1 bundle Kangkong 6 pieces string beans (sitaw), cut in 2 inch length 1 pc eggplant, ends trimmed and sliced to 1/2-inch thick rounds 1 pc yellow onion, sliced 1 pc red tomato, quartered 2 pcs siling panigang (long chili pepper) 3 tablespoons patis 1 tbsp Knorr sinigang mix Salt Cooking oil 5 cups water Serves 2
Instructions
Heat the pot and put in the cooking oil
Sauté the onion until its layers separate from each other Add the pork belly and cook until outer part turns light brown. Skim fat as needed Put in the fish sauce and mix with the ingredients Pour the water and bring to a boil Add the tomatoes Lower heat and simmer for about 1 to 1 ½ hours or until pork is tender, adding more water as necessary to maintain about 5 cups Put in the Knorr sinigang mix and add a pinch of salt. Adjust taste to your liking Add the siling panigang Add the string beans and simmer for 5 to 7 minutes Add eggplant and cook for another 1 to 2 minutes Turn off the heat, put in the kangkong, and cover the pot. Let the kangkong cook using the remaining heat in the pot. Serve immediately.
