I. INTRODUCTION

Discuss the reason behind the development of the product as well as the existing

need for the product.

Eating nutritious food is important to the body. According to Harrow Council

(2018), there is evidence that eating healthy foods can lessen the risk of obesity,

diabetes, heart disease, stroke, osteoporosis, and some types of cancer.

In addition to that, many Filipinos experimented food products associated with

vegetables such as ampalaya and carrot. These innovations are ampalaya polvoron,

ampalaya candy, ampalaya pastillas, carrot cake, chocolate carrot bars, carrot pastillas,

and carrot yema balls. Ampalaya polvoron, is a version created by Nutri-Vron of

Pampanga, which uses stevia as a sweetener instead of sugar and has powdered

ampalaya for flavoring. Another innovation is the ampalaya candy which contains

nutritious ingredients such as ampalaya and honey as the alternative substance for corn

syrup Aspi (2018). While according to Pascual (2018), ampalaya pastillas, has the

ingredients of ground ampalaya, powdered milk, and condensed milk. Another

innovation is the chocolate carrot balls, which is incorporated with carrot juice. Carrot

chocolate bar is also an example of a nutritious dessert, where in the chocolate was

incorporated with the carrot juice. (Balgoa, 2011).

The food innovations that were presented above have only one objective, and

that is to promote nutritious food products because carrot and ampalaya contain vitamin

B, iron, calcium, and phosphorus that can be used as an herbal treatment for diabetes,

coughs, skin diseases, sterility parasiticide, and antipyretic. In addition to that, Jini

(2013), stated that bitter gourd particularly contains phytonutrient called polypeptide, a

plant insulin to lower blood sugar level, is also composed of a hypoglycemic agent called
charantin, which increases glucose uptake and glycogen synthesis inside the cells of the

liver, muscle, and adipose tissue. In addition, carrot and ampalaya carry out all the

functions of vitamin A, such as maintaining good eyesight, reproduction (sperm

production) and maintenance of epithelial integrity, growth, and development.

From all ideas presented above, we were motivated to develop a new product to

contribute to the improvement and innovations of dessert delicacies in Nueva Vizcaya.

To complement the nutritional contents, sweetness, and bitterness of ampalaya and

carrot, the researchers infused them to puto flan.

II. TARGET MARKET

Describe the target market for the product and their need for the product.

We utilized ampalaya and carrot because of its affordable cost and availability.

Furthermore, it is readily available in the market and in some provinces in the Philippines

that grow and supply ampalaya such as in the Cordillera Mountain range and in Nueva

Vizcaya particularly in Kayapa, Sante Fe, and Ambaguio, because of their semi-

temperate climate (Perante, 2015).

Thus, we were inspired to innovate a new dessert delicacy that could be included

in the dessert gastronomy. Furthermore, this product development could be significant to

promote the local products of Nueva Vizcaya and strengthen Filipino delicacies.

Our mission is to provide to local residents, and visitors with a combination of

quality, authentic, with good service and healthy food product.


III. PRODUCT

A. Product Description

Puto flan is known to be the two popular Filipino desserts that were combined.

Puto, a Filipino rice-cake shaped, traditionally is white in color but can be pink, yellow,

purple, or green. It is also a steamed cake that uses rice traditionally. However, in most

of the recipes they used all-purpose flour because of its finely texture. While the leche

flan, a Spanish, Filipino traditional dessert with different names and distinctive version, is

primarily made with eggs and milk. This dessert recipe was definitely one of the usually

served delicacy in every typical Filipino meal. Puto flan is combination of puto and leche

flan is made by steaming a half-filled flan batter made with egg yolks, evaporated milk,

condensed milk, vanilla extract and food colour in a puto mould and later adding a puto

mixture made by all-purpose flour, baking powder, salt, sugar, evaporated milk, egg

white and melted butter on top of this flan. With this puto flan recipe, you can taste the

softness and creaminess in one bite. This is best served together with your afternoon tea

or coffee.

B. Product Features

Ampalaya. It is an herbal plant popular for its bitter taste but contains medicinal

properties and numerous health benefits to the body.

Carrot. A root vegetable that is traditionally orange in color, and a good source of beta

carotene which can improve one’s eyesight.

Ampalaya Flan. It is a type of a dessert innovation which is the infusion of ampalaya to

leche flan.

Carrot Puto. It is a type of a dessert innovation which is the infusion of carrot to puto.

Puto. A steamed rice cake that is made from rice but usually uses flour in making it

because of its fine texture.


Leche Flan. A sweet delicacy made from condensed milk and egg yolks.

Carrot Puto Ampalaya Flan. It is a dessert innovation which is the combination of carrot

puto and ampalaya flan. Ampalaya flan on top and carrot puto at the bottom.

C. Product Benefits

Benefits of Bitter Gourd

According to Gourmet Farms and Marvin (2010) ampalaya leaves and fruits are

rich in sources of Vitamin B, calcium, and phosphorus. It is also a rich beta carotene that

can enhance cells and promote insulin. It is essential for the production of the red blood

cells, and the formation of myoglobin and hemoglobin, and was found out that this is

good for dysmenorrhea and amenorrhea (absence of menstruation). Ampalaya has also

the ability to lower the blood sugar or the amount of sugar intake by a person. Pascual,

DP said that ampalaya is beneficial in curing kidney stones and helps maintain healthy

liver and bladder. It is also a good aid in lowering blood sugar.

Flavonoids are linked to be as an antioxidant. One of the protections from “Free

Radicals” of the body, Ariefdjohan MW, Saviano D. According to Gutierrez (2015), the

second component is alkanoids. It can control the blood sugar in diabetics. Alkanoids

are very bitter, and its extracts are active. Ampalaya is said to be a medicine to those

people who have diabetes. Joseph, B. and Jini, D. (2013) stated that Momordica

charantia (M. charantia), commonly referred to as bitter gourd, karela and balsam pear.

Its fruit is also used for the treatment of diabetes and related conditions among the

indigenous populations of Asia, South America, India and East Africa. Abundant pre-

clinical studies have been documented in the anti-diabetic and hypoglycemic effects of

M. charantia, through various postulated mechanisms. However, clinical trial data with

human subjects are limited and flawed by poor study design and low statistical power.
The present review is an attempt to highlight the antidiabetic activity, as well as

phytochemical and pharmacological reports on M. charantia, and calls for better-

designed clinical trials to further elucidate its possible therapeutic effects on diabetes.

According to vitro studies, ampalaya contains protein which is helpful to prevent

HIV virus. Both the leaves and its fruit are so much effective as a medicine in fighting

viruses that can harm the body. Scientists confirmed that the ampalaya can be a natural

remedy and is associated as a capsule and a tablet for treatment. These therapeutic

medicines are now widely available in some countries such as Japan and India.

Benefits of Carrots

According to Organic Information Services Pvt Ltd. (2018) the health benefits of

carrots include reduced cholesterol, prevention from heart attacks, warding off of certain

cancers, improving vision, and reducing the signs of premature aging. Furthermore,

carrots have the ability to increase the health of your skin, boost the immune system,

improve digestion, increase cardiovascular health, detoxify the body, and boost oral

health in a variety of ways. They also provide a well-rounded influx of vitamins and

minerals. It is also said that carrots are good for blood sugar regulation due to the

presence of carotenoids in this delicious vegetable. Carotenoids inversely affect insulin

resistance and thus lower blood sugar, thereby helping diabetic patients live a normal,

healthy life. They also regulate the amount of insulin and glucose that are being used

and metabolized by the body, providing a more even and healthy fluctuation for diabetic

patients.

Da Silva Dias (2014). A root vegetable that is commonly in color orange which

contain vitamins and minerals is known as carrot. Carrots are good for the eyes and are

effective as vitamins because of its antioxidants and aminoethane. Carrot is also


effective as an anti-bacterial and can fight fungal deficiencies. Like other colored

vegetables, carrot is one of the richest sources of vitamin A, which is totally good in

preventing a post-menopausal and breast cancer.

Benefits of Puto

Puto contains healthy mineral which are beneficial for health such as potassium

and iron. Potassium can regulate the metabolism system. It attributes to the good

nutrition absorbing. Further, iron and potassium can strengthen muscle, including the

heart muscle. Puto is very friendly to our digestive system.

Benefits of Leche Flan

A Leche Flan contains certain vitamins. Like vitamin B12 with 21% and vitamin C

for approximately.

D. Desired Usage of the Product

Filipinos are also known to be food venturous. Having a unique product that

enriches ourown traditional delicacy such as Puto and Leche Flan will eventually suit

their taste. It is a favorite snack to both young and old and can also be seen in almost

every occasion therefore our product will have a high demand not only to the

Filipinos but also to the tourists. In addition, multiple costumers will patronize the

product due to its uniqueness. Three to four pieces a day for oldies and kids between

the ages of 3 and 7, while adult is six to seven pieces a day. Shelf life around 5-6 days in

the fridge, so keep it refrigerated if you won’t consume immediately if left at room

temperature.
