Objectives: LAB 1 (Muffin Method)


To demonstrate:
 factors relating to safety and sanitation in food preparation
 knowledge and skills in the planning, preparing and evaluating of
basic food recipes
 proper technique in milk cookery
 skill in measuring, mixing and organizing
 proper usage of kitchen tools and equipment
 basic competencies.

Please only complete one of the below recipes. Some may contain two
parts. If that’s the case, make sure to complete both parts.

Zesty Lemon-Blueberry Muffins

 375 mL (1 1/2 cup) flour


 175 mL (3/4 cup) sugar
 10 mL (2 tsp) baking powder
 7 mL (1 1/2 tsp) lemon zest or orange zest (the colourful outer layer
of the peel)
 5 mL (1 tsp) cinnamon

 1 mL (1/4 tsp) salt


 125 mL (1/2 cup) milk
 125 mL (1/2 cup) oil
 5 mL (1 tsp) lemon juice
 1 large egg
 375 mL (1 1/2 cups) blueberries

Method

1. Preheat oven to 190° C (375° F).


2. Grease muffin tins.
3. Mix all dry ingredients in a large bowl.
4. Combine egg, oil, and milk; mix completely.
5. Make a well and pour liquid ingredients into it.
6. With a wooden spoon, mix 8 to 12 times.
7. Fold in berries or chocolate chips if desired.
8. Do not over-mix.
9. Fill muffin cups two-thirds full.
10. Fill any empty cups in muffin tins half-full of water.
11. Bake 15 to 20 minutes.
12. Top with lemon juice mixture if desired.
13. Tip on side to cool.

Muffin Variations
Yield: 6 muffins

 250 mL (1 cup) flour


 125 mL (1/2 cup) sugar
 10 mL (2 tsp) baking powder
 2 mL (1/2 tsp) salt
 125 mL (1/2 cup) milk
 65 mL (1/4 cup) oil
 1 egg

Method

1. Preheat oven to 200°C (400°F).


2. Mix all dry ingredients together; make a well in centre.
3. In small bowl, mix egg, milk, and oil.
4. Pour all liquid ingredients into well, and mix 15 to 20 times using
wooden spoon. Do not over-mix or batter will be lumpy.
5. Add ingredients for variation chosen.
6. Using two spoons, fill paper muffin cups 3/4 full.
7. Fill any empty cups in the muffin pan about half full with water.
8. Bake 15 to 20 minutes or until golden brown.
9. Turn muffins on their sides as soon as removed from oven to prevent
sogginess.

Variations

Add extra ingredients carefully without over-mixing the batter.

Fruit (blueberry, cranberry, apple, pineapple, ...)


 Add additional 10 mL (2 tsp) flour.
 Add 125 mL (1/2 cup) of your choice fruit.

Streusel Muffins
 Sprinkle with brown sugar and cinnamon before baking.

Raisins or Chocolate Chip


 Add additional 10 mL (2 tsp) flour.
 With last few mixing strokes, add 50 mL (1/4 cup) of raisins or
chocolate chips.

Muffin Surprise
 Fill muffin cups half full.
 Add 10 mL (2 tsp) jam to each muffin and spoon additional batter on
top of jam.
