CULTURAL INSIGHT
1. Pickled herring
Denmark used to be a pescatarian nation, but over the last few decades, many
Danes have started to prefer meat over fish. Still, marinated herring, which can be
found in many different tasty marinades, is still a common food for Danes. It's also
the main food at any Danish luncheon.
This is one of many Danish cold cuts. Rolled sausage is made from a slab of pork
belly rolled with pepper and other herbs and then salted in brine for some days
before being placed in a rectangular press.
A Shooting Star is the name of a type of Danish open sandwich. It's made from a
piece of buttered bread topped off with a deep-fried type of flounder, which is
then garnished with white asparagus, small shrimp, caviar, and lemon.
4. Hot dog
Danish hot dog stands can be found in any town in Denmark. They serve several
kinds of hot dogs, and always have a variety of sausages available. The most
common hot dog is a roasted hot dog. It is a roasted sausage placed in a sausage
bun. Toppings include, ketchup, remoulade, mustard, raw onions, roasted onions,
and pickled slices of cucumber.
5. Pickled gherkin
The Danish version of pickled gherkins is quite unique. The cucumber used for this
is a rather large variety called asie. They have very few seeds. It is peeled and
then split in two, then cut into 1.5cm slices before pickling. The perfect asie is sour-
sweet and crunchy.
