PORK SINIGANG

Ingredients

 ½ kg pork belly, cut into 1 ½ -inch pieces


 1 bundle Kangkong
 6 pieces string beans (sitaw), cut in 2 inch length
 1 pc eggplant, ends trimmed and sliced to 1/2-inch thick rounds
 1 pc yellow onion, sliced
 1 pc red tomato, quartered
 2 pcs siling panigang (long chili pepper)
 3 tablespoons patis
 1 tbsp Knorr sinigang mix
 Salt
 Cooking oil
 5 cups water
Serves 2

Instructions

 Heat the pot and put in the cooking oil


 Sauté the onion until its layers separate from each other
 Add the pork belly and cook until outer part turns light brown. Skim fat as needed
 Put in the fish sauce and mix with the ingredients
 Pour the water and bring to a boil
 Add the tomatoes
 Lower heat and simmer for about 1 to 1 ½ hours or until pork is tender, adding more
water as necessary to maintain about 5 cups
 Put in the Knorr sinigang mix and add a pinch of salt. Adjust taste to your liking
 Add the siling panigang
 Add the string beans and simmer for 5 to 7 minutes
 Add eggplant and cook for another 1 to 2 minutes
 Turn off the heat, put in the kangkong, and cover the pot. Let the kangkong cook using
the remaining heat in the pot. Serve immediately.
