LESSON PLAN IN FOOD PROCESSING 9

CONTENT STANDARD: The learner demonstrates understanding of uses and maintenance of


food (fish) processing tools, equipment, instruments and utensils in
food (fish) processing.

PERFORMANCE STANDARD: The learner uses and maintain appropriate food (fish) processing
tools, equipment, instruments and utensils and reports accordingly
upon discovery of defect/s.

LEARNING COMPETENCIES:Identify and access basic machine/equipment required to


complete tasks in accordance with assignment instructions and
workplace requirements;

Carry out routine pre- operational checks according to


manufacturers’specifications and workplace procedure.

I LEARNING ACTIVITIES
At the end of the lesson students will be able to:
A. Apply standard procedures in using tools, equipment, instruments
and utensils;
B. Use tools, equipment, instruments, and utensils according to job
requirements and manufacture’s specification;
C. Follow steps in cleaning/Housekeeping tools, equipment/
Instruments.

PROPER UTILIZATION OF EQUIPMENT AND TOOLS


The proper use of the tools and equipment is the
fi r s t a n d foremost task in the maintenance. The proper use of tools
and equipment is a very important task of the worker in any trade.
They must be able to u s e t h e m i n a c c o r d a n c e t o t h e
m a n u f a c t u r e r ’ s m a n u a l s a s t h i s w o u l d evidently extend the life
of the equipment and tools.

USER’S MANUAL
For Safe and Proper Operation of an Equipment or Tools.When using
equipment and simple tools, it is best to read the manufacturer’s and/or
user’s manuals. This would indicate the part of the equipment, the
functions of each part and the way to maintain it. We must always refer to
it for reference. The user’s manuals must be kept handy and within the
Quality Control Area where the equipment is kept for immediate reference.

*The teacher will have to discuss what are the contents of the Operational
Procedure Form/Template 1 and how it is to be filled-up.

Read vigilantly the given information for proper operation of


the equipment.

INFORMATION BEFORE USING THIS EQUIPMENT:

Coffee Maker/Machine is an electric countertop appliance that


brews coffee automatically. It consists of a hot plate,a
carafe or glass coffee pot,filter basket,and a water
reservoir.

A Coffee Maker is a very simple,low-tech yet efficient


machine.
PRE - OPERATIONAL SAFETY CHECKS:

* If it is your first time to use a Coffee Maker, make sure to


thoroughly clean it .

* Wash all removable parts including decanter lid and the filter
basket separately using mild soap.

*Be sure that the coffee maker is dry before operating it.

*Check the electric wire/cord. Be sure that it is not rotten to


avoid unnecessary things to happen.

HOUSEKEEPING:

*This doesn’t need to be an in-depth scrubbing , but you


should
make sure to clear obvious residue.
*Deeper cleaning is necessary at least once every three
months. If your area has hard water, meaning water with
high mineral content, you probably need to clean your
coffee pot once a month.

1. Put 4 cups of undiluted vinegar to the reservoir.


2. Brew and let soak.
3. Follow two to three cycles of water until the smell
of the vinegar will
gone
4. Finish the cycle and flush with water.
5. Wipe with clean cloth.

Why do we need to follow the procedures in Operating an Equipment?

IV EVALUATION

*Students will go to its respective group. Cstudents have already their group)

*They will now discuss the Kitchen or Food Processing Equipment that they
have selected,which was their assignment.

*Each group have 5-6 members but they need to fill-up the Operational
Procedure Form individually.
*This is to evaluate the student’s capability to fill-up forms and to test their
ability to follow instructions and procedures.

Task: Prepare Operational Procedure for 25 minutes.Fill-up the necessary


informations.

Materials needed:

1.Template of Operational Procedure(#1)-The teacher will provide.


2.One whole sheet of paper (with the selected equipment and how it is to
operate and Maintain)
3.Ballpen
