West Sussex UK There are hundreds of different breeds of cattle in the world, but in the words of Heston Blumenthal The Longhorn had it all for me the nutty, grassy, blue-cheese note Id hoped to find, plus a marvelous moisture and juiciness alongside a firm but giving texture. The oldest breed of cattle in England had come up with the goods. So our aim was to find a local farmer in Sussex who not only bred Longhorn cattle, but whose cattle were ethically and organically looked after. Garlic Wood Farm in West Sussex, does exactly that. A family run farm, they pride themselves on the finest quality ethically reared, environmentally sustainable meat from traditional and rare-breed livestock. All steak on our menu have been dry aged and hung for at least 35 days. Dry-ageing beef is what gives it a wonderful chewy, buttery, nutty taste. This is because the beefs natural enzymes help break down largely flavourless proteins, fats and sugars into smaller products which are full of flavour. Also during this process the meat becomes more tender and succulent.

Cooking on fire is as old as the hills. Looking at different cultures around the world today we can see that it is still very well practiced. Be it, burning charcoal in India to fuel the tandoor ovens or in Japan for the robata grills. Once wed located our fantastic produce at Garlic Wood Farm we wanted to serve it in the best way we know how. So we have invested in a specialized indoor barbecue grill called a Josper (imported from Spain), which is fuelled by charcoal alone. The meat and fish are grilled directly over burning charcoal and the oven can generate heats of up to 500 degrees Celsius. The intensity of the heat and the taste from the burning charcoal is the perfect way to cook our carefully sourced produce, to keep the meat and fish succulent and full of flavour.

Here at The Coal Shed we take wine very seriously and like our food we want to serve it to you in the best way possible. In general red wines are served far too warm these days particularly in restaurants where the room temperature can get fairly high. The room temperature rule for red wines was derived hundreds of years ago long before wall insulation and central heating were even invented! We believe red wines really benefit when served just below room temperature as it improves the silkiness of the fruit and also keeps the alcohol in check. With this in mind we have invested in a red wine fridge that will moderate the temperature of our wines to around 20C or just below depending on the weight of the wine. Unfortunately we will only be able to do this for red wines brought by the bottle so if youre thirsty, happy days!!

The Origin Of STeak


The word steak is derived from the Old Norse term steikjo; to roast on a spit which has been around for as long as the fire used to cook it. All domestic cattle are descended from a single ancestor, the aurochs. These were large long horn beasts, which can be seen depicted in many cave paintings. By 55BC Romans had recorded the existence of red cattle in south-western England, which are almost certainly the Red Devon cattle, which can still be found there today. This only goes to show the longevity of eating beef.

Our wine supplier recently visited Chiarli which is based in modena Italy and he was blown away by what he saw; and tasted! Chiarli has been making sparkling wines for over 150 years and they even make the finest Lambrusco in the whole of Italy! These wines show that its not only Balsamic Vinegar that this region is truly great for.

Being lovers of prosecco we still wanted to represent the wine but we wanted to show what potential this grape really has. So we picked the Guistino Bisol from Ruggeri which was awarded the coveted Tre Bicchieri (three glasses) award which is Italys finest accolade.

available by the bottle We first tried Henriot in march (2011) of this year and we were simply blown away by the quality of the range. We made a decision right there and then to only stock their range once we acquired our first restaurant. Henriot are one of the oldest family-owned houses in Champagne, enjoying seven generations of uninterrupted ownership since the late 1700s. The unmistakable Henriot style is the delicate complexity of their Chardonnay which is based primarily from Grand Cru Vineyard sites in the Ctes des Blancs. In other words their wines taste like top white burgundy with bubbles! The Enchanteleurs in particular represents the quintessence of the Henriot style and is an excellent choice for that very special occasion.
