The increasing demand for healthy products contributes to a continuous need for new
product development, which should offer nutritious advantages to consumers who seem to
be choosing foods closer to those ‘‘in natura.’’ On the other hand, not only the nutrition and
sensory characteristics have to be taken into account in the food developing process. The
focus on childhood obesity has grown more than ever in recent years as the number of
children classed as obese is gravely increasing. Carbonated soft drinks have increasingly
come under attack as a key contributing factor to the cause because of their high sugar
levels and, in turn, calorie count. As such, a growing trend has been the positioning of fruit
juices as a healthy alternative to soft drinks. Healthy options currently introduced by fruit
juice are: 100% pure juice for kids; natural, pure juice with no artificial sweeteners, or color;
carbonated fruit juices for kids. Generally juices are considered to be very healthy, more so
the 100% juices. Therefore there is a growing trend in the juice market currently to position it
to kids through fun packaging and attractive flavors and to parents who are keenly
concerned for finding healthy juice alternatives with their children’s health in clear focus.[1]
The fresh pineapple juice is a popular product due to its pleasant aroma, favor, and
numerous functional properties [2]. The pineapple juice satisfies the “5 A Day” dietary
requirement of fruits and vegetables set by many health agencies [3]. Pineapple juice
contains a variety of minerals, especially manganese, as well as amino acids, various
sugars, vitamins, and polyphenols [4]. Hence pineapple juice is a good choice for consumer.

Literature gap
- The pineapple juice market is very popular in the world because it brings many
advantages for people. Pineapple juice is especially a favorite drink for youngsters
which provides many nutrients for our health. There are many researches about
chemical raw ingredients contained in pineapple juice and solutions how to improve
the quality in ingredients to create a nutty flavor that attracts customers.Besides
pineapple juice is a healthy soft drink and a refreshing summer drink, it has some
disadvantages. We need to find out the gap of side effects of pineapple juice when
we abuse drinking too much during the day. Using beyond the allowed limit causing
symptoms such as poisoning, allergies, diarrhea, and nausea…
- Although we have advanced machine and modern technology in the production
process of bottled pineapple juice products, there are still holes in the manufacturing
process. We need to research more details about how to produce a bottle of juice
that retains its fresh taste which does not contain too many chemicals but it
preserves the best taste.
Pineapple is one commercial fruit tree that is the most important so the juice
company needs to improve the quality to satisfy the customer expectation and boost
the high position in the drink market.
