What is Baking?
Baking – is the process of cooking food by indirect heat or dry heat in a confined
space as in heated oven using gas, electricity, charcoal, wood or oil at a temperature
from 250°F-450°F.
- Is the process of cooking by dry heat, especially in some kind of oven. It is probably
the oldest cooking method. Bakery products, which include bread, rolls, cookies, pies,
pastries, and muffins, are usually prepared from flour or meal derived from some form
of grain.
GOOD KITCHEN AND LABORATORY PRACTICES
1. Do not prepare food for others if you are sick, including having a DANGER

sneeze

falling.
Practicing Good Sanitation
It is critical for any person preparing food in the kitchen to keep food sanitary and
practice good sanitation. Sanitation refers to the various practices used to reduce the
number of microorganisms that can lead to food contamination and foodborne
illnesses (pathogen).
Food must be stored at the proper temperatures to keep microorganisms at a minimal
level. Cold foods should be kept at a temperature of 41°F (5°C) or above. The
temperature range between 41° F (5°C) and 135°F (57°C) is known as the temperature
danger zone. In general, food should never be kept in the temperature danger zone for
more than 4 hours. It is within this temperature range that bacteria multiply extremely
quickly.
It is important to wash your hands before you start to bake and after you have finished.
The professional baker needs to pay particular attention to foods high in protein like
eggs and dairy products. These foods are most susceptible to bacterial growth and
need to be stored and handled in a particular way.
