Chocolate Fondant – 130 Rs

>>> Chocolate Fondant has a silky texture, dense and homogeneous, which melts in the mouth? Richer in
eggs and chocolate than the traditional Moelleux au Chocolat (simply also name Chocolate Cake), it contains
less flour as well. Its origin is lost in the labyrinth of history.
Our Vegan version of it is light and moist, with an aftertaste of coconut and apple.

Chocolate Mousse – 180 Rs


>>> Traditional French dessert, the Chocolate Mousse is described for the first time by Menon, a culinary
writer of the 17th century. In 1820, the dessert appears officially in the book “Royal Cook Chef” of Alexandre
Viard. – Louis XVI or Louis-Auguste de France would have asked his swiss servant Charles Fazi to invent a
chocolate dessert, and he would have created the chocolate mousse recipe as we know it, based on the
original recipe of the “Royal Cook Chef” book.
However, according to some other amateurs, the French painter Henri Toulouse-Lautrec would be the
official inventor of the Chocolate Mousse. Being inspired by some fish mousse, he would have developed his
own mixture which at the time was nicknames “Chocolate Mayonnaise”.

>>> The pie is one of the oldest pastries. The cooks began by making salty and then sweet pie, which were
very successful until the 17th century. Since the Middle Ages, the pie had many different and varied recipes.
However, the precise origin of the chocolate pie is lost the memories of history.

Lemon Pie – 130 Rs


>>> We don’t really know the story of this dessert, several hypotheses persist on its origin. The lemon knows
over time a growing success, especially in the 17th and 18th centuries on the ships to America, as it made it
possible to fight against the scurvy. It would be on these boats that the first dessert made with lemon juice
was made. While lemon cream was invented by the Quakers in the late 1700s, pastry chef Elizabeth
Goodwell would have designed the lemon pie in Philadelphia in 1806 as it is known today. However, there
are also mentions of pies that could be the ancestors of our current lemon pie in Menton and Toulouse. So
french speciality or interpretation of a mythical American dessert? Who knows.

Lemon Cheesecake (unbaked cheesecake made with Philadelphia cream cheese) – 160 Rs
>>> While many assume that it has its origins in New York, it dates back much further. Let’s go back over
4000 years to Ancient Greece! The first “cheesecake” may have been created on the Greek island of Samos.
Anthropologists excavated cheese molds there which were dated circa 2000 B.C. In Greece, cheesecake was
considered to be a good source of energy, and we have evidence that it was served to athletes during the
first Olympic Games in 776 BC. Greek brides and grooms were also known to use cheesecake as a wedding
cake. When the Romans conquered Greece, the cheesecake recipe was just one spoil of war, even if they
modified the recipe. As the romans expanded their empire, they brought cheesecake recipes to the rest of
Europe. Great Britain and Estern Europe began experimenting, adding their own unique spin on cheesecake.
In 1545, the first cookbook was print, it described the cheesecake as a flour-based sweet food. Even Henry
VIII’s chef did his part to shape the cheesecake recipe. He cut up cheese into very small pieces and soaked
those pieces in milk for three hours. Then, he strained the mixture and added eggs, butter and sugar. It was
not until the 18th century, however, that cheesecake would start to look like something we recognize in the
USA today. Cream cheese was an american addition to the cake. In 1872, a New York dairy farmer was
attempting to replicate the french cheese Neufchatel. Instead, he accidentally discovered a process which
resulted in the creation of cream cheese. Three years later, cream cheese was packaged in foil and
distributed to local stores under the Philadelphia Cream Cheese Brand. By the 1900s, New Yorkers were in
love with this dessert, even if every restaurant had its own recipe. However, Arnold Reuben is generally
credited for creating the New York Style Cheesecake, no fruit, chocolate or caramel served on the top or on
the side.

Tarte Tatin (upside down apple pie) – 150 Rs

>>> The origin of this pie is located in Sologne, in a small town less than 200 kms from Paris. We owe its
name to 2 sisters, Stephanie and Caroline Tatin. Caroline, the eldest, ran the family establishment, the Tatin
Hotel from 1894 to 1906, receiving the customers while Stephanie worked in kitchen. It is said that on the
opening Sunday of the hunt, Stephanie forgot the dough in her pie and in the heat of the action, put the mold
filled only with apples, sugar and butter. Seeing her mistake, she would have simply added the dough over
the apples, finished baking the pie and served it warm. So, was the famous Tarte Tatin born of an oversight,
an awkwardness? Or did the sisters drop the pie before deciding to turn it upside down to “catch up” with
it? It seems that the reality is less romantic, as the “reversed” tart would have been a regional speciality that
the Tatin sisters would have just made it famous. The story goes along when Louis Vaudale, owner of the
famous restaurant Maxim’s in Paris, discovered this pie and asked for the recipe that was kindly refused by
the sisters. He sent one of his pastry cook who pretended to be a gardener seeking employment… and stole
the secret of the famous pie. Copiers but honest, Louis Vaudale baptized the pie “Tarte Tatin ladies”. Then
the famous culinary critic Maurice-Edmond Sailland who made it to prosperity, publishing the recipe. It’s
even said that he invented the whole story, including the clumsiness of the Tatin sisters, to amuse the
journalists!

Clafoutis with Physalis (only during fruit seasonal)– 120 Rs


>>> Clafoutis appeared in the center of France, in Limousin, during the 19th century. Two opinions diverge
on the etymology of the word clafoutis: it would come from the Occitan word “clafir” meaning “fill”, implied
with cherries, or the Latin Word “clavo figere” meaning “fix with a nail” in reference to the cherries fixed in
the dough. Our version of clafoutsis is an example of evolution and adaptability of the recipes, of the
connection between two different cultures united through cooking.

Lemon and Coconut Cake – Vegan – 120 Rs

Tiramisu – 180 Rs
>>> Tiramisu comes from Italy, but like any French I’m fond of cooking and dessert, anything that pleased
my palate. So, here is Tiramisu, in a restaurant rooftop of Varanasi. Its Italian spelling is “tirami sù ”, which
literally means “pull me up”, or figuratively “cheer me up”. Nobody really knows where the Tiramisu comes
from, one more time it’s lost in the memories of cooking history. There are many legends and here are a few.
Tiramisu would have been created in Tuscany at the end of the 16th century, especially for the visit of Cosme
III di Medicis, Duke of Tuscany. This dessert would have become his favorite and he would have brought it
back to Florene. The mascarpone was added latter to the recipe in Treviso. Then the dessert spread outside
Italian borders in the 18th century, through the cookbooks. Another story says that in the Renaissance, the
Venetian women offered tiramisu to their lovers so they would have been vigorous, as tiramisu was
