Baked vegetables in white sauce

2 medium-sized carrots, cut into small cubes


10 French beans, cut into small cubes
1 medium-sized capsicum, cut into small cubes
½ cup shelled green peas
1 big potato, boiled and cut into small cubes
Salt to taste
3 cups white sauce
1 tsp butter, for greasing the baking dish
3 to 4 cubes grated cheese

For the white sauce

3 tbsp butter
3 tbsp flour
3 cups milk
Salt and pepper to taste

To make the sauce, lightly heat butter in a heavy-bottomed vessel, add flour and sauté on a low flame till the
flour turns golden. Pour milk and stir simultaneously with another hand to avoid lumps.

Give it a boil stirring continuously. Cook on a medium flame till the sauce thickens (it should be of pouring
consistency). Remove from the gas and then add salt and pepper. Mix well. And cool.

Now wash the vegetables (carrots, French beans, capsicum and green peas) and drain out the water. Pressure
cook the vegetables with little salt, but without any water upto one whistle. Add the boiled vegetables and the
chopped boiled potato to the white sauce.

Pour this mixture into a greased baking dish. Evenly spread grated cheese on it. Bake in a pre-heated oven at
200 degree temperature for 30 to 40 minutes or till you get a golden crust.
