Process Description- Onion

Materials:
Onion seeds or sets
Heat mat
Preparation: 2 Hours Ready In: 20-30 days
Steps Description
1 Check the temperature of the greenhouse. Green onions are a cool-
season crop that grow best when the temperature ranges from 55 to
75 degrees Fahrenheit. Sweet and dry onions thrive at this
temperature before the bulbs form. Lower the greenhouse temperature
by opening louvers, running exhaust fans or using an evaporative
cooler. Raise the temperature by turning on a heater.
2 Start sweet and bulb onion plants in the greenhouse 10 to 12 weeks
before transplanting outside. Plant sweet and bulb onion seeds in flats
and green onion seeds in 6-inch deep containers.
3 Fill the flats and containers with a sterile potting soil mix or soilless
media to start the onion seeds. Select soil with a pH of 6.2 to 6.8.
Apply a complete fertilizer with a grade of 5-10-10. Sow seed 1/2 inch
deep and sets 1 to 2 inches deep.
4 Place a heating mat or cable under the flats and pots of newly planted
onion seeds to hasten seed germination. At 70 to 72 degrees, the
plants emerge through the soil in six to 12 days. When the plants
emerge, provide a 60 to 65 degree daytime and 55 to 60 degree
nighttime greenhouse temperature. They will grow best in at least 10
hours of sunlight per day.
5 Harvest green onions when the plants are at least 6 inches tall and 1/2
inch to 1 inch in diameter. In a greenhouse, gardeners usually harvest
green onions about 30 days after planting sets or 40 to 50 days from
planting seed.
6 Harden off sweet and dry onion plants one week prior to transplanting
outside by placing the flats of onions in a cold frame or protected area.

39
Plant the onions 3 inches apart in rows 12 to 18 inches apart in the
garden. Expect to harvest the sweet or dry onions in approximately
100 days.
Table 12. Process Description- Potato
Materials:
Potato Seed
Thermometer

Preparation: 3 Hours Ready In: 2-3 weeks

Steps Description
1 About a week before planting place the seed potatoes in a warm spot,
between 60 and 70 degrees Fahrenheit. When the sprouts that form are
about ¼ to ½ long, the potatoes are almost ready to plant. A few days
before planting, cut large seed potatoes into chunks about 2 wide. Each
piece should have at least two buds. After cutting the seed potatoes, let
them sit at room temperature for two or three days.

2 To grow well, potatoes need plenty of sunshine and loose, loamy soil. With a
garden fork, work some compost or other garden conditioner into the garden
bed. Add a 05-10-10 fertilizer at the recommended rate.
3 Dust the seed potatoes with agricultural sulphur by putting a handful of
sulphur in a paper bag, adding the potatoes and shaking them around. This
protects against fungal diseases. Dig holes 3’ to 4’ deep in hills 12’ apart.
Place the seed potatoes in the holes cut side down with the eyes pointing up.
Cover the seed potatoes with of soil. Water well.
4 About five weeks after planting the potatoes should be hilled. To hill potatoes,
simply pile soil up around the stems. This forces new potatoes to grow above
the seed potatoes planted earlier. When hilling, it is okay to leave a few of the
upper leaves exposed or cover the entire plant. Hill frequently enough so that
new tubers are never exposed to direct sun.
5 On average, potatoes mature in about 70 or 100 plus days. One clue that the

40
potatoes are almost ready to harvest is that the leaves will yellow and the
foliage will back. It’s best to leave them in the ground for two or three weeks
after this point so that their skins toughen up. Use a pitch fork and your hands
to carefully dig them.
6 Brush of dirt, wash and enjoy potatoes immediately. To store potatoes for
later use, place them in a dry spot to cure for another two weeks. After curing,
sort through the potatoes and discard any that are soft or shrivelled. Place
the rest in a cool, dry spot, where they should last for several months.

5.4.2 Supplies

The table below enumerates the supplies needed for the year-round
operation of the business. Number of units to be used annually was computed
based on the sales projection attached to the marketing part of this business
plan. The desired ending inventory was computed enough to supply at least a
week-long operation of business for the beginning of the next year.

Purchasing of supplies should at least be once a month for the seeds and
twice or thrice a year for the tools used in operation.
