AMC SUPERNOVA
The AMC SuperNova is an integrated solution suitable for all types of high-fat and
low-fat pumpable masses, i.e. for chocolate with or without ingredients, cocoa
mass, cocoa butter and fillings.
The AASTED AMC SuperNova is designed for supplying moulding lines and
enrobers with well-tempered chocolate. The compact construction only requires
very little floor space. The tempering machine is mounted on a stainless frame.

The I-Plate™ insulation technology ensures negligible heat transfer between the
cooling and heating zones in the stack, thus ensuring precision temperature control
throughout – especially in the dynamic K-Zone™ in order to optimize Beta V
crystallization.
The advantageous dynamic K-zone™ is integrated within the cooling zone where
the desired amount of Beta V crystals is formed under precise control of the
temperature of the circulating water. In the following zone the necessary reheating
temperature is obtained for eliminating the undesirable crystalline forms.
Because of the advanced water systems, one for each zone with its own circulation
pump and mixing chamber, it is possible to supply each zone individually with the
required temperature-controlled water.
With its extremely flexible system, the AMC SuperNova tempering machine is
capable of tempering chocolate ranging from 50% to 110% of its rated capacity.
The output depends on the chocolate characteristics.
The scrapers are driven by a gear motor logically placed under the temper column
to ensure the best possible maintenance access to the gear box. This construction
eliminates any risk of oil from leakages entering into the tempering machine and
mixing with the chocolate.
The main motor starter is interlocked to the temperature control loop to prevent the
motor from starting at a too low chocolate temperature in the tempering machine.
All operation including setting of temperature takes place on the integrated control
panel.
The AASTED AMC SuperNova tempering machine is hygienic in its design and as
standard mounted on a stainless frame with castors for the optimum of flexibility.
The following equipment can furthermore be quoted for the AASTED AMC
SuperNova tempering machine:

• Water heat exchanger for the tempering machine with circulation pump and
thermostat (integrated in the machine). This arrangement is a closed circuit
without water loss, which reduces corrosion and sediment formation in the
valves that can cause problems and reduce efficiency. The system ensures a long
life and high tempering quality.

Tempering Machine
The machine comprises a PreTreat module, type AMC-P. The PreTreat module
ensures the inlet of chocolate to the first tempering zone at a constant temperature
of e.g. 45°C, either cooled from approx. 60°C or heated from approx. 30°C.
Dimensions
Height approx. 3384 mm
Width approx. 1232 mm
Depth approx. 2252 mm
Weight of machine
Net weight approx. 5550 kg
Gross weight approx. 6200 kg
The capacity indicated is calculated for a chocolate inlet temperature to the first
tempering zone of 45oC and up to 13°C cooling water (with water heat exchanger
3°C less, i.e. up to 10°C).
For cocoa masses and praline masses the actual tempering capacity will be approx.
2/3 of the indicated capacity.

One plate heat exchanger, expansion tank and circulation pump built into the piping
system of the tempering unit, changing the water system of the tempering unit from
an open into a closed system; the advantages being reduced corrosion and sediment
build-up in elements, blocking of valves, etc.
One additional water system can be built into the tempering unit for heating the
chocolate pipe from the tempering machine to the moulding line or enrober.
This unit comprises a water tank, centrifugal pump, thermostat, 4.5 kW immersion
heater and solenoid valve.
For the flow through the tempering machine we recommend the AASTED
chocolate pumps for chocolate without ingredients. However, chocolate pumps can
be quoted for chocolate with ingredients as well.
The pump is water-jacketed and provided with electronically variable speed control
(variable frequency drive) built onto the motor.
If the pump is supplied as a stand-alone unit, the electric controls are mounted on
the pump.
If the pump is supplied together with the tempering machine, the electric controls
are incorporated in the control panel of the tempering machine.
The pump is mounted on a stainless steel base plate with bracket legs for multiple
installation possibilities in horizontal or vertical position.

The unit further has a stainless steel guarding, and it is easy to maintain as
dismantling of the coupling requires no use of tools.
