SPINACH AND CHEESE MINI MUFFINS

These delicious savory mini mu!ns are great to


have with breakfast. They are packed with eggs
and spinach and will give your little ones a
nutritious start to their day. They also make an
excellent toddler snack, providing your little
ones with a protein and iron boost.

They are easy to make and have just four


ingredients!

INGREDIENTS
1 cup spinach leaves, chopped
3 eggs, lightly whisked
1/2 cup cheese, grated
1/4 cup self raising flour

METHOD
Preheat oven to 200 C (390 F) and line a mini
mu!n tray with paper mu!n cups.

Mix eggs and flour together in a mixing bowl.

Add spinach and half of the cheese (so 1/4 cup)


and mix to combine.

Spoon the mixture into the prepared mu!n tray,


filling each cup about 3/4 full.

Sprinkle the remaining 1/4 cup of cheese on the


top of the mu!ns.

Bake for 12-14 minutes, or until golden on top.

Makes 12-18 (depending on the size of your mini


mu!n tray cavities).
