3.

0 TRADITIONAL SPAIN FOODS

Traditional cuisines are made from ingredients and recipes that have been consumed for more
than one generation. Traditional foods and dishes are by nature conventional, and they may
draw inspiration from past household delicacies, regional cuisines, or local cuisines.
Traditional foods and beverages can be created from scratch, by small producers and
restaurants, as well as by extremely large food processing plants.

3.1 Pan Con Tomate

One of the most well-known regional meals in Catalonia is pa amb tomàquet, commonly
known as pan con tomate or pan tumaca in Spain(Aloise, 2021). Although it has a peculiar
aspect, bread with tomatoes is a staple of Catalan cuisine and a showcase for the best local
ingredients(An Introduction to Catalan Cuisine, 2021). With nearly every meal, including
breakfast, tapas, and as a side dish, pa amb tomàquet complements it perfectly. (Weathercraft
Wines, 2022). In Andalusia, a tostada with tomate y jamón is regarded as the best breakfast
meal (Hoteles, 2021). Figure 3.1 shows Spanish traditional breakfast Pan Con Tomate.

3.2 Patatas Bravas

Patatas bravas are undoubtedly one of Spain's most popular tapas dishes. On the Iberian
Peninsula, they are offered at almost every restaurant and pub (Karadsheh, 2022). Most
people don't know that patatas bravas originated in Madrid and not Barcelona (Fork, 2019).
To slightly lessen the spiciness of the bravas sauce, some people dish it with a garlic alioli or
allioli (similar to aioli), patatas bravas are typically served in Madrid with the accompanying
red salsa brava(Zapatka, 2022). There are differences in the recipes even within a same tapas
bar, and since the Spanish word for bravas is "fierce" or "courageous," the bravas sauce
should be a little bit hotter with each variant (Dominguez, 2021). Figure 3.2 shows Spanish
dinner Patatas Bravas.

INGREDIENTS

PAN CON TOMATE


2 large, ripe beefsteak tomatoes
Kosher salt
1 loaf ciabatta, split in half horizontally lengthwise, cut crosswise into 1 1/2-inch slices
Extra-virgin olive oil,divided
2 medium cloves garlic, split in half
Flaky sea salt, such as Maldon or fleur de sel

PATATAS BRAVAS

For the sauce


 3 tbsp olive oil
 1 small onion, chopped
 2 garlic cloves, chopped
 227g can chopped tomatoes
 1 tbsp tomato purée
 2 tsp sweet paprika (pimenton)
 good pinch chilli powder
 pinch sugar
 chopped fresh parsley, to garnish
For the potatoes
 900g potatoes, cut into small cubes
 2 tbsp olive oil
