    Senior Project Log

    November 12th, 2022

    ● Watched Jon Klejeski, my mentor, kill 3 steers inside the trailer and drug

    them inside the shop with a pulley.

    ● We cut steers down the middle of their belly to skin them.

    ● Once all the skin and head was gone we took out the organs inside the steer

    out

    ● We cut the steers down the middle and put them into the freezer to let sit for

    2 weeks.

    Total hours: 8 hours

    ● I processed and packaged up slabs of steak as well as stamped the packaging

    to know what cut it was.

    ● I ground up leftover meat to be ground beef and put it into 2 lb packages.

    ● We tagged up binds of meat for certain people
