Learning Competency: Follow safety precautions in operating fishery tools and equipment.

MOTIVATION:
Let us hear short news aired on television:
“Today a factory worker of longganisa and chorizo in Paco Manila was rush to the hospital because
of negligence in the operation of a meat grinder. The said accident happen while on duty and the worker
mistakenly place his hand in the grinder while processing chorizo and longganisa. The co-workers tried to
help the victim by turning off the machine but to no avail, it was too late”

After hearing this news, what did you feel? Are you familiar with these incidences or accidents? If you are a
factory worker what should you do to avoid this accident to happen?

BASIC CONCEPTS:
Safety in the workplace is a major concern when handling tools and equipment. We must be aware of
workplace hazards and the ways to reduce the risks for both ourselves and our fellow workers.

Observing and following safety precautions is the best way to prevent unexpected happening. However,
these situations do arise and they should be reported and given special attention.

To understand this learning competency more, Let us first define SAFETY PRECAUTION this term may
not be new to you because you always see this whenever you are crossing the streets or walking to a
pedestrian lane. This term is common everywhere but is the most neglected ones when it comes to keeping
our lives safe. The term is defined as a measure or action taken in advance to protect against possible
danger, failure, or injury and that something is safe and not dangerous. With the definition, it is clear that in
food/fish processing safety precaution is very important especially in handling or operating tools or
equipment.

The following are some of the Precautionary Measures that we need to follow in handling or operating tools
and equipment used in Food/Fish processing:
1. Always make sure equipment is off before plugging it in and starting it.
2. Always make sure all the safety guards are in place in all choppers, mixers, and food processors.
3. Check for frayed cords and loose parts before using any equipment. Plug cooking appliances directly into
an outlet.
4. If equipment is broken, the label “do not use” and notify a supervisor immediately.
5. If you must leave the area, turn off the cooking equipment.
6. Use oven mitts or pot holders when working on hot equipment such as griddles, ovens, and pressure
cookers and when holding hot pans.
7. Clean equipment after each use.
8. Remove pans from ovens and steamers b holding with both hands and move slowly to prevent burns.
9. Open oven and steamer doors slowly to prevent burns.
10. Grease fires – Extinguish fire by placing a lid over the container, pouring salt or baking soda over the
fire, or using a CO2 fire extinguisher
11. If you catch fire, STOP, DROP, and ROLL.
