Get busy in the kitchen creating great-tasting dishes
packed with fresh seasonal produce. I’m talking Thai-inspired
cauliflower rice, crisp golden potatoes and veggie-packed
soup, plus fluffy pancakes with a refreshing citrus twist.

SALMON WITH CAULIFLOWER LARB SALAD


Serves 4 Prep 15 mins Cooking 10 mins

2 tbs vegetable oil, divided with salt. Cook, stirring frequently, for

1½ tbs honey
1 tsp vanilla bean paste
½ tsp ground cinnamon
Toasted sourdough slices, to serve

1. Line a large sieve with muslin and

lined sieve. Loosely cover with plastic
wrap. Place in fridge overnight to drain.

from the fridge, discarding the excess
liquid in the bowl. Spoon over toast.

bowl. Chill for 30 mins. Spoon labne
over toasted sourdough slices. Top with
berry mixture. Sprinkle with mint leaves.

Granulated Full-Bodied Coffee
250g butter, chopped
¾ cup (115g) plain flour
¼ cup (25g) cocoa powder
½ cup (110g) brown sugar
½ cup (40g) desiccated coconut
2 x 395g cans sweetened
condensed milk
⅓ cup (90g) golden syrup
185g dark choc melts, melted
2 tsp vegetable oil
¾ cup (105g) hazelnuts, toasted,
coarsely chopped

1. Preheat oven to 180°C. Grease


a 16cm x 26cm (base measurement)
slice pan. Line the base and 2 long sides
with baking paper, allowing sides to
overhang. Combine 2 tsp coffee and
2 tsp hot water in a saucepan. Add
half the butter. Cook over low heat,
stirring, for 2 mins or until the butter
melts and the mixture is smooth.

sugar and coconut in a bowl. Make
a well in the centre. Add the butter
mixture. Stir to combine. Spoon
into prepared pan. Press over the

To make these little treats, melt
a 290g pkt dark choc melts
following packet directions.
DIP & DECORATE
Dip metal spoons, 1 at a time, in
melted chocolate. Place on a lined
baking tray. Top with sprinkles,
mini marshmallows or chopped
chocolate bar. Set aside until set.
HOT CHOCKY TIME
Place warmed milk in a mug. Add
a decorated spoon and stir until
chocolate melts and the mixture
is well combined.
