The aims and objectives of this study are to:

 Characterize the juice samples (orange, apple, grapes) by determining their physical and
chemical properties, including their color parameters, trititable acidity, turbidity, Brix values,
absorbance, and pH.
 Analyze the mutagenesis of E. coli using the Ames test in freshly squeezed orange, apple, and
grapes juices that will be submitted to UV-C radiation and in commercially pasteurized orange,
apple, and grape juices that will be submitted to thermal treatment.
 Investigate the effectiveness of the sample's depth, UV intensity, inoculation rate, and exposure
time.
 Examine the impact of UV-C light on the degradation of amino acids in aqueous solution and
fresh juices samples.
 Determination of change in colors of juice samples when they will be exposed to UV-C light.
 Effect of UV-C light on freshly squeezed orange, apple, and grapes juice samples under different
exposure times.
