Introduction

If you want to bring perfection in baking, it is important to use measuring


spoons to ensure the accuracy of ingredients. You have to cream sugar and
butter to get more air in your chocolate cake. Creaming will make the texture
and color of ingredients light.
Keep all your ingredients at room temperature and use an electric whisk at
slow speed to create a fluffy and light mixture. Sift flour with other ingredients
to mix and add air to your cake. Carefully mix dry and wet ingredients
separately before mixing them together. Stick to cooking time and completely
cool your cake on the cooling rack before frosting your cakes. Fruit cakes can
be cooled in the tin, but transfer other cakes on your cooling rack.
Chocolate Cake Decorations can increase the beauty of your cakes. You can
use different piping bags and nozzle to decorate your cakes. You can draw one
fine round or experiment some designs with piping bags and nozzles. On a
cupcake, you can make one spiral and use the pressure of bag in the middle of
the spiral to draw a sharp finish. You can make dots of different sizes on the
surface of cake. If you want to cover your cake with icing, spoon one dollop of
soft buttercream in the middle of the cake and use one palette/spatula knife to
sweep the icing toward the edges of your cake.
You can smear small quantities of icing on the sides with palette/spatula knife.
A long ruler or knife will help you to get a smooth finish. For decoration of
cake, feel free to choose edible leaves and flowers and decorate your cake
with them. If you want a crystallized look, bright whisk one egg white and
gently apply this mixture on the petals, leaves and flowers. Sprinkle some
caster sugar and rub off extra sugar. You can use chocolates or sweets to give
different childlike and funky effects to your cakes. Don’t underestimate the
fresh golden walnuts or fresh raspberry to top your cakes.

Chapter 1 – Black Forest Chocolate Cake

Recipe 01: Black Forest Cake
You can use this recipe to make delicious cake with parties. You can use
whipped cream as per your desire.
Servings: 10
Total Time: 1 hour
Ingredients:
• Milk: 1 cup
• Salt: ½ teaspoon
• Eggs: 2
• Vinegar: 1 tablespoon
• Vegetable oil: ½ cup
• All-purpose flour: 1 ¾ cups
• White sugar: 2 cups
• Brewed coffee (strong and cold): 1 cup
• Vanilla extract: 1 teaspoon
• Cocoa powder (unsweetened): ¾ cup
• Cherry pie (filling): 21 ounces
• Baking powder: 1 teaspoon
• Cherry liqueur: ½ cup
• Baking soda: 2 teaspoons

Procedure:
Preheat your oven to almost 350 °F. Grease two cake pans (8-inch) and flour
them. Keep them aside.
Combine vinegar and milk to make sour milk and keep this milk aside.
Sift together salt, baking powder, baking soda, cocoa powder, sugar and flour
in a bowl. Keep it aside.
Take one large bowl, beat together the vanilla, oil, coffee and eggs in this
bowl. Mix in the prepared sour milk and gradually whisk in the flour mixture.
Mix them well to incorporate everything.
Pour batter into your greased pans and bake in your preheated oven for almost
30 minutes. Check with a toothpick or cake tester by inserting it in the middle.
If the tester comes out spotless, the cake is ready. Let both cake layers
completely cool before filling.
Cherry Filling: Combine cherry liquor and pie filling in a bowl and put this
mixture in your fridge until chilled. Fill this filling between two layers of cake,
frost with your favorite icing and serve.
Recipe 02: Double Chocolate Forest Cake
You should try this original version of forest cake with cherry topping and
cream frosting.
Servings: 12
Total Time: 2 hours
Ingredients:
• All-purpose flour: 2 1/8 cups
• Vegetable oil: ½ cup
• Vanilla extract: 1 tablespoon
• White sugar: 2 cups
• Sour cherries (pitted): 20 ounce
• Cocoa powder (unsweetened): ¾ cup
• White sugar: 1 cup
• Baking powder: 1 ½ teaspoons
• Cornstarch: ¼ cup
• Baking soda: 3/4 teaspoon
• Vanilla extract: 1 teaspoon
• Salt: ¾ teaspoon
• Whipping cream (heavy): 3 cups
• Eggs: 3
• Confectioners’ sugar: 1/3 cup
• Milk: 1 cup

Procedure:
Preheat your oven to almost 350 °F. Grease two round cake pans (8-inch) and
flour them. Cover their bottom with waxed paper. Keep them aside.
Take one large bowl, combine salt, baking soda, baking powder, cocoa, sugar
(2 cups) and flour in this bowl. Add vanilla (1 tablespoon), oil, milk, and eggs
in a separate bowl and whisk them well. Pour this wet mixture over dry
mixture and mix them well to make a smooth batter. Pour this batter into
greased pans.
Bake for almost 35 minutes and check with a wooden stick to confirm its
doneness. Let these cake layers cool in pans for nearly ten minutes and transfer
to your wire racks to let them cool completely.
Drain your cherries and reserve juice (1/2 cup). Combine cherries, reserved
juice, cornstarch and sugar (1 cup) in one saucepan. Cook on low flame to
make a thick mixture and stir constantly. Mix in one teaspoon vanilla and let it
cool before using this syrup.
Combine confectioners’ sugar and whipping cream in one medium bowl. Beat
well with the help of one electric mixer at high speed to make a stiff peak.
Use one serrated knife, split every layer of cake horizontally to make them half
and slash one sliced layer into crumbs and keep them aside.
Reserve frosting (1 ½ cups) for the decoration of cake and keep it aside.
Slowly brush the loose crumbs and side of every cake layer with your hands or
pastry brush.

Assembly:
Put one cake layer on your cake plate, spread frosting (1 cup) on this layer and
top with cherry topping (3/4 cup). Top the second layer of cake and replicate
the layers of cherry topping and frosting. Top this layer with the third layer of
cake and frost the sides of this cake. Pat some reserved crumbs on the sides of
cake and spoon reserved frosting in the pastry bag fitted with a decorator tips.
Pipe around the bottom and top edges of this cake and spoon remaining cherry
topping on the top of chocolate cake.
Recipe 03: Quick Black Cake
You should try this quick and easy version of black forest cake with cherry
fillings and chocolate frosting.
Servings: 18
Total Time: 1 hour 30 minutes
Ingredients:
• Food cake mix (along with pudding): 18.25 ounce
• Chocolate chips (semisweet): 1 ½ cups
• Butter: 1 tablespoon
• Eggs: 3
• Milk: 2 tablespoons
• Almond extract: 1 tablespoon
• Confectioners’ sugar: ½ cup
• Pie filling (cherry): 21 ounce can

Procedure:
Preheat one oven to almost 350 °F. Grease one 9x13-inch pan.
Take one bowl and mix chocolate chips (1 cup), pie filling, almond extract,
whisked eggs and cake mix in this bowl. Stir well to make a smooth batter and
pour this batter into your greased pan.
Bake in your preheated oven for almost 45 – 50 minutes and check with a
toothpick by inserting it in its middle. Remove cake after baking from oven,
wait for ten minutes, release its sides and put on your wire rack to let it cool.
Make Glaze: Take one saucepan and mix chocolate chips (1/2 cup), milk and
butter in this pan. Cook this mixture over low heat to combine everything. Stir
in sugar (confectioners) and spread this glaze over your cooled cake. Top with
cherries and whipped cream and serve this cake.
Recipe 04: Black Forest Cake in Slow Cooker
You can make this amazing cake in your slow cooker on special occasions.
This cake is really delicious.
Servings: 10
Total Time: 3 hour 10 minutes
Ingredients:
• Pie filling (cherry): 21-ounce can
• Butter: ½ cup
• Cake mix (Chocolate): 18.25 ounces
• Crushed pineapple (reserve juice): 8 ounces

Procedure:
Take one saucepan and melt butter in this pan and pour reserved pineapple
juice (from your pineapple can). Keep this mixture aside.
Grease one slow cooker and spread pineapples (crushed) in the base of cooker
to make one layer. Spoon the cherry filling in one uniform layer on the top of
crushed pineapple and put the cake mix in your slow cooker over cherry
filling. Mix pineapple juice and butter mixture and pour over mixture of cake.
Set your crock pot to low setting and cook for almost three hours. Spoon this
dessert in the serving bowls and leave them to cool for nearly five minutes
before serving.
Recipe 05: Dark Chocolate Cake
If you want to make a delicious cake with dark chocolate, you can enjoy this
special recipe.

Ingredients:
• All-purpose flour: 2 cups
• Milk: 1 cup
• White sugar: 2 cups
• Vegetable oil: ½ cup
• Vanilla extract: 1 teaspoon
• Cocoa powder (unsweetened): ¾ cup
• Brewed coffee (hot): 1 cup
• Baking soda: 2 teaspoons
• Eggs: 2
• Baking powder: 1 teaspoon
• Salt: 1 pinch

Procedure:
Preheat an oven to almost 325 °F. Flour and grease two 9-inch round cake
pans.
Take one mixing bowl and sift salt, soda, baking powder, cocoa, sugar, and
flour together. Keep it aside.
Take another bowl and add eggs, coffee, vanilla, milk, and oil in this bowl.
Whisk these ingredients well and pour this mixture over dry ingredients. Mix
them well to make a smooth batter.
Pour this mixture into your greased pans and bake in your preheated oven for
almost 25 minutes. Check with a toothpick or press the top. If it springs back,
the cake is ready. Let these layers cool on your wire racks. Sift some sugar or
frost with your favorite icing.
Chapter 2 – Delicious Vegan Chocolate
Cakes

Recipe 06: Vegan Cake
You can replace wheat with rice flour and add nuts and chocolate chips. This
will be a delicious and easy cake.

Total Time: 1 hour
Ingredients:
• All-purpose flour: 1 ½ cups
• Vegetable oil: 1/3 cup
• White sugar: 1 cup
• Vanilla extract: 1 teaspoon
• White vinegar (distilled): 1 teaspoon
• Cocoa powder: ¼ cup
• Water: 1 cup
• Baking soda: 1 teaspoon
• Salt: ½ teaspoon

Procedure:
Preheat your oven to almost 350 °F. Grease one 9x5-inch loaf pan.
Take one bowl and sift salt, baking soda, cocoa, sugar and flour together. Add
water, vinegar, vanilla and oil to this mixture and mix them well to make a
smooth blend.
Pour this mixture into your greased pan and bake in your preheated oven for
almost 45 minutes. Take out from your oven and let it cool on your wire rack.
Recipe 07: Chocolate Cake with Tofu
You can enjoy this creamy chocolate cake with tofu and almond butter. It will
be a great cake for vegans.
Servings: 12
Total Time: 1 hour 30 minutes
Ingredients:
• Vegetable oil: 2/3 cup
• All-purpose flour: ¾ cup
• Orange juice: ½ cup
• Ground almonds: 1 ¼ cups
• Chocolate liqueur: ½ cup
• Brown sugar (divided): ¾ cup Packed
• Cocoa powder (unsweetened): ½ cup
• Soy butter: ½ cup
• Tofu (don’t use silken tofu): 1 ½ pounds
• Almond extract: 1 teaspoon

Procedure:
Preheat your oven to almost 325 °F. Lightly grease your springform pan (9-
inch).
Take one medium bowl and mix brown sugar (1 tablespoon), ground almonds
and flour in this bowl. Knead in soft butter to make a dough. Press this dough
firmly into the bottom of your greased pan.
Use one blender, combine tofu, oil, remaining sugar, chocolate liqueur, orange
juice, almond extract and cocoa in this blender. Blend them well to make a
creamy and smooth mixture. Spread this batter in one uniform layer on the
prepared crust.
Bake it for almost 1 hour & 15 minutes in your preheated oven. Let this cake
cool to your room temperature and put in the fridge for the whole night. Let this
cake set correctly to avoid a runny texture.
Recipe 08: Peanut Butter Cake
This moist cake is good for your vegan eaters. This delicious cake is great to
serve on different events.
Servings: 12
Total Time: 50 minutes
Ingredients:
• Pastry flour (whole wheat): 3 cups
• Salt: 1 teaspoon
• Ripe bananas (mashed): 2 cups
• White sugar: ¾ cup
• Almond or Soy butter: ½ cup
• Brown sugar: ½ cup
• Cocoa powder: ¾ cup
• Almond milk: 1 ¼ cups
• Canola oil: ¾ cup
• Baking powder: 2 teaspoons
• Chocolate chips (semisweet): 10 ounce
• Baking soda: 1 teaspoon

Procedure:
Preheat your oven to almost 350 °F. Grease one baking pan (9x12-inch).
Take one mixing bowl and mix baking soda, salt, baking powder, cocoa
powder, brown sugar, white sugar and pastry flour in this bowl. Mix butter and
bananas together in one separate bowl to make a smooth mixture. Stir in oil
and almond milk, mix them well and carefully fold this mixture into your flour
mixture. Combine all ingredients to make a smooth batter. Fold in all chocolate
chips and pour this mixture into your greased pan.
Bake in your preheated oven for almost 40 – 45 minutes and check with a
toothpick. Let it completely cool before frosting.
Recipe 09: Vegan Cake without Frosting
You can enjoy delicious vegan cake without any frosting. If you want to add
frosting, you can use vanilla flavor.
Servings: 8
Total Time: 1 hour 40 minutes
Ingredients:
• Water: 1 cup
• All-purpose flour: 1 ½ cups
• Vegetable oil: 1/3 cup
• Baking soda: 1 teaspoon
• White vinegar (distilled): 1 tablespoon
• White sugar: 1 cup
• Cocoa powder (unsweetened): ¼ cup
• Salt: 1 teaspoon
• Vanilla extract: 1 teaspoon

Procedure:
Preheat your oven to almost 350 °F. Grease one round 8-inch baking dish.
Take one bowl and sift baking soda, salt, cocoa powder, sugar and flour in this
bowl. Stir in vanilla extract, vinegar, oil and water to your flour mixture and
beat this blend for almost one minute, until smooth. Pour this batter into your
baking dish.
Bake in your preheated oven for almost 30 minutes. Cool on your wire rack for
one hour before taking it out from your baking dish.
Recipe 10: Rum and Cheesecake with Chocolate
You can enjoy the wonderful taste of this vegan cheese cake with fruits and
strawberries. You can sprinkle nuts and fruits on its top.

Ingredients:
• Ground almonds: 1 cup
• Cocoa powder (unsweetened): 7 tablespoons
• Sunflower oil: ¼ cup
• Whole-Wheat flour: 1 cup
• Soy milk: ½ cup
• Vegan margarine or butter: 2/3 cups
• Firm tofu: 12 ounce
• Dark rum: ¼ cup
• Vanilla extract: 1 ½ teaspoons
• Demerara sugar: 1 ½ cups

Procedure:
Preheat your oven to almost 325 °F. Grease one springform 9-inch pan.
Take one medium bowl, combine flour and ground almonds in this bowl. Cut in
vegan margarine to make the dough. Press this dough into the bottom and sides
of the pan.
Take one blender and crumble tofu in this blender. Add vanilla, rum, soy milk,
oil, cocoa and sugar in this blender and process it to make a smooth mixture.
Pour this filling on the crust.
Bake in your preheated oven for almost 75 minutes and let it cool on your wire
rack. Put in the fridge to chill thoroughly before removing from your pan.
Chapter 3 – Chocolate Cupcakes with
Special Flavors

You can enjoy delicious pound cakes and chocolate cupcakes on special
occasions. There are a few recipes for your help.
Recipe 11: Chocolate and Chili Cupcakes
You can enjoy these cupcakes with dark chocolate and serve with cayenne
powder to enhance their taste.
Servings: 24
Total Time: 1 hour 18 minutes
Ingredients:
• Cake Mix (chocolate): 18.25 ounce
• Cayenne pepper: 1/8 teaspoon
• Ground cinnamon: ½ teaspoon
• Ancho chile (ground pepper): 1 ½ teaspoons
• Confectioners’ sugar: 4 cups
• Cayenne pepper: ¼ teaspoon
• Cream cheese (softened): 8 ounces
• Water: 1 ¼ cup
• Softened butter: ½ cup
• Vegetable oil: 1/3 cup
• Eggs: 3
• Small Red chiles (dried): 24
• Chile pepper (ground ancho): 1 teaspoon
• Vanilla extract: ½ teaspoon

Procedure:
Preheat your oven to almost 350 °F. Line your 24 cupcake tins with 24 paper
liners.
Take one bowl and add cake mix in your mixing bowl, whisk cayenne pepper
(1/4 teaspoon) and ancho chile (ground, 1 ½ teaspoon) in this bowl. Add eggs,
oil and water in this mixture and Use one electric mixer to beat this blend for
almost two minutes on medium speed. Pour this batter into the prepared cups
and fill all cups 2/3 full.
Bake them in one preheated oven for almost 18 – 22 minutes, remove from
oven and let them cool on your cooling rack before frosting.

Frosting:
Take one bowl and sift one teaspoon ancho chile (ground), cayenne pepper
(1/8 teaspoon) and cinnamon with confectioners’ sugar. Whisk in butter and
cream cheese with one electric mixer on average speed to mix frosting. Stir in
vanilla extract and spread frosting on your cooled cupcakes in swirls. Poke
one dried chile on each cupcake on frosting to garnish cakes.
Recipe 12: Bat Cupcakes
You can make these cupcakes for your Halloween party because your children
will really like them.
Servings: 24
Total Time: 30 minutes
Ingredients:
• Cake Mix (chocolate): 18.25 ounces
• Chocolate candy (kiss candy): 6 ounce
• Gel icing (red): 1 tablespoon
• Chocolate frosting (prepared): 16 ounces
• Fudge stripe (cookies): 11.5 ounces

Procedure:
Make cupcakes as per the directions given on the package of cake mix, let them
cool and frost cupcakes with your chocolate frosting.
Break all cookies in half, press two halves on the top of every cake to make
wings and stripes should face the frosting. Put one chocolate kiss in the front of
cookies, but keep the point forward to make the body. You will make two
beady eyes with the gel icing toward the kiss point. Cupcakes are ready.
Recipe 13: Gingerbread Chocolate Cupcake
You can make these delicious cupcakes with spicy ginger taste. You can use
soft frosting to enhance its creamy taste.

Ingredients:
• Softened butter (unsalted): 5 tablespoons
• Ground allspice: ½ teaspoon
• Ground nutmeg: ½ teaspoon
• White sugar: ½ cup
• Salt: ¼ teaspoon
• Unsulfured molasses: ½ cup
• Baking soda: 1 teaspoon
• Egg: 1
• Hot milk: ½ cup
• Egg yolk: 1
• Softened butter (unsalted): 2 tablespoons
• All-purpose flour: 1 ¼ cups
• Cocoa powder (processed): 1 tablespoon
• Cream cheese (softened): 2 ounces
• Confectioners’ sugar (sifted): 2/3 cup
• Ground ginger: 1 ¼ teaspoons
• Lemon extract: ¼ teaspoon
• Ground cinnamon: 1 teaspoon

Procedure:
Preheat your oven to almost 350 °F. Line your 12 cupcake tins with 12 paper
liners.
Take one bowl and cream butter (5 tablespoons) with white sugar and add egg,
egg yolk and molasses in this bowl. Keep it aside.
Take one bowl and sift salt, nutmeg, allspice, cinnamon, ginger, cocoa powder,
and flour in this bowl. Add butter mixture to dry ingredients and stir well to
combine all ingredients. Dissolve your baking soda in hot milk and add this
mixture to the flour mixture. Mix in the batter and pour this batter equally into
your greased tins.
Bake them in one preheated oven for almost 18 – 22 minutes, remove from
oven and let them cool on your cooling rack before frosting.

Frosting:
Cream butter (2 tablespoons) and cream cheese in one bowl and whisk in your
confectioners’ sugar to make a fluffy mixture. Stir lemon extract and whisk
well. Frost your cool down cupcakes with this frosting and serve.
Recipe 14: Chocolate Brownie Cupcakes
All chocolate lovers will surely enjoy these cupcakes on a holiday or tea party.
These are easy to make.
Servings: 18
Total Time: 50 minutes
Ingredients:
• Butter: 1 cup
• White sugar: 1 ½ cups
• All-purpose flour: 1 cup
• Chocolate chips: 1 cup
• Vanilla extract: 1 teaspoon
• Eggs: 4

Procedure:
Preheat your oven to almost 325 °F. Line your 18 cups for cupcakes with 18
paper liners.
Take one saucepan and melt chocolate chips and butter together in this
saucepan on low heat. Stir well to make a smooth mixture and let it cool. Keep
it aside.
Whisk sugar and eggs together in one bowl to combine them in a bowl. Stir in
egg mixture, vanilla extract and flour. Whisk well to make a smooth batter and
fold in chocolate mixture. Pour this batter into greased cups and fill them
almost ½ full.
Bake in your preheated oven for almost 30 minutes. Check with a toothpick and
let it cool on your cooling rack.
Recipe 15: Cupcakes with Salad Dressing
These cupcakes are similar to mayonnaise cakes and these are great for salad
lovers.

Ingredients:
• White sugar: 1 cup
• All-purpose flour: 1 ½ cups
• Warm water: 1 cup
• Baking soda: 1 ½ teaspoons
• Vanilla extract: 1 teaspoon
• Cocoa powder (unsweetened): 1/3 cup
• Salad dressing (creamy): ¾ cup

Procedure:
Preheat your oven to almost 350 °F. Grease 12 muffin tins or cups or use 12
paper liners. Sift cocoa, baking soda and all-purpose flour and keep it aside.
Whip white sugar, salad dressing, vanilla and water together to mix them
thoroughly. Slowly add flour mixture and whisk at medium speed with one
electric mixer for almost two minutes. Divide this batter into greased muffin
pans and bake in your oven for approximately 15 – 25 minutes. Let them cool
on a wire rack and frost with chocolate frosting.

1.5 hours and check with a toothpick.

Bake in your preheated oven for almost 30 – 35 minutes. Leave it for
approximately 10 minutes in the pan and transfer to your serving dish. Let it
completely cool and serve.
Recipe 19: Chocolate Orange Cake

free from dairy and eggs.

Ingredients:
• Orange (peeled): 1 large
