✓ 2 handfuls of organic baby spinach
✓ ½ organic zucchini, diced

✓ ½ organic green pepper
Dinner
✓ ½ a organic zucchini, diced or peeled in ribbons
✓ 1 organic carrot, diced or peeled in ribbons
✓ ½ organic red pepper, sliced thin
✓ 2 Tbsp organic chia seeds
Dressing
✓ ½ organic avocado
✓ 1 tsp organic ginger
✓ 1 Juice from 1 organic lemon
✓ 1 tsp organic turmeric
✓ 1 tsp Plant Derived Minerals

Day 2 Lunch
Lunch
✓ 2 cups organic baby spinach
✓ ½ organic red pepper
✓ ½ organic avocado
✓ ½ organic carrot sliced
✓ 4 halved organic cherry tomatoes
1. Preheat oven to 400. combine zucchini, peppers, and sweet potato in large bowl. Add 1oz Plant Derived Minerals,
real salt and pepper to taste and toss to mix. Place the vegetables on a baking sheet in a single layer and roast for
25 minutes or until golden. Turning occasionally to ensure even browning.
Warm balsamic vinegar, garlic and butter in a small skillet over low heat. Heat until butter is melted and the garlic is
just softened.
3. Serve vegetables warm over a bed of 2 cups baby spinach and topped with warm vinaigrette dressing.

Day 3 Lunch
Dressing
✓ 2 Tbsp Plant Derived Minerals
✓ 1 Tbsp balsamic Vinegar
✓ 1 tsp raw honey
✓ Juice from 1 lemon
✓ Real salt to taste
Before Day 3 Dinner
Dinner
✓ 1 small organic spaghetti squash
✓ ½ cup organic cherry tomatoes, halved
✓ ½ cup organic broccoli
✓ 1 cup organic kale
✓ 1 clove garlic
1. To cook squash, pierce all over with sharp knife, place in crock pot for 4 hours or until
squash can easily be cut open.
2. While squash is cooking melt 2 Tbsp organic butter in a pan. Add fresh garlic and saute
until fragrant.
3. Add broccoli and saute until softened, then add kale and cook until wilted.
4. Once squash is cooked cut in half lengthwise and remove seeds. With a fork remove the
squash noodles and transfer to a bowl.
5. Toss with all other ingredients and enjoy
