Six major tea categories

Green tea

unfermented tea, the process steps are mainly killing, kneading and drying. It has the
quality characteristics of green tea with green soup, high aroma and slightly bitter and
astringent taste. The well-known varieties of green tea include Huangshan Mao Feng,
Lushan Yun Wu, Xihu Long Jing, Emei Snow Bud, Dongting Biluo Chun, etc.

White tea

micro-fermented tea, the process steps are mainly picking, withering, drying and
preservation. It has the quality characteristics of complete tea leaves with hairs, silver
and white, apricot color or light yellow tea soup, sweet and refreshing taste. The main
varieties are white hair silver needle, white peony, tribute eyebrow, longevity
eyebrow, etc.

Yellow tea

slightly fermented tea, the process steps are similar to green tea, but with the extra
step of "smothering yellow", which makes the yellow tea has the quality
characteristics of yellow tea yellow soup, clear and high aroma, sweet and mellow
taste. Huoshan yellow tea, Junshan silver needle, Mengding yellow tea, Yuanan
yellow tea, Wenzhou yellow soup, Wanxi yellow tea, Guangdong big leaf green tea,
etc. are all yellow tea.

Green tea

commonly known as oolong tea, semi-fermented tea, the process steps are mainly
picking, withering, shaking, frying, kneading and baking. The quality characteristics
of green tea include sturdy ropes, yellow and green, yellow tea soup, and mellow
flavor. Tie Guanyin, Huang Dan, Hongshan, Mao Crab, etc. all belong to green tea.

Black tea

fully fermented tea, the process steps are mainly withering, kneading, fermentation,
drying, the typical characteristics are tea red, soup red, leaf red, flavor drifting
mellow. Black tea mainly includes small black tea, kung fu black tea, black tea,
Qimen black tea, Dian black tea and other varieties.

Dark tea

post-fermented tea, made after four steps of killing, kneading, stacking and drying. Its
quality characteristics are black and lustrous, the tea soup is thick yellow and
transparent, the tea leaves can have aroma, aged tea has an aged aroma, and the taste
is mellow and thick. The main varieties are Yunnan black tea (Pu'er tea), Hunan black
tea including Fu tea, Qianliang tea, black brick tea, Santiao, etc.
