Capstone Proposal

Serena Madray
Teacher: Mr. Green
The capstone project strand I have chosen is Project.
The title for my project is: Everything but nuts

My Inquiry question is: How can I find a way to mimic recipes containing nuts into recipes that
are nut-free with the same outcome?

Rationale: I've had a severe allergy to all nuts ever since I was little. It is something that I will
never be able to overcome. (I am anaphylactic) I feel like it's something that has a very big
impact on my life, which is why I wanted to base my project around it.

Background: Since this allergy is something that I’ve dealt with for many, many years, I have a
lot of knowledge and experiences with it. My older sister also has the same allergy as me. This
is why my mom will be an important mentor for my project. She had to fully learn about it in
order to keep us safe. I understand how challenging it is to find baking goods that I am able to
eat. I also understand how serious cross contamination is.

Career Connections: I've always dreamt of running my own business when I am older. Ideally I
would like to run a business that helps other people. I would really enjoy having my own bakery
that sells completely nut free goods. Bakeries that can guarantee no nuts in their products are
really rare to find around here. Making this recipe book is a step towards my own bakery. I can
use these recipes and protect them for my business!

Core competencies connections: In my endeavor, personal responsibility and awareness will

be crucial. This is due to the fact that baking takes a lot of time and practice. I'm going to
attempt my recipes and fail at first, then try to make changes to make them better. I'll have to
realise that learning takes time and perseverance. Due to the fact that I am undertaking this
endeavour for the benefit of others, social responsibility also plays a role in it. I'm attempting to
make something that will benefit those who share my sensitivities. This initiative also values
diversity because it takes into account people's health concerns rather than just providing a
general recipe book. One of the key skills on which I will need to concentrate is critical thinking.
This involves performing tasks like analyzing, criticizing, querying, researching, developing, and
creating. These are all stages I must pay close attention to as I write my book because I am
participating in the project strand. To make it unique and different from other books, I also need
to consider creatively. I need to come up with a unique strategy for effectively attracting the
audience I desire. For my protection, communication with my mentors and I is crucial. I have to
be careful not to include anything that might have residues of nuts in it. My allergy had to
become a personal issue for me, so this endeavour is close to my heart. To ensure my safety, I
had to understand how severe the situation was. To make sure that no one is in danger, I must
maintain the same attitude throughout this endeavour.

Presentation medium: Physical portfolio and Electronic portfolio

Description of my capstone project:
I have selected the project strand for my capstone project. My major goal is to publish an
entirely nut-free cookbook, baking book, or even just a recipe book. I have a severe allergy to all
nuts, including peanuts and tree nuts. The same allergy that I have also affects my older sister. I
will never be able to get over this allergy. I am aware that some people have it far worse than
me, yet my allergy still makes me miserable.I have to continuously ensure that others around
me are confident in using an epipen, and sometimes at restaurants I can't eat anything because
their fryer is contaminated. My mother also needs to carefully examine every ingredient on the
grocery list.I am aware of how frustrating it can be to be in a restaurant yet unable to order
desert. I am aware of how frustrating it is to be the lone person unable to purchase anything
from a bakery. All of these factors contribute to my desire to write a cookbook that is nut-free
friendly. I'm interested in learning how to convert nut-containing recipes into nut-free dishes that
produce the same results. I had always pictured myself having my own company and being my
own boss since I was a young child. I believe that starting a nut-friendly bakery would be
something I would truly like. I truly wish that there was a good bakery nearby where I could buy
items. I've found bakeries in the past that I could order from, but they always closed. Since I
have always had this allergy, I am aware of how crucial it is to take the necessary precautions to
eliminate any potential sources of cross-contamination. This, in my opinion, is a pretty crucial
ability that will help my future business greatly. When my family and I go to a restaurant, if the
waitress has any kind of experience with allergies, my parents feel at ease knowing that I can
dine there because a relationship of trust has been established. I wish I could provide the same
for other people. I will have to accept that failing involves time and learning as I create my book.
Recipes can easily go wrong and fail, therefore I'll have to realise that they're merely teaching
tools before trying again. The most significant adviser for my capstone project will be my mother.
She has always been the one to bake or make for me something that I can eat. She will impart
baking knowledge to me as well as some useful workarounds. A portfolio that is both physical
and digital will serve as my project's medium. Although some of the recipes we frequently use in
my home have actual versions, we still look up a lot of recipes on our phones. I believe both
options will be beneficial for others because of this. The overarching goal of my project is to
publish a cookbook with five-star dishes that are free of all traces of nuts. The brand of the
ingredients will also be included in the recipe book because, even if the recipe might not call for
nuts, the ingredients might nonetheless do so. The recipes will be extremely accurate because
of the brand of the products. I'll need to depend on J Store for research help in addition to my
mother's help. I'll use recipes I already have as well.

Resources/ Technology: I have access to a lot of recipes at home already. JStor will also be
an essential resource for my project. I am planning on researching a lot of recipe ideas first, and
then trying them. If any don’t work as they should, then I can research on websites like JStor to
see how I could improve them.

Mentors: My mother will serve as my primary guide. This is due to the fact that she has had this
sensitivity for more than 20 years thanks to my sister. My mother was always in charge of
making sure that the food that my sister and I consumed was secure. Another useful quality is
that she is very knowledgeable about baking because it used to be one of her passions.

Limitations: Since I have a functional burner and oven at home as well as a large supply of
ingredients for baking, I don't anticipate encountering too many restrictions. Having all the
materials required for each recipe will be the only difficult part.

Other: My recipe book is going to contain pictures that I take of my own final products. I am also
hoping to have a hard copy of my book at the end of the semester.
