KEY DATA FINDINGS
▪ Foodservice value sales fall by 18% in current terms in 2021 to VND59.4 trillion, whilst outlet
numbers decrease by 1% to 32,835
▪ Juice/smoothie bars is the best performing category in 2021, with foodservice value sales still
falling by 10% in current terms to VND1.8 trillion
▪ SuperFoods Group is the leading player in 2021, with a foodservice value share of 3%
▪ Foodservice value sales are set to rise at a current value CAGR of 18% (2021 constant value
CAGR of 14%) over the forecast period to VND137 trillion, whilst the number of outlets is
expected to increase at a CAGR of 4% to 39,966

2021 DEVELOPMENTS

Bars/pubs the hardest hit category within consumer foodservice


Bars/pubs are considered to have the highest risk of COVID-19 transmission, due to the high
density of customers in one area, and the long time that people usually spend in these outlets.
As such, the government banned the operation of bars/pubs for the longest time in the whole
consumer foodservice industry. During 2021, in many major cities these outlets had to close for
more than half the year due to the government’s regulation to curb the new wave of COVID-19.
Besides legislation, customers’ tightening budgets was also a factor contributing to the decline
of bars/pubs in 2021. As bars/pubs are usually more expensive than other foodservice formats,
some consumers chose to drink in other venues, or held gatherings at their houses to save
money.
Even more chained and independent bars/pubs closed down permanently in 2021, as they
could not cope with the long-term loss of revenue. Many other operators converted their
businesses to full-service restaurants to avoid the government’s ban and were able to continue
operating.

Specialist coffee and tea shops find opportunities in difficult


circumstances
Learning from their experience in 2020, many players in specialist coffee and tea shops
adopted new strategies and were able to maintain their businesses despite the new wave of
COVID-19. In 2021, The Coffee House launched canned milk coffee, which is sold in its own
outlets, and also in many other online and offline retailers. This helped the company retain some
revenue despite the long lockdown period. Meanwhile, Phuc Long collaborated with the
Vinmart+ mini supermarket chain to launch a new chain of Phuc Long kiosks within Vinmart+
outlets. Many of these kiosks still operated during the lockdown despite the government’s ban
on consumer foodservice, thanks to their location within a grocery retailer.

Rise of delivery and takeaway redefines outlet expansion


With the rise of the delivery and takeaway trends, many players also opened new outlets with
a smaller size or in kiosk format to reduce their rental costs, whilst still maintaining outlet
expansion to offer customers more convenience. This especially applied to some bubble tea
shops, as the main target customers are young consumers who are more price-sensitive.

The long period of lockdown in 2021 also led to the closure of several key outlets, such as
The Coffee House Signature and Starbucks Rex Hotel. Even though these were very popular
outlets and usually draw large crowds, their rental costs were also much higher than average,
and companies had to close them despite their historical or branding significance.

PROSPECTS AND OPPORTUNITIES

Specialist coffee and tea shops expected to see strong recovery


Vietnam has a strong coffee culture, with people enjoying hanging out in a coffee shop for a
chat. Bubble tea shops are also still trendy amongst students and younger consumers. These
factors will help specialist coffee and tea shops to rebound strongly in 2022. The cheaper prices
in this category compared with many others within consumer foodservice will also help it to
recover rapidly.
To aid recovery, many players are adhering to the government’s regulation of social
distancing by placing tables further apart, or limiting the number of patrons in their outlets. This
creates more confidence amongst consumers, as they are less worried about sitting near
strangers. Offering special promotions for delivery and takeaway orders is also a common
strategy, as many people do not wish to sit in the outlet, in order to reduce their chances of
exposure to COVID-19.

Independent players gain an advantage


During the long lockdown in 2021, independent players appear to have gained an advantage
over chained players. While chained players are usually more rigid and structured, independent
players are more flexible and adaptable to the fast-changing environment and government
regulations. Many independent players are also family-owned and operate from their own
houses, reducing rental costs.
Independent players also have an advantage in terms of differentiation and uniqueness.
Despite the impact of COVID-19, many new players entered the market with new styles of
décor, menus or other features to attract customers. The popularity of social media created the
need amongst young people to constantly try out new outlets to find new places to take photos
and review. As chained outlets are usually similar to each other, they can become boring and
lose their attractiveness. As a result, independent cafés/bars recorded a slower decline in 2021
compared with chained cafés/bars, and is also set to see stronger current value growth in the
forecast period.

Health trends have various interpretations


Health trends continue to be prominent in Vietnam. They also become more diverse in 2021,
and this is expected to continue over the forecast period. One trend has been the rise of fruit
juice and fruit-based drinks, as they are believed to be healthier and boost the immune system,
which is important to consumers to help prevent them getting sick from COVID-19. Calorie
counting continues to be another major trend amongst health-conscious office workers, which
gives the opportunity to products such as kombucha and low sugar drinks. Lastly, dining
alfresco also seems to be a rising preference, as consumers believe that sitting outdoors
reduces their chances of being infected by COVID-19 compared with sitting indoors.
The rising health trend may shape the décor and menus of specialist coffee and tea shops in
the near future. Besides, it will also create rising competition with other consumer foodservice
channels, such as street stalls/kiosks, which are also quick to adapt to health trends and can
sell similar drinks at a cheaper price.
