What do you do?


My research group employs a variety of methods to understand human fuel use,
including indirect calorimetry, tissue biopsies and stable isotope (IV) infusion and
ingestion. We use these methods across laboratory-based and free-living studies to
answer basic science and practically-relevant questions.

Project idea?
I have some ideas on both novel uses for specific ingredients to improve health and
also specific dietary approaches to improve health based on stratified nutrition. Both
of these centre on the role of specific types of carbohydrates.

What can you offer a collaborator?


We have the capability and track record of running human physiological studies to
characterise the effects and metabolic mechanisms by which nutritional interventions
influence health.

What do you do?


Research across the food supply chain, including raw materials production, food
processing, quality and nutrition, consumption, as well as food waste and by-product
valorisation. Core facilities include food processing pilot plant, nutrition unit, gut
model systems, fermentation systems, flavour centre, sensory centre, and chemical
analysis facility.

Project idea?
Particularly interested in modifying / improving ingredient functionality through
processing and biotechnological methods, and de developing methods for the
encapsulation of bioactive ingredients.

Research expertise, dynamic and collaborative research environment, and state of
the art facilities spanning the food science, processing, quality and nutrition and
bioactivity.

(i) develop in depth understanding of structure / function in the case of proteins and

The Institute of Aquaculture is part of the Faculty of Natural Sciences at the
University of Stirling (IoA, UoS) (www.aqua.stir.ac.uk ) is a world-leading research
establishment in aquaculture, with exceptional expertise in aquaculture research and
wider aquatic fields such as sustainability and resilience of aquatic environments.
The IoA has a successful record of implementing fundamental biological and applied
projects, collaborating extensively with the private sector. The IoA has dedicated
molecular laboratories with all the equipment for transcriptomic analyses,
genotyping, sequencing, and bioinformatics expertise on site and a state-of-the-art
HPLC, GC, GC-MS and LCMS facilities for detailed nutritional analyses.

University - Life Sciences Department - Microbiology Research Group with an
expertise in food spoilage, food preservation, food fermentation. Also within our
School (School of Applied Sciences) we have research groups in social sciences
and psychology to support cross-disciplinary work.

Project idea?
I am keen to see if there is an interest in fermented foods and beverages as part of
this funding call given the increasing evidence to support the importance of
fermented foods in the diet, the low consumption of fermented foods in the UK diet
aside from dairy-based products, the need to reduce food spoilage including of raw
materials, and the need to diversify agriculture and food production with a reduction
on intensive meat/dairy production.

What can you offer a collaborator?


I am an Associate Professor in Microbiology, with a research interest and expertise
in food microbiology, food spoilage, fermentation, lactic acid bacteria . Over the
years I have collaborated with a number of industries (mainly SMEs), producers of
fermented foods and beverages (including vegetable, dairy and currently kombucha),
characterising microflora, selecting starter cultures etc. I have colleagues here also
with expertise in meta-taxonomic sequencing of microbial populations, and
development of alternative preservation methods for reducing food
spoilage/food-borne disease.

Project idea?
We have proved the nutritional and functional properties of chloroplasts released
from underutilised green biomass. Chloroplasts could be used whole and intact as a
food ingredient or as a supplement. The research idea would be to increase the food
application scope of chloroplasts by fractionating them into their lipid and protein-rich
fractions.

What do you do?


I am a Lecturer in Sustainable Agri-Food Systems at Bournemouth University. I have
over 7 years’ experience in human factors research and its application to
sustainability and Net Zero challenges within the agri-food sector. My research
focusses on human geography, with a particular interest in integrating social
sustainability focussed interventions within the Net Zero and Food Justice realm,
using mostly user-centred and citizen science methods. I am an Early Career
Researcher and have been awarded the prestigious British Academy Grant

I am interested in exploring how food aid programmes (e.g., food pantries,
community hubs/kitchens/fridges) can be made more sustainable such that they are
able to provide communities with diverse groups of low-carbon food (e.g., functional
foods, fortified food and cheaper storage technologies). Prior research has
highlighted that food aid programmes are more sustainable when community access
to these programmes is not means-tested (i.e., your income does not define whether
or not you get access to food from these centres).

InvestinGreen.Energy (IVG) is a young renewable energy project developer and
independent power producer. We are a multidisciplinary team of experts with over
200 years of combined experience working to build renewable energy infrastructure
and access to energy in Africa, Asia and South America focusing on either rural

projects revolve around a concept created by IVG that involves Energy Access -->

What do you do?


I lead on crop performance with ADAS and I am an honorary professor of temperate
crop physiology with the University of Nottingham. I promote 'action research' with
the cropping industry, to enhance its productivity and sustainability. We run the YEN
('Yield Enhancement Network') which uses crop analysis at harvest to guide nutrient
management on farms.

Project idea?
I would like to establish a 'proof of concept' food chain that uses block-chain or other
traceability technology to inform consumers about the origin and nutrient density of
the food that they are buying, and thereby motivates farms to innovate to support
consumers' dietary aspirations.

What can you offer a collaborator?


Links to farms with analysis and reporting systems designed to support management
of crop nutrition and productivity on farms.

The main challenge is likely to be in product labelling and easy consumer

identifying, and then developing, next-generation nutrition interventions through
discovery science that will inform a clearer understanding of the basic mechanisms
linking diet and disease.

of hepcidin as the master regulator of iron – radically transforms nutritionists’
understanding of the etiology of anaemia, and hence how to combat it. Our

time she conceives a baby moves the focus from pregnancy to pre-conception.
These are examples of how we seek to trace a path towards better nutritional health
in low-income populations.

The Unit’s investigator-led research is underpinned by the combination of excellent

are highly supportive of our research, excellent clinical services, rigorous ethical
procedures and ability to deliver GCP-compliant clinical trials. Our large research
portfolio spans basic research to the evaluation of interventions for the control of
diseases of public health importance in sub-Saharan Africa and globally.

Project idea?
I work as a scientific officer in the Diagnosis and Management of Febrile Illness
using RNA Personalised Molecular Signature Diagnosis (DIAMONDS study).
Arriving at any diagnosis is a complex process that involves numerous tasks, from
taking an appropriate history of symptoms to conducting laboratory tests. For

patients with suspected infection or inflammation, a definitive diagnosis is not always
reached. The EU-funded DIAMONDS project will develop a new diagnostic
classification of infectious and inflammatory diseases. This new approach, which the
project calls 'personalised molecular signature diagnosis' (PMSD), will be based on
the discriminatory ability of a minimal set of genes able to distinguish all common
conditions simultaneously. Specifically, the project will develop a device to detect
genes required for PMSD. It will do so in partnership with 22 hospitals in 11 EU
countries and biotechnology groups in academia, SMEs and industry.

What do you do?


The Climate Innovation Hub Scotland North has been working on plant-based food
and zero-waste endeavours, creating many award-winning food and zero-waste
products. We supported many projects from the initial "seed" development,
stakeholders partnership and resources funding, through providing project strategy
support across the team and leading sustainability integrative design and marketing
delivery.

Project idea?
~​In the last couple of years, I developed a bespoke approach to climate and
nutrition. Through my practical nutrition classes, people have fun and they can
understand 'by doing' and commence to regenerate themselves, together with the
planet. The understanding of micronutrition for me should be an educational corner
stone for every person on a planet affected everywhere by soil depletion. It can be
considered as a discipline in its own right. The study of the impact of micronutrients
(vitamins, minerals, trace elements, fatty acids, amino acids, fibres) on human health
- and soil - represents a very useful and effective tool to better support the various
functions of restoration of the body and of soil, but it is also essential to a true
circular economy narrative.

What can you offer a collaborator?


I have started off working in the field of agri-food, climate change and the circular
economy from the end of the nineties, beginning with my organic family farm in Italia.

At the end of the 90s, I converted the conventional farm my family owns on the
Italian Appenines to organic farming, diversifying the rural offering with food
preservation and agri-turism, with the support of the EU project fund awards. Since
then, I continued working with the agri-food sector in organic and regenerative
endeavors, in my professional capacity in Italy and around the globe. I haven’t come
through a conventional path and that allows me to think differently and innovate new
ways of applying my research and learning. I started on the ground, studying and
working in environmental restoration and mountain farming co-running, where we
transitioned to a low impact system that actively restored important habitats. Being a
consultant in regenerative food systems in Europe and UK, my expertise has
evolved through the understanding what regenerative practice means. There is no
clear definition to what regenerative practice is, and there is a vast array of people
and products all claiming they have the answers. It’s good to have a range of
options. Ultimately, like the ecosystems we represent, we can all find our niche and
the regenerative ‘web’ will be more complex and resilient as a result.

Finding alternative ways of engagement to provide purpose to instigate the thinking
into a local communal food sustainability Bioregional systems.
