let them cool.
Grind the carrot. Cut cucumber, avocado, and
red bell pepper into small cubes.
Spread rice mixture over each nori layer.
Then, add vegetables.
Roll the layers and serve sushi with soya
sauce.

Teriyaki Chicken with
Vegetables

Total Prep Time: 35 minutes

Ingredient List:
2 tablespoons of oil
17 oz. of chicken fillets
1 onion
1 garlic clove
1 carrot
1 zucchini
Salt and pepper to taste
For the red sauce :
½ cup of teriyaki sauce
2 tablespoons of ketchup
1 tablespoon of cut coriander

Methods:
Clean and cut chicken fillets into small lines.
Prepare chicken in an oiled frying pan.
Cut garlic, onion, carrot, and zucchini into
thin lines. Add them to the chicken.
Mix teriyaki sauce and ketchup in order to
make the red sauce.
Add salt to taste and serve all together.
Enjoy!
Chankonabe

A very popular Japanese dish. Used by sumo


fighters to gain weight. Very healthy and
protein-rich indeed!

Ingredient List:
For the soup :
8 cups of water
4 soup chicken cubes
2 tablespoons of soya sauce
2 tablespoons of rice wine
7 oz. of Chinese cabbage
7 oz. of fresh sour cabbage
3 carrots
3 leeks
4 oz. of mushrooms
7 oz. of tofu

For meatballs :
17 oz. of minced chicken meat
2 leeks
1 egg
2 tablespoons of bread crumbs
Pinch of salt

Methods:
Prepare the meatballs:
Mix minced chicken meat with cut
leeks, egg, and breadcrumbs.
Pour them with salt.
Make small balls out of the mixture.

Prepare the soup:


Dissolve chicken soup cubes in 8
cups of water. Put them to cook in
one cooking pot.
Add soya sauce and rice wine.
After 10 minutes of cooking, add
meatballs.
Cut mushrooms and carrots. Add
them to the soup too.
After another 5 minutes, add cut
cabbage and cut leek.
Cook until the meatballs and cabbage
become soft. (Around 40 minutes)
When the soup is about to get ready,
add tofu. (Optionally)

Serve and enjoy!


Easy Japanese Sesame
Spice

Total Prep Time: 10 minutes


Ingredient List:
4 oz. of sesame
1 teaspoon of salt

Methods:
Put sesame to cook on low heat. (In a cooking
pot)
After 5 minutes of cooking switch to medium
heat. Mix constantly!
Cook for another 5 minutes and then remove
it from the heat.
Put sesame in a blender and blend well.
Enjoy!
Easy Sushi with Smoked
Salmon

Total Prep Time: 45 minutes

Ingredient List:
1 cup of rice
2 cups of water
7 oz. of salmon meat
2 tablespoons of soya sauce

Methods:
Wash rice and then cook it in 2 cups of
saltwater until it becomes soft. (Around 20
minutes on medium heat)
In meanwhile, cut salmon into thin lines.
When rice is ready, form them into a
rectangular shape.
Put 1 slice of salmon on each rice rectangle.
Serve with soya sauce and enjoy!
Japanese Stir Fry

Easy and fast to prepare! Marinated meat in a


fine vegetable sauce!
Total Prep Time: 45 minutes
Portion Size: 4
Ingredient List:
12 oz. of pork or chicken meat
10 oz. of mushrooms
1 green bell pepper
1 garlic clove
For stir - fry sauce :
2 tablespoons of soya sauce
Pinch of salt
½ tablespoons of sugar
1 teaspoon of fish sauce

For marinade :
2 teaspoons of soya sauce
2 teaspoons of starch
1 teaspoon of oil

Methods:
Cut meat into small lines.
Mix all ingredients listed for the marinade
and soak the meat in it.
Cut garlic into smaller pieces and then sauté
it in oil.
After 5 minutes of frying, add meat to the
garlic and continue.
Prepare stir-fry sauce:
Mix all ingredients listed

When the meat becomes light brown, add


green bell pepper (which you previously cut
into lines).
Pour stir-fry mixture over meat and cook for
5 more minutes.
Serve with rice and enjoy!
Chicken Legs in Chocolate

You must admit that this recipe looks very


strange, but – that is just Japan!

Ingredient List:
1 chicken leg
2 vanilla ice cream balls

For the chocolate sauce :


½ cup of water
½ cup of cacao
½ cup of powdered sugar
4 oz. of melted chocolate

Cook chicken leg in water.
Prepare chocolate sauce:
Mix all ingredients listed for the
chocolate sauce in one cooking pot.
Cook them for 2 minutes only.

Cover chicken leg with chocolate sauce, and


it is ready!
Serve with vanilla ice cream and enjoy!
Japanese Cubes Soup

Healthy and very easy to make! This meal is


vegan-friendly too!
Total Prep Time: 30 minutes
Portion Size: 3
Ingredient List:
3 cups of water
3 carrots
7 oz. of tofu
1 teaspoon of pepper
1 teaspoon of salt
1 vegetable soup cube

Methods:
Dissolve soup cube in 3 cups of water. Let
them cook in a pot.
Cut carrots and tofu into cubes. Add them to
the soup when it boils.
Add spices to taste.
Cook until carrots become soft.
*You can add chopped chicken to the soup if
you like. Just add it 5 minutes before tofu and
carrots!
Healthy Japanese Juice

Total Prep Time: 5 minutes


Portion Size: 2
Ingredient List:
2 carrots
2 oranges
1 lemon
2 tablespoons of powdered ginger
2 tablespoons of honey
1 cup of orange juices

Methods:
Grind the carrots. Squeeze the lemon and
oranges.
Put them all in a blender. Add honey, ginger,
and orange juice.
Blend them together well.
Serve and enjoy!
Japanese Apple Cake

Total Prep Time: 90 minutes


Portion Size: 5
Ingredient List:
17 oz. of Fuji apple (pink lady)
½ cup of lemon juice
½ cup of water

For the dough :


2 eggs
4 oz. of sugar
½ cup of milk
1 tablespoon of melted butter
3 oz. of flour
2 oz. of almonds

For the caramel sauce :


2 tablespoons of sugar
3 tablespoons of melted butter

Methods:
Peel the apples and cut them into slices.
Put them in a bowl with lemon juice and
water. Let them sit there for a while.
In another bowl, mix eggs, sugar, milk, flour,
and melted butter. Use mixer.
Combine apples with dough mixture.
Pour mixture onto the baking tray. Cover it
with milled almonds.
Bake for 50 minutes at 225°F.
In a meanwhile, prepare the caramel sauce:
In one small bowl, mix sugar with
butter.
Put the bowl in a microwave and
heat it for 5 minutes.
Decorate your cake with caramel sauce and
serve. Enjoy! 
Shogayaki

Shogayaki is a Japanese sweetmeat with


ginger. Easy and fast to make!
Total Prep Time: 35 minutes
Portion Size: 4
Ingredient List:
17 oz. of chicken meat
Salt and pepper to taste
1 tablespoon of oil
1 leek

For sweet sauce :


1 onion
1 garlic clove
1 teaspoon of ginger
2 tablespoons of soya sauce
2 tablespoons of red wine
1 teaspoon of sugar

Methods:
Grind onion, ginger, and garlic. Mix them
with soya sauce, red wine, and sugar.
Cut meat into thin slices. Pour salt and pepper
over slices.
Prepare the meat in an oiled frying pan. This
should not be long if the meat is thin.
When meat is done, pour recently prepared
sweet sauce into the frying pan. Add cut leek.
Cook until sauce boils.
Serve hot with rice or cooked vegetables to
taste. Enjoy!
Japanese Rice and Shrimp
Salad

Total Prep Time: 25 minutes


Portion Size: 5
Ingredient List:
1 cup of rice
2 cups of water
Salt to taste
17 oz. of shrimps
1 cucumber
1 red chili pepper
1 teaspoon of sesame
2 tablespoons of rice vinegar
1 tablespoon of Japanese rice wine
2 tablespoons of soya sauce
1 cup of lemon juice

Methods:
Prepare rice in 2 cups of boiling water. Add
salt and cook for 10 minutes.
Cook shrimps in another pot for 15 minutes.
In a meanwhile, prepare the sauce:
a.Mix rice vinegar, soya sauce, sesame oil,
and lemon juice.
Mix rice and shrimps together. Cover them
with prepared sauce.
Peel and cut the cucumber into small circles,
chili into lines.
Add them to the salad and serve!
 Yaki Nasu Salad

Balanced eggplant salad the Japanese way.


Total Prep Time: 45 minutes
Portion Size: 2
Ingredient List:
2 eggplants
4 tablespoons of soya sauce
2 tablespoons of apple vinegar
2 tablespoons of lemon juice
½ tablespoons of powdered ginger
1 leek
2 teaspoons of sesame seeds
Salt to taste

Methods:
Put eggplants into a casserole dish and bake
them for 20 minutes at 250 F.
After that, let them cool. Peel them and cut
them into slices.
Cover eggplant slices with sesame seeds.
In one bowl, mix the rest of the ingredients.
(Except leek)
Cover eggplant with ingredients and let it sit
in a fridge for at least 30 minutes.
Add cut leek and serve.
Ideal salad for fish, meat, or sushi. Enjoy!
Teriyaki Chicken

Total Prep Time: 25 minutes


Portion Size: 4
Ingredient List:
20 oz. of chicken meat
7 oz. of red bell pepper
7 oz. of green bell pepper
3 leeks
6 oz. of fennel
2 garlic cloves
1 cup of rice
3 tablespoons of oil
½ teaspoon of salt
½ teaspoon of pepper

For teriyaki sauce :


½ cup of soya sauce
3 tablespoons of honey
3 tablespoons of apple vinegar

Methods:
Cook rice in 2 cups of saltwater. When it is
done, strain the water and set rice aside.
In a frying pan, pour soya sauce, apple
vinegar, and honey. Let them cook for 10
minutes.
Cut chicken into smaller pieces and prepare
them in an oiled frying pan. When they
become yellow, add teriyaki sauce. Fry them
together for another 5 minutes.
Cut green and red bell peppers into lines.
Sauté them in oil shortly and then add onion
and garlic (cut into small cubes). Spice them.
Serve everything together and enjoy! 
Japanese Omelet with Rice
and Chicken

Total Prep Time: 35 minutes


Portion Size: 4
Ingredient List:
1 onion
14 oz. of chicken meat
1 tablespoon of oil
7 oz. of peas
7 oz. of cooked rice
2 tablespoons of ketchup
2 tablespoons of soya sauce
Salt and pepper to taste

For omelet :
4 eggs
4 tablespoons of milk
4 tablespoons of ground cheese
2 tablespoons of oil

Methods:
Cut onion and chicken into small pieces to
taste. Sauté them in oil.
Fry until the meat becomes soft and dark
yellow.
Then, add peas. Mix constantly.
After 10 minutes of frying, add rice (which
you previously cooked in water).
Add ketchup and soya sauce. Continue frying
for a few minutes more.
In a meanwhile, prepare the omelet:
Fry eggs in an oiled frying pan.
After 3 minutes of frying, cover them
with ground cheese and milk.
Fry for 3 minutes more.
Combine meat and eggs in one frying pan and
mix them well.
Serve and enjoy!
Ramen with Soya Sauce

Ramen is a traditional Japanese meal


consisting of 3 main parts: Soup, ramen
noodles, and various toppings.

Ingredient List:
1 chicken soup cube
2 oz. of cut ginger
2 tablespoons of powdered garlic
1 teaspoon of powdered chili
1 tablespoon of soya sauce
2 packs of ramen noodles
Salt to taste
1 egg
1 leek
1 cup of cooked corn
7 oz. of ham

Methods:
Prepare egg in water. When water boils, cook
for another 10 minutes. When it is done, peel
it and cut it in half.
Pour 2 cups of water into one cooking pot.

Methods:
Combine milk, sugar, and yeast in one bowl.
Mix them with a mixer until you get the
dough mixture.
Gradually, add flour to the dough mixture,

minutes in a fridge.
After that, separate the dough into 6 parts.
Stretch each one into a sandwich size.
Coat egg yolk over dough pieces.
Cut 2 boiled eggs into 3 parts each. (To get 6

This is an amazing Japanese sauce which can


be used with many meals and ingredients –
vegetables, meat, rice… Taste is fantastic

Ingredient List:
1 cup of mayonnaise
4 tablespoons of water
1 teaspoon of tomato juice
1 tablespoon of melted butter
1 tablespoon of powdered garlic
1 teaspoon of sugar
