This project explains the importance of eating ancestral foods as a contribution to being healthy.
Nature in our country offers a variety of food products; many of these constitute part of the
cultural heritage of Ecuador. The importance of ancestral food is based on improving the quality
of life of the population by proposing the knowledge of foods such as: Fava beans, corn,
potatoes, "quinoa"; and, "chochos". These are some of the typical healthy foods of our country
that are currently losing acceptance by people; but, the most important thing is to mention that
these foods are not expensive and have very important benefits for our health.
The importance and benefits of each food are described below:
Fava beans:
The fava beans have a very high nutritional value. They contain vitamins, minerals and
antioxidants necessary for the proper functioning of the body. They are rich in vitamin A that
benefits the skin, as well as in vitamin B1 that is essential for the nervous system. It also has
large amounts of folic acid which helps to produce new and healthy red blood cells.
Corn:
Corn is very energetic and nutritious due to the carbohydrates and proteins it provides. In
addition, the consumption of corn positively influences our mood, concentration, memory and
sleep thanks to its excellent contributions of vitamin B1.
Potatoes:
Potatoes are the most popular food in the world and a very reasonable source of energy that
provides us with more vitamins and minerals and fewer calories than is normally attributed to it.
Due to its nutritional characteristics and its richness in starch, the potato is equated with cereals,
because it is rich in carbohydrates and with a protein composition of 2%.
Quinoa:
Quinoa is considered a recommended superfood to be included in our diet, due to its high
nutritional value and protein and essential amino acid content. Its flavor is pleasant, and it can be
consumed for breakfast, lunch or dinner.
Chocho:
The chocho contains great proteins and fats. The important mineral in this food is calcium, and it
is located mainly in the shell of the grain, which is why it is recommended that it be consumed
unpeeled.

Conclusion
Ecuadorian gastronomy is varied and unique in the world. We have typical products that
contribute to the benefit of our health, in this sense, with the recovery of ancestral edible
products such as: fava beans, potatoes, quinoa, corn and “chochos”, the importance of eating and
the advantages they provide for our Body. Also, the gastronomic legacy of our ancestors who
consumed these foods and enjoyed excellent health is revalued.
