Dietary Requirement
Summarise the special request or dietary requirement that you have been asked to address.
What is it? How might the issue affect the customer if you failed to address it adequately?
I worked in Tommy’s Restaurant and we have different customers request for special or
dietary requirement.
In my restaurant, we give Tuna Cheviche and Guacomole with mix nut, grilled octopus.
But some of the customer are nut allergy and they request for it while others are shellfish
allergy, seafood allergy. And at that time, we replace the tuna to Hongus starter for them.
And some of them are vegetarian, vegan also. We give them Humus negro( mixed beans).
If we failed to address it adequately, allergic reactions to seafood are mild and cause hives
(urticaria), tingling of the throat and mouth, swelling (angioedema) and/or gut reactions
(vomiting, diarrhoea).The most dangerous symptoms are breathing difficulties or collapse,
caused by a drop in blood pressure (shock), either of which can be life threatening.
Also it will direct affect to the business may be they will get fines, their reputation will go
down and get negative feedback from the customers.
Strategy
Describe how you will adjust your recipe to address the dietary requirement.
For the dietery requirements, we can separate the plate who are allergy with gluten.
We can let the waiter/waitress so that they will explain to customers and put the right
dishes in right place.
