FISH FILLET ROLL-UPS and CHIPS with TOMATO
ONION BLEND

(DESCRIPTION/ORIGIN OF RECIPE)
Fish Fillet Roll-Ups are rolled in a circular oval spiral wrap and vegetable filling is
extremely delicious as an accompaniment, starter, buffet food, and main dish.
White fishes are low in fat and calories, they are also a good source of protein, plus the
heart-smart omega-3 fats. And with the combination of tomato onion blend, the aroma
and taste make it perfect.
INGREDIENTS: COSTING:

 1pound mild, white-fleshed fish fillets P 119.00


 2 carrots and 2 cucumbers, julienned, P 50.00
remove the seeds 1 diced carrots
 1 egg, beaten P 10.00
 1/3cup fat-free mayonnaise or salad P 15.00
dressing
 1/2teaspoon mustard P 3.00
 8 or 9 potatoes, thinly sliced with a

mandoline/slicer, do not use the ends

PROCEDURE:
1. Heat oven to 400 degrees. Toss sliced potatoes into a bowl and coat with olive oil,
garlic powder, salt, and pepper.
2. On parchment, layer the sliced potatoes in a shingled pattern overlapping the slices
making a rectangular raft to hold the fish bundle, make sure you can see the potato
slices on all 4 sides of each raft.
3. Take the inner side of each fillet and generously spread mayonnaise and mustard
from end to end.
4. Place a handful of the veggies on the small end of the fillet then roll up and tie with
lemon grass, and place seam side down onto potato slices.
5. Brush the top of bundles with beaten eggs so the breadcrumbs mixture sticks, and
sprinkle with paprika.
6. To make the breadcrumbs mixture, mix 1½ cups of breadcrumbs with 1 smashed
garlic clove and the zest of 1 lemon.
7. In a small sauté pan drizzle olive oil and crisp up the breadcrumbs mixture until
golden.
8. Press the breadcrumbs mixture onto the top of each fish roll-up, drizzle with olive
oil, and bake until the fish is cooked, and the potatoes get crisp on the edges.
9. Sprinkle with parsley for garnish.
10. Use a nice wide spatula, get right under the potatoes, and carefully lift up.
11. For the Tomato onion Blend, mince the Onion, tomato into 1 MM.
12. Add Olive oil, Lemon juice, salt and pepper. Garnish Parsey on top.
13. Mix well
14. For the garnished buttered garlic corn and carrots, dice the carrots into 2MM- 3MM
and cut the corn kernels from the cob.
15. Saute it in butter, then add a pinch of garlic powder.

KALAMANSI
(Lemongrass-Oregano with Calamansi Drink)

(DESCRIPTION/ORIGIN OF RECIPE):
The results of a 2015 study suggest that drinking lemongrass infusions daily for 30
days can increase hemoglobin concentration, packed cell volume, and red blood cell
count in the body. Whereas oregano has a long history of safe use in foods and food
products. Most people won't experience side effects from consuming/drinking oregano
tea. On the other hand, calamansi is popular in our societies for one particular reason,
and it is that its juice offers a big chunk of Vitamin C. On top of this specific vitamin,
Vitamin A, Calcium, and Potassium are also present. All of this help to retain iron in
the body and boost immunity.

1. Hugasang mabuti ang mga dahon. Pakuluan ang mga ito hanggang 5-7 minuto.

at ilipat ito sa blender. Sa blender, maglagay ng 1 preskong dahon ng oregano, katas ng
kalamansi, at honey o sugar syrup. I-blend ng mabuti sa katamtamang bilis hanggang
mablend na mabuti ang inilagay na dahon ng oregano.
3. Salain ito ulit ng dalawang beses at i-serve sa baso na may ice.
