Chapter 1

THE PROBLEM AND ITS BACKGROUND

Rationale

According to World Health Organization (WHO), About 422 million people


worldwide have diabetes, the majority living in low-and middle-income countries,
and 1.5 million deaths are directly attributed to diabetes each year. Both the number
of cases and the prevalence of diabetes have been steadily increasing over the past
few decades. The first WHO Global Report on Diabetes was launched on World
Health Day 7 th April 2016 which was dedicated to Diabetes. Diabetes has been
described in ancient scripts and recognized as a serious illness, but it does not
appear to have been frequently encountered by physicians or healers.
Diabetes is a chronic, metabolic disease characterized by elevated levels of
blood glucose (or blood sugar), which leads over time to serious damage to the
heart, blood vessels, eyes, kidneys and nerves. The most common is type 2
diabetes, usually in adults, which occurs when the body becomes resistant to insulin
or doesn't make enough insulin. In the past 3 decades the prevalence of type 2
diabetes has risen dramatically in countries of all income levels. Type 1 diabetes,
once known as juvenile diabetes or insulin-dependent diabetes, is a chronic
condition in which the pancreas produces little or no insulin by itself. For people
living with diabetes, access to affordable treatment, including insulin, is critical to
their survival. There is a globally agreed target to halt the rise in diabetes and
obesity by 2025.
In 2019, diabetes was the direct cause of 1.5 million deaths and 48% of all
deaths due to diabetes occurred before the age of 70 years. Another 460 000 kidney
disease deaths were caused by diabetes, and raised blood glucose causes around
20% of cardiovascular deaths. Between 2000 and 2019, there was a 3% increase in
age-standardized mortality rates from diabetes. In lower-middle-income countries,
the mortality rate due to diabetes increased 13%. (https://www.who.int/news-

According to Dr. Gilbert Vilela, 2021, "The pandemic and subsequent
lockdown have directly affected diabetes control. There is the lack of accessibility,
the limitation of movement and lack of exercise, and an increase in anxiety and fear
amongst patients and their families and also, For the past three years, ischemic
heart disease, cancer, and pneumonia have been listed as the top three causes of
death in Filipinos, with diabetes following in fourth place. However, the news here is
that the increase in ischemic heart disease is only 2.3 percent, while cancer went
down by about 10 percent, and pneumonia by about six percent. Diabetes went up
by 7.8 percent,” Vilela said.
Philippine Statistics Authority data showed that deaths due to diabetes
mellitus ranked fourth in 2020 at 37,265, after heart diseases (99,680).
According to national diabetes survey 2016, Diabetes is a disease that occurs
when your blood glucose, also called blood sugar, is too high. Over time, having too
much glucose in your blood can cause health problems, such as heart disease, nerve
damage, eye problems, and kidney disease.
Diabetes is an increasingly problematic health concern in the United States.
Moringa oleifera (M. oleifera) has been suggested as medication in the prevention or
treatment of diabetes, but there is no convincing evidence of a causal relation
between moringa and decreased blood sugar levels in humans. The purpose of this
scoping review is to examine the effects of Moringa oleifera on blood glucose levels

Moringa oleifera belongs to the Moringaceae family and is the best known of
the native Moringa oleifera genus.

Moringa oleifera is a plant native to northern India that can also grow in other tropical
and sub-tropical places, like Asia and Africa. Folk medicine has used the leaves, flowers,
seeds, and roots of this plant for centuries. It's traditionally been used as a remedy for
such conditions as: Diabetes, Long-lasting inflammation, Bacterial, viral, and fungal
infections, Joint pain, Heart health and Cancer. Moringa has many
important vitamins and minerals. The leaves have 7 times more vitamin C than oranges
and 15 times more potassium than bananas. It also has calcium, protein, iron, and
amino acids, which help your body heal and build muscle.

Nachos are a Mexican dish, made by crisping pieces of tortilla and then
broiling them with cheese. At their most basic, nachos are simply tortillas and
cheese, but most cooks serve nachos with an assortment of toppings, and a nacho
platter can, in fact, grow quite elaborate. Nachos are a common offering on the
appetizer menus of restaurants in the American Southwest, especially establishments
with a Mexican bent, and they are extremely abundant in Southwestern ballparks
and sports arenas; they can also be made at home.
The squash chips is the reason why the proponents came up to the idea of
innovating the squash chips into malunggay nachos by adding some flavor so that
we can make not just only a flavored chips but rich in nutrients. Moringa nachos are
basically the leaves of the plant– malunggay–or moringa, combined with all purpose
flour and other seasonings to make into a crispy, delicious and nutritious chips. Our
product are made out of only the famous vegetable (MALUNGGAY NACHOS that is
also called MOLIEFERA NACHOS with our secret magic sarap love and efforts to
reach the higher quality of the product. The proponents make sure that we always
use the highest quality ingredients so that we can bring our customers quality
moliefera nachos that lasts.
Statement of the Problem
The main purpose of the study is to determine the viability of Crispy Moliefera
Nachos which is located in Barangay Nancayasan, Urdaneta City.
Precisely, it sought to answer the followig questions:
1. What is the feasibility of Crispy Moliefera Nachos operations located
in Urdaneta City in terms of:
a. Market Aspect
b. Organization and management aspect
c. Technical aspect
d. Financial aspect; and
e. Socio-economic aspect
2. How viable is the business operation of Crispy Moliefera Nachos
situated in Barangay Nancayasan, Urdaneta City.

3. 3 What is the acceptability level of Crispy Moliefera Nachos :

a. Aroma
b. Color
c. taste
d. texture

Significance of the Study


The findings of this study can be beneficial to:
Customers, for serving them nutritious and appetizing Crispy Moliefera
Nachos at an affordable price;
Researchers, for ascertain the viability of the study and providing the
knowledge of the business operation;
Other Researchers , for using the research as reference material and a source
of related literature.
