Although we are experiencing the monsoon, mangoes have not entirely
gone of the track. How about giving a nice twist to the king of fruits? Take
one ripe mango and cut it into cubes. Keep them in a bowl, and add
mango cubes, ½ teaspoon of lemon juice, one teaspoon of olive oil and
black pepper. Now take a slice of bread and spread cream cheese on
both the sides and spread the mango mixture. Top the bread with lettuce
and layers of onion, you can add black pepper to enhance the flavour.
Your mango cream crusty is ready.

JAGGERY AND DRIED GINGER BALLS


Take two tablespoons of dried ginger powder and six tablespoons of grated jaggery. Combine both these things in
a bowl. Now divide the mixture into 12 equal portions and shape each portion into a bowl. Pierce toothpicks into
each ball and serve.

WATERMELON POPSICLES
Take two cups of watermelon juice. In an another bowl, mix nine cups of
powdered sugar in one cup of water. Now add the watermelon juice to
it. Pour the mixture in an ice mould and freeze for five to six hours.
Your watermelon popsicles are ready to be tasted at any given
point of time.

COFFEE SQUARES
Take 25 g of butter and keep it in room temperature for
around 15 minutes. Add the butter to 150g of milk and
mix well. Now in an another bowl, take 100gm of pow-
der biscuit and add the butter-milk mixture to it. Mix in
two teaspoons of coffee powder, ¼ cup of grated
coconut and blend well. Now take a tray and place
butter paper on it. Spread this mixture with a thickness
of one cm in a tray and put it in refrigerator until the
mixture sets. For the second layer, take two table-
spoons of milk and add two teaspoons of coffee powder.
In a separate bowl, take 100gm of butter and powdered
sugar and mix well, add coffee-milk mixture into this and
mix well. Now spread this mixture on the first layer which
was kept for setting in refrigerator. Sprinkle one teaspoon of
almond, and keep it in refrigerator for setting in. When it is set
properly, cut the pieces into square shapes and serve. An easy to
make preparation is ready with which you can impress your guests.

CUCUMBER SOUP
Take two cucumbers, peel and chop them. Your next step will be to
blend them in a mixer. Empty the broth in a container and add two
tablespoons of yoghurt, seven to eight mint leaves, one clove of garlic,
two tablespoon of lemon juice, and salt and pepper to taste. Mix well.
Refrigerate for a couple of hours and serve chilled.

MIXED FRUIT AND YOGHURT PARFAIT


Grate one apple and mix it with two cups of yoghurt. Add three table-
spoons of honey in it and blend well. Keep this aside. Now take a glass,
add a layer of muesli at its base. Top it with the layer of apple and yoghurt
mixture (make as many layers you want) and finish it off by putting straw-
