PREPARATION

Throw in a casserole the beef, some water, chickpeas, tomato, onion, one
garlic bulb and the spices: clove, bay leaf and a handful of peppermint leaves.
Leave to cook, and when the beef is tender put the broth aside overnight. The
soup is prepared the next day: cover the bottom of a clay pot with thinly cut
potato slices, put “puño” bread sliced on top.
Sprinkle with ground cinnamon and sugar, and cover with four beaten eggs.

Next to Our Lady of Candelaria’s Church
there are several sculptures that stir the
curiosity of visitors, but have a deep
meaning for the population of Ingenio.
The great-grandparents of the town
used to breed pigs (cochinos), to be
sold from village to village. That’s how
they made a living. Thus, people from
other villages used to say, when they
saw them approach with their pigs:
“Here comes the cochinero”
People from Ingenio are widely known
as “The Cochineros”
The name “INGENIO” (sugar refinery)
comes from the sugarcane crops and
refining, which confirms its historical
origin as an agricultural town.

The monoliths in Francisco Tarajano
Reading Park represent different events
of the town history, in quiet and calmed
surroundings. Towards Plaza de la
Candelaria you will find one of the most
emblematic sculptures in the town’s
artistic legacy, “The Washerwomen”,
which represents two women washing
their laundry in the ditch. The sculpture
is a tribute to the women’s daily hard
work.
The next points of interest will be Plaza
de Candelaria, and the Parish Church
that gives name to the square, Church
of Our Lady of Candelaria, whose
construction started on 1901 on the site
of the old chapel of the same name, of
which there are no remains.
