1. Danish meat -sauce

Danish meat-sauce should not be mistaken with Italian meat-sauce. Danes eat it on
top of mashed potatoes, pasta, or rice served with pickled gherkins and pickled

beetroot. Onions are blanched in a pot and then minced beef is added. After
browning the meat, water is added along with spices. At this point, starch is added
to make the gravy. In the end, brown coloring made from burnt sugar or soya is
added to give it color. Some people add vegetables but what kind depends on
family tradition.

2. Fried pork wit h parsley sauce

This is a dish comprised of fried pieces of unsalted or smoked bacon coated in


egg and breadcrumbs. It's served together with boiled potatoes and a white milk
parsley sauce.

3. Roast pork wit h crackling

This is a piece of pork belly or rib side cut with the skin still on. The meat is slowly
cooked in an oven and grilled a bit to create the perfect crackling. It's usually
served with potatoes or buttered rye bread, gravy and red cabbage.

4. Meat balls in curry

This is a dish made of minced pork meat with chopped onions, egg and herbs,
formed into balls and cooked. During the cooking, curry powder is added and the
meatballs become yellow. The water is then made into a sauce by using a mix of
flour and milk. The meatballs and curry sauce are served with rice.

5. Frikadeller—Danish meat balls

Frikadelles are danish meat balls usually made from minced pork and veal. It's
flavoured with various herbs, mixed together with chopped onions, breadcrumbs,
and egg. The meat mix is then formed into small burgers and fried on a pan, and
served with potatoes or buttered rye bread, gravy, and red cabbage.
