Inquiry Question: How can I make healthy baked goods?

1) Capstone Project Summary:


In the box below, please type out a 200 – 300 word summary highlighting the key points and
information that you plan to present during your Capstone Project presentation.
For my capstone I would like to create healthy baked goods. For the research portion of the project, I am
going to look at different ingredients that are low in carbs and also low in artificial sugar. My ultimate goal
is to keep the great taste that homemade treats have. To test my research, I will make two batches of a
similar recipe. The only real difference will be the substituted sugar and carb alternatives. In an ideal world
I would like to make three recipes consisting of cookies, muffins and some sort of loaf or cake. I will be
documenting my findings in a section of my cookbook. I will also upload the different recipes and all of the
pictures I take onto the cookbook. Because sugar alternatives tend to be expensive, I plan to make smaller
batches and not print anything. This is beneficial because it shows that anyone can eat treats even if they
are on a diet or have diabetes. This whole project has a personal aspect, about two years ago my dad was
diagnosed with diabetes. It has been hard for him to find healthy treats, so I think that my capstone will
benefit him. My findings won’t only help our family but hopefully other individuals around the world. I like
the focus of creating healthy treats, however I am concerned that what you plan to accomplish is too
simple and won’t demonstrate the necessary acquisition of new skills or satisfy the time requirements of a
Capstone Project. Perhaps you need to add more recipes or research to your project!

Personal Awareness & I understand learning takes patience and time: I will have to spend lots of
Responsibility time researching and perfecting the recipes.
I take personal responsibility for my choices and actions: the capstone is
going to take a lot of perseverance.
Social Responsibility I have positive peer and intergenerational relationships: I like to talk, and I
think that food is a topic that creates strong bonds with others.
Valuing Diversity: Growing up as a different skin color I have had my share
of unethical interactions and I always fight for equality when I can.
Critical Thinking I can assess my progress: when baking it is easy to see improvement
because the food tastes better. This will make it easy to see how far I've
come.

how important it is for everyone to be able to eat a treat once in a while. I
see that if I can find healthy alternatives it will benefit lots of people.

Creative Thinking I can persevere and understand that failure can be productive: if I find a
product that does not work, I will work harder to see where I went wrong
and fix it.
I can take my ideas evaluate, develop and refine them and make
something productive out of them: the whole idea of a capstone is to take
an idea and make something productive, which is what I'm going to do.

put up progress on my website.

run into a problem, instead of backing into a corner I want to ask those
around me for help.

3) Rationale/context: Detail your reasons for choosing this inquiry question.

Explain WHY you are choosing to investigate this topic as a major area of focus. How does this area of inquiry
connect to your passion(s), purpose? Why is it of personal interest to you?

I am choosing to investigate healthy baking ingredients because I think it will benefit lots of people. But, I
also enjoy baking and I bake regularly. The idea of baking is so interesting to me because you turn mere
ingredients into something delicious.

4 ) Background: What background knowledge / connections / prior learning do you have that can help
you to be successful with your project?

I have been baking since I was probably around seven or eight, I think that’s going to come in handy. I
also have my dad who has diabetes and knows what to look for as far as healthy ingredients go.

5) Career connections: What is your intended career area at this point in time? What connections does
this inquiry question have to your life, academic and/ or career goals? What are you hoping to gain from
completing this project (other than graduating or passing CLC 12)?

I am not one hundred percent sure what I want to go into at this point in my life. But I want to help
people and that’s what my capstone is going to do hopefully. One of my goals like many is to help make
this world better.
