you can sit and enjoy that custom-made cup of coffee. If you need to work, we have a
special area set aside for you. We have a soft-seating area in front of a stone fire place
that is ideal for your tired mind and body. Our professionally trained Batista’s prepare a
delicious four-course coffee. Our ingredients are all natural (no chemicals or
preservatives) ensuring you the highest quality. Moreover we use local coffee beans to
support our local farmers here in our country which is the Philippines. Dos Caffè looks

Dos Caffè

4 MAIN COFFEE

AMERICANO - Cafe Americano is made by adding hot water to an espresso shot. The
water dilutes the espresso a bit, giving you the volume of a drip, but with an espresso
taste.

INGREDIENTS:
● 14–18 grams espresso coffee beans
● hot or almost boiling water
● espresso machine
● scale
● grinder
● tamper

PROCEDURE:
1. Measure out your beans for a double shot. Grind them really fine.
2. Tamp the beans, then put the portafilter into its spot on the machine.
3. Make the espresso.
4. Heat up the water to 70-76 degrees Celsius.
5. Pour the espresso into the hot water, mix 1 part espresso to 2 parts water.

Macchiato - A caffè macchiato or espresso macchiato is a shot of espresso topped with


frothed milk. The word “macchiato” means “stained” in Italian, meaning that the dark
espresso is stained by the milk foam on top.

INGREDIENTS:
● 2 espresso shots (2 ounces)
● 2 ounces (¼ cup) whole milk foam
PROCEDURE:
1. Make the espresso: Use an espresso machine or manual espresso maker to
make one shot of espresso and pour it into a mug.
2. Steam the milk (espresso machine) or heat the milk to scalding: Start with ½ cup
milk (use ¼ cup foam.) Heat the milk to 150 degrees
3. Froth the milk: Use the espresso machine or a milk frother, French press or
whisk to froth milk into small, even bubbles.
4. Spoon the foam on top: Use a spoon to remove the top of the foam (dry foam)
and gently place it on top of the espresso. About ¼ cup foam for one drink.

Capuccino - A cappuccino is an espresso-based coffee beverage made with steamed


milk foam that has Italian origins. The beverage can be altered by using cream in place
of milk, non-dairy milk replacements, and the addition of cinnamon or chocolate powder
for flavor.

INGREDIENTS:
● 2 tablespoons finely ground dark roast coffee
● 4 ounces water
● 4 ounces milk (add cinnamon/chocolate powder)

PROCEDURE:
1. Place the water into the boiler of your espresso machine.
2. Place the 2 tablespoons (2 shots) of ground coffee into the portafilter.
3. Tamp (press) the coffee down using a tamper. Do this 2 to 3 times to make sure the
grounds are packed tightly.

5. The shot should be pulled for 23 to 30 seconds, or until 2 ounces of espresso are
produced, into a demitasse cup or the glass carafe that was included with your
espresso maker.
6. Once the shot is pulled, foam the milk.

8. Insert the steam wand into the container with the milk, just under the surface of the
milk.
9. Engage the steam wand on your espresso machine.
10. Keep the tip of the wand toward the side of the container. This will create a vortex
with the milk.
11. Move the container higher, lower, closer, then further so that the steam wand can
incorporate the air into the milk, making the foam. 12. Once the milk has foamed to
double its size, turn the steam wand off.
13. Top the espresso with foamed milk right after foaming.

Latte - The Italian coffee drink known as caffe latte is frequently abbreviated to "latte" in
English. It is created with espresso and steamed milk.

INGREDIENTS:
● 2 cups milk
● 1 ⅓ cups hot freshly brewed dark roast espresso coffee

PROCEDURE:
1. Heat milk in a saucepan set over medium-low heat. Whisk briskly with a wire whisk to
create foam.
2. Brew espresso and pour into four cups. Pour in milk, holding back the foam with a
spoon. Spoon foam over the top.
