Characterize the juice samples (orange, apple, grapes) by determining their physical and
chemical properties, including their color parameters, trititable acidity, turbidity, Brix values,
absorbance, and pH.
Analyze the mutagenesis of E. coli using the Ames test in freshly squeezed orange, apple, and
grapes juices that will be submitted to UV-C radiation and in commercially pasteurized orange,
apple, and grape juices that will be submitted to thermal treatment.
Investigate the effectiveness of the sample's depth, UV intensity, inoculation rate, and exposure
time.
Examine the impact of UV-C light on the degradation of amino acids in aqueous solution and
fresh juices samples.
Determination of change in colors of juice samples when they will be exposed to UV-C light.
