Lactase Enzyme Simulation

By: Sophie Marin

Variables

Hypothesis: If the pH of the soil is above or below 7 then the Glucose production from
Lactase hydrolysis will decrease, in addition to the rate of reaction.
Independent variable: The pH of each solution.
Dependent variable: The rate of reaction for the Lactase enzyme will change according
the pH of the solution.

Glucose Production from Lactose Hydrolysis Graph
Graph of pH data
Explanation

The enzyme Lactase breaks down Lactose into useable sugar like Glucose; when
conditions are desirable the enzyme is able to make 500 mg/dL of Glucose. The
desirable conditions include a temperature of 37 C and a pH range of 4.9-8. As the pH
moves away from the desired range, the activity of the enzyme, Lactase, decreases.
According to the graphs the Glucose concentration is the greatest at a pH of 8, which
means the Lactase activity is greatest at this point.
