Background of the Study:

A chronic trade of double dead meat had been alarming the citizens until the present days. 600 kilos of double dead meat has been intercepted and turned over by the security personnel of the riverview market last September 18, 2010. Same case has been reported September 20 in the same year wherein 1 ton of botcha was confiscated in Guiginto, Bulacan.

The fast appearance of double dead meats or botcha in markets which household consume, requires a possible and accurate means of its distinction. Several techniques have been disseminated by reliable groups with regards on how to determine the freshness of meat products. However, suppliers of double dead meats have made a solution to make their products seem like fresh and clean. Mixing of spices such as garlic, adding of alum and food color to botcha are few of those methods performed by double dead meat supplier that hides the real physical appearance of the meat.

Odor, texture and color are important variables that could helped determine the freshness of meat products. But this factors could fail to be sensed if chemicals have been added to the substance. While those botcha appearing to be obvious of its composition, it will be a real challenge to produce a reliable mean that could detect the level of meats freshness.

Note that a high risk of contamination may result whenever this meat will be taken by our body. Zoonotic problems or pathogens that may be transmitted to man would be one of the health hazards of eating double dead meat. Specific illness includes salmonellosis, erysipelas, leptospirosis, meningitis, toxoplasmosis, taenia solium, anthrax, brucellosis, collibacillosis and tuberculosis, whereas, most of these would be fatal. Every specialist

prefers to distinguish the composition of meats before this danger could harm the consumers. That is why numerous studies had been done to find ways of determining botcha from fresh ones. However, those distinction would require more accurate sensing.

As a result, even human senses could fail to determine the freshness of the meat. The development of new and advance study with applications of electronics offers a novel solution to the above-mentioned problems. Because of the current imperfection of our human senses with regards to the inner composition of double dead meat, sensing device is becoming one of the most appropriate fields for solving this problem. An electronic sensing device can make the determination more accurate and can save consumers from getting the risks in health hazards.

Scope and Limitation:

In order to achieve the objective of the study, several scope had been outlined. The scope of this project includes the creation of an electronic device that could accurately determine the freshness of meat products. The application of sensor circuits and programming material would be applied to attain the target outlook of the device. The electronic material would then, must detect the variables including the meats odor, color and tenderness level. Through those data gathered, final conclusion would then tell whether the meat is positive of being double dead meat. The device will test until it will be able to obtain accurate readings to meats composition.

Experimentation for device accuracy will be performed in markets where chronic trading of double dead meats has been occurring. The device will be applicable only for unprocessed meat, since factors regarding to the chemicals added would possibly affect the variables that will be used for botcha detection. The device is as well planned to test the meat quality before it will be delivered to meat processing company.

The study does not promise to totally avoid the illegal spread of double dead meat distribution, since it has to coordinate to authorities responsible in this issue. However, the device could be used and be afford by consumers

since it is a low cost botcha sensor, and could somehow helped them alarm, moreover that they are the target subject of this problem.
