Double Chocolate Bounty (Coconut Brownie)

70% Dark Chocolat Coconut Sponge:


70% Dark Chocolate 300g 150g
Butter 160g 80g
Coconut puree 110g 55g
Eggs 8nos 4nos
Muscavado sugar 356g 178g
Cocoa powder 20g 10g
Desigated coconut 50g 25g
Vanilla pod 4nos 2nos
Chopped Dark 65% Chocolate 100g 50g
Sosa Peta Crispy Xocolata 50g 25g

Method:
Place the designated coconut, cocoa powder & sugar in a mixing bowl and mix to combine. Add the eggs on a low speed.
Add melted Guanaja 70%, melted butter and vanilla extract. Mix to combine on a low speed. do not beat this mix, to be
combined only. Transfer to a lined backing tray and bake at 160 degrees / Fan2 for 10 mins until it sets. Cool in a dry place
After Glaze and sprinkle Peta Crispy Xocolata .
