Baking is a method of preparing food that uses dry heat, typically in an oven, but can also be

done in hot ashes, or on hot stones. The most common baked items is bread, but many other
types of food can be baked. Heat is gradually transferred from the surface of cakes, cookies,
and pieces of bread to their center. As heat travels through, it transforms batters and doughs
into baked goods and more with firm dry crust and a softer center. In this semester we are able
to focus on baking desserts, such as cookies, pies, and cakes.

The word “dessert” emerged in the seventeenth century, derived from the French verb
“desservir,” meaning “to clear the table” in English. Etiquette dictated that napkins and
tablecloths be changed before the final course, which at the time was a delicate fruit course. In
a courtly context, the course itself was known as “le fruit,” but the bourgeois renamed it
“dessert.” After the French Revolution, the aristocratic “fruit” was fully replaced by “dessert.”
So, what did people eat for dessert at the end of their formal meals? According to Tebben, in
the seventeenth and eighteenth centuries it was mostly fruit-based treats, often using jams and
preserves. A host might also serve cookies, marzipan, meringues, or frozen desserts.
For many people, it’s not a real dinner if there’s no dessert. That tradition, of finishing a meal
with a little something sweet, has its origins in France. As French food scholar Maryann Tebben
explains, the French dessert has been around for countries, but its changed a lot over that time.
REFLECTION

Cooking is really my passion, since high school I always find myself loving cooking. I enroll in this
class to showcase my skills and learn beyond my limits. Techno 3 Commercial Baking
contributes a lot of things and learning experience. I was able to learn new cooking
terminologies, kitchen sanitation, proper hygiene, and so many more. Cooking is always my way
to express myself on what I serve. This subject made m realize that it failing to obtain your
desire, makes you to want more, what I’m saying is this subject makes me ask more from
myself. It motivates me to bring out the best that I never expected I have in me. So far baking
cakes is one of my dream come true, to bake a cake is like an achievement for me. I was able to
make my own design in decorating the cake, and I am so satisfied that I have perform well this
semester.
At first, I would like to congratulate myself for doing so great to all the laboratories that I have
perform. Some may not be perfect but m glad that I was able to learn new things. All this are
not possible without all of you. To my parents thank you for giving me moral, spiritual and
financial support. You both know how thankful I am knowing that you will always be right
beside me. To my teacher, Joan Juesna thank you for guiding us, for molding us each and
everyday. To my friends who always help me and support me, my buddies thank you for
without you all I would not be able to perform well.
