CHAPTER I
Introduction

After a heavy dinner, some families use to eat a sweet and delicious

dessert like mango float, cakes, jams, fruits, and the most favorite, the ice cream.

Ice cream is a frozen dessert made of cream, eggs, sugar and flavored

with syrups and fresh fruits. Since then, we have seen and taste that mostly ice

cream we eat were flavored in fruits like mango, strawberry and other fruits.

Ice cream is a mixture of milk, cream, sugar, and sometimes other

ingredients that has been frozen into a soft, creamy delight using special

techniques. Ice cream has been a popular treat for hundreds of years but has only

become commonplace since the widespread use of refrigeration. The exploding

popularity of ice cream has led to a number of ice-cream variations including

frozen custard, frozen yogurt, and even non-dairy versions made with ingredients

like coconut milk.

Ice cream must contain 10 to 16 percent milk fat. Higher milk fat ice creams

generally have a smoother texture because they contain a lower amount of water

and, therefore, fewer ice crystals. Ice creams that contain less than 10% milkfat

are referred to as "ice milk" or more popularly, "low fat" ice cream.

In addition to milk or cream, ice cream often contains stabilizers, like gluten,

to help keep the mixture a consistent texture. Sugar or sugar substitutes are

usually added to provide the sweet flavor that most people expect. No-sugar-
added varieties of ice cream have become popular and rely on the addition of fruit

and milk's natural sugars for their subtle sweetness.

The variety of flavors and additives in ice cream has kept its popularity

strong with consumers. From tropical fruits like mango or less common ones

like pomegranate to unconventional flavors like coffee or basil, thousands of ice-

cream flavors, both savory and sweet, have been created over the years.

A nutritious ice cream is what we want to introduce to our customers. For

this product perception that we formalize, we would like to get the interest of the

buyers and also the consumer with our version of “Squashy Ice Cream”. We

would like to introduce one flavor that consumers have never been tasted and

the flavor we would like to produce is the Kalabasa flavor.

In this era, people nowadays would choose an artificially made food

product that had a less healthy nutritional content. Promoting a healthy and

convenient way of eating by introducing one flavor of ice cream to the public

consumers, the kalabasa.

So to make a change, the researcher decided to study on producing a

nutritious ice cream using vegetables, namely the squash as an alternative to

fruits.

We make this product proposal for the purpose that we want to serve our

valued customers a new product that they haven’t tasted yet. We will give them a

healthy food that young ones and also adults will enjoy. would enjoy. We added

special ingredient for our product such as kalabasa. Nowadays people would
choose an artificially made food product that had a less healthy nutritional

content over the conventional foods that is said to be “good for our health” that is

available in market. Promoting a healthy and convenient way of eating by

introducing one flavor of ice cream to the public consumers.

STATEMENT OF THE PROBLEM

Cream.

Condition, Target Market, Demand, Product, Promotion, Marketing Strategy,

of the business must have a creativity to provide quality service to its customers.

The main purpose of this propose business to fill the fulfillment of needs and

wants of a customer.

Description and Outlook of the Industry

All squash, commonly referred to as “pumpkins”, “gourds” and “squashes”

originated in the New World and are members of the genus Cucurbita.  Their

native range extends from the central United States south to Argentina, with the

highest species diversity in Mexico, which is believed to be the origination point

of the genus.  Around 20 species of wild squash grow among the temperate to

tropical climates throughout their native range.  Most all of our domesticated

squash we enjoy today came from just five species (C. argyrosperma, C. ficfolia,

C. maxima, C. moscha and C. pepo).

This vegetable was unknown in Europe until the late 16th century, with the

first known record of squash in the Old World occurring in 1591.  However, long

before the Old World debut of squash it was highly valued and widely cultivate by

indigenous people in the Americas.  Around 8,000 years ago, the earliest known

domestication of Cucurbita species occurred, some 4,000 years before

domestication of the primary ancient agricultural crop we think of in the Americas,

maize (corn). `

Some advantageous qualities of squash, such as quick germination, early

flowering, rapid growth and storable seeds, may have led to early domestication

as they eased cultivation by early Native Americans.  As early colonists and

explorers sent squash seed back to the new world, they quickly became popular

among horticulturalists due to their ease of hybridization among species.

Cucurbita species contain 20 chromosomes that are not isolated genetically.

Therefore, breeders were able to easily select for certain genetics across
species.  By the 1800’s, extensive breeding, research and discovery of new

species and further scientific classification of the genus lead to the extensive

varieties of squash we know today.

In general, squashes can be broadly grouped into two categories based

on their harvest time. Later growing, odd-shaped squash, often with tough or

warty skin which have long keeping qualities are usually referred to as winter

squash (C. maxima and C. moschata).   Whereas the smaller, quick-growing

squash which are usually eaten before the rinds and seeds are mature are called

summer squash (C. pepo).

Size of the Industry

According to the 2015 Census of Population in the Philippines, the

Domalandan Lingayen, Pangasinan, had an estimated population of 2,178. This

is based on the Census conducted last 2015. This data gives us the opportunity

to have a look on how large is the market in a scale of the barangay. Potatoes

are naturally gluten-free and they are pack with nutritional benefits, needed for a

healthy lifestyle. The industries total rated annual production volume of potatoes

in the Philippines is approximately 525.6 thousand metric tons.

CONCLUSION AND RECOMMENDATION

Recommendation

In making ice cream, it is important to consider the taste, texture, aroma,

appearance and its nutritional benefits at the same time. It is recommended that

the local ice cream makers will use mashed squash in making ice cream

because it is acceptable and it contains high nutritional value. Farmers are

encourage to plant more squash because aside from using it as vegetable it can

be used also in developing new products like ice- cream, etc. While for educators

and parents it is highly suggested to serve squash ice cream for children as an

alternative nutritional ice cream and try to develop more recipes using squash as

a main ingredient. It is recommended also that a study shall be conducted

focusing on the nutritional value of squash ice cream.

Conclusion

Based on the research we carry out, we conclude that our business is

possible, marketable and recognizing the market in which people would adopt it.

The researcher therefore conclude that squash is feasible to be use as an

alternative for fresh fruits in making ice cream.
