HOW IT’S MADE (Writer: Phạm Huỳnh Yến)
THE PROCESS OF MAKING TOFU
Link: https://www.youtube.com/watch?v=nAh5g7StZt8&t=115s
The video shows how to make tofu.
Overall, the process comprises 10 steps, beginning with soaking the soybeans and
ending with the final product which is tofu.
At the beginning of the process, soybeans are soaked in cold water for 18 to 24
hours depending on the temperature of the weather. After that, the bloated soybean
becomes bigger and softer. These beans go on a conveyor belt to be transported to
a crushing machine which forces the beans through a fitting screen into a granny
soup of soybean pulp and milk. Next, the soup is heated by a steam cooker for
three minutes before it is separated into milk and pulp by a centrifuge machine as
the chamber spins. The soy milk is passed through the cone-shaped filter to
continue its process, while the pulp is used to make food for cattle.
The process continues with the soy milk being transformed into curd by a
coagulation tank. Subsequently, add some herbs and spices to soybeans curd in
order to make flavored tofu. After that, these soggy curds are transported to a
perforated cylinder to drain. Next, the soybean curds are put in large rectangular
molds lined with a cheesecloth before it is pressed under fifty-nine kilograms of
pressure to squeeze out the remaining liquid. Finally, the large tofu is divided into
smaller ones to be packed, which are ready for consumption.
