BUFFALO CHICKEN JALAPENO POPPER CASSEROLE

The Buffalo chicken jalapeno Popper casserole certainly is as delicious as it is addictive, some fans
called this dish “the crack”. We call it healthy, simple and homemade ketogenic food. Try it tonight!

INGREDIENTS

• 2 large breasts with skin, roasted


• 4 slices of bacon
• 2 slices of bacon (for decoration)
• 3 tablespoons of butter
• 4 jalapenos
• 3 garlic cloves
• ½ cup diced onion
• ½ cup of chicken broth
• 1 cup of cream cheese
• 2 cups of cheddar cheese
• 2 tablespoons of fresh coriander
• Salt and pepper to taste

INSTRUCTIONS

1. Pre-heat the oven at 200 °C (400 °F). finely cut the chicken, the bacon and the onion with a
sharp knife.
2. Sauté with half of the butter the bacon, the onion and the garlic in a large frying pan or a
wok over high-medium heat. Fry until the onion and the bacon are translucent. This could
take a while; about 10 minutes.
3. Add the spices: the jalapenos, pepper and coriander. Stir well and keep frying for a couple
of minutes. Add cream cheese, half of the cheddar cheese and chicken broth. Stir gently for
about 10 minutes.
4. Sauté the chicken with the remaining butter and place this in the bottom of a casserole or
refracting mold for baking.
5. Cover the chicken with the preparation and the remaining cheddar cheese; Cook for about
20 minutes or until the cheese is all melted.
6. Serve when hot with small pieces of jalapenos and fried bacon.
