Title: PAPAYA ATCHARA

Performance Objective: Provided the following supplies, tools & materials
you should be able to process papaya atchara
following the standard procedure.

2. Sterilized the clean empty glass jars with caps, and placed upside down in
the tray with clean towel.

Procedure:
1. Select good quality raw materials.

2. Weigh, wash and peel, and grate papaya/vegetables. Squeeze to remove

juice extracted from papaya, drain, and set aside. Slice into julienne cut the
bell pepper, carrot, onion, and garlic. Mix it to the extracted grated papaya
together with raisin.

3. Prepare sugar, salt, and vinegar and mix thoroughly.

4. Cook the solution until sugar dissolves.

5. Pack the vegetables in sterilized jars and pour the solution while hot.
Observe proper headspace of 3/16 inch when filling into jars. Remove
bubbles.

6. Screw on caps and pasteurize for 5 minutes/water bath. Seal tightly.

7. Cool and label. Refrigerate when opened.
