Introduction:

GMP (Good Manufacturing Practices) establishes the operational conditions


andrequirementsnecessarytoensurehygienethroughoutthefoodchainandfortheproductiont
hereof.

GMP consists of guidelines that define management and handling actions, with
thepurpose of ensuring favourable conditions for the production of safe food. They are
alsousefulforthedesignandoperationofestablishmentsandforthedevelopmentofprocessesa
nd products relatedto food.

We must consider the right and proper layout of the structure to place the equipment
inthe facilities that make it be in a proper place that cannot be cause any damage from
theother equipment, keeping it clean must be the priority to keep in mind and sanitize
itbeforeusingtheequipmentforfoodprocessingandhaveaproperuniformlikeHeadwear,Chef
jacket,Apron,Neckerchief,ChefpantsandChefshoesbeforetakingorprocessthe food.

Methodology

We are being assigned to observed and check the facilities equipment and
itsstructure on January 23, 2023 at Caraga State University’s Food Innovation Center
inAmpayon Butuan City. By preparing the notebook and pen with taking pictures on
ourmobile phones, the observation of the facility was successfully conducted that
neverbeen expect to be on actual observation that we’ve never done before. One of our
costudents check if we are wearing a proper attire before entering the facility like
labgown/apron, hairnet, and lab boots/shoe covers, this is to maintain the cleanliness of
thefacility and make the equipment will be out of dirt and also we are required to not
wearany kind of accessories. Our professor guide as all along the equipment and discuss
itbrieflyand understandable.

its equipment process to make it easy to use and handle. In this place also
was being check and observe the packaging process of the food it either in

GeneralObservation:

The facility was being organize well at its equipment are being place according to
theirrespective areas and the rooms for its other tools are being place correctly that
made ituse easily without any damage to the other equipment, but I observed that its
lightningwas not being covered for dust that it might be fall during the process of food
and someofitswiringarenotproperlyplacethatitmightbecauseforcurrentorwiringdisruption
and also there are some rooms that the walls are being destroy and need to bereplace a
new one also some of theventilation must be change because some of it arenot working
well. In over all the facility was ok to process the food but it must be putsome
improvement to make it more safety ad easily to conduct the food
processingproduction.
