Wine Tasting Journal

The Tasting Journal is a companion to the Guided Tasting Tutorials portion of the course. The
journal requires the student to synthesize and record their sensory experiences during the tasting. The
journal will be recorded in compiled tasting log format. The tasting log provides a guided (mainly
multiple-choice selection) evaluation sheet for each wine recorded with blank spaces for the student’s
own perceptions. The evaluation includes space for recording:

1. Information on the wine including the Date of Tasting, the Producer/Name, the Region, the
Variety(Varieties)/Appellation, Vintage (or Non-Vintage), Alcohol by Volume
2. A photo of the wine label
3. Visual evaluation including Clarity, Concentration, Colours, Rim Variation and Tearing
4. Aroma evaluation including Intensity and taster perceptions of the aromas
5. Tasting evaluation including the degree of Sweetness, Acidity, Tannins, Alcohol, Body,
Flavour Intensity, Flavours, and Finish
6. Conclusion and rating for style match

Students are required to complete an entry for each of the wines tasted in the class. The journal
entries are used by the student to produce the wine pairing menu assignment and for the tasting test as
a reference source. The journal entries are required to be completed in class only. The journal
assignment is graded based on completeness.
