Food-processing machines - hygiene requirements

CIP: Cleaning In Process

Hygiene requirements
Stirring unit with two cleaning
spray nozzles

Therefore, resistance to water and

media is important

Note: Very aggressive cleaning agents are often used because the machines
are not dismantled for cleaning, making cleaning more difficult

European Machinery Directive 2006/42/EC

The Directive 2006/42/EC also stipulates requirements (section

2.1.) for machines, which process food, cosmetics and
pharmaceutical products.

H1 lubricants are to be used for lubrication points where contact with the
food product cannot be excluded.
No hygiene risks due to chemical substances!
It is mandatory to have a maintenance plan including actions aimed at
maintaining the hygienic condition of machines.

Kosher
What is Kosher ????
 Kosher is a term used to desginate food seen as permissable by
Jewish Dietary laws.

 The raw materials used for producing Kosher products should not
contain alcohol produced from grapes and animal fatty acids.

 Kosher certification is issued by „Rabbi“, a specific person with high

religious position –
not done by leading institutions like NSF/ INS.

 While applying for Kosher certification we need to ensure the

products are in accordance with Jewish law. The certificate is valid
for 1 year and the same needs to be renewed annually.
19.08.2017 / Page 13 BPA Silver March, 17

Halal
What is Halal ??
 Halal is a term used to desginate food seen as permissble according to
Islamic Law.

 The raw materials used for producing Halal products should not contain
alcoholic and any other intoxicants and pork based ingredients.

 Halal certification is not done by leading institutions like NSF/ INS. There
are different institutions in different parts of the world where the Halal
certification can be obtained.

For eg: KLM products are certified by Halal Food Council of Europe
(HFCE )
KL Summit & KLUSA products are certified by The Islamic Food and
Nutirition council of America ( IFANCA)

 While applying for Halal certification only the list of raw materials needs
to be sent and not the formulation. The certificate is valid for 1 year and
the same needs to be renewed annually.

NSF – National Sanitation Foundation

The NSF has decades of experience in health protection in context with

drinking water plants and foodstuffs components.

• Founded in 1944
• Economically independent
• 300 employees
• Close cooperation with FDA, USDA, WHO
• More than 8000 customers from 80 countries, over 100,000
certifications already issued

Definition H1: Lubricants for technically unavoidable

product contact
Are special application conditions to be fulfilled in the manufacturing plant?

Only a minimum quantity of lubricant must be used to achieve the

technical effect.

The following threshold values apply in the United

States:
10 ppm mineral oil
10 ppm polyglycol
1 ppm silicone oil

Direct contact with foodstuffs is not permitted.

19.08.2017 / Slide 17 BPA Silver March, 17

Definition ppm

parts per million (ppm) is equal to 10−6 and is used in

science for the millionth part, as per cent (%) is the hundredth
part.
1 ppm = 10−6 = parts per million = 0.0001 %

Negative list for NSF H2 lubricants

A common misconception is that NSF H2 lubricants are nothing more than

any other lubricant without NSF H1 certification. Unlike H2 products,
lubricants without certification may contain undesired compounds.

Klüber NSF H2 lubricants are free of the following compounds, so that no

dangerous substances can enter the food-processing area.

antimony, arsenic, lead, mercury, etc.

dangerous substances
carcinogenic, mutagenic, teratogenic
substances
potentially dangerous chromic acid, fluoric acid, etc.
substances salts of these acids, nut oils

odour-bearing substances perfume oils, dichlorobenzene, needle

oil, etc.

ISO 21469
What is ISO 21469 ??
 Certification available since 2009. Klüber was one of the developpers involved along with NSF to
formulate the policy draft for ISO 21469.

 ISO 21469 is an international standard for hygienic production of H1 and HT1 products.

 Additional activities in ISO 21469 when compared to normal H1 registration.

I. Audit of the production site – A Risk Analysis is done which is comparable to HACCP
followed in Food Industry. After the initial certification of the production plant, annual audits are
done to obtain the certification. During the annual audits steps for further improvement in
hygenic standards are recommended and need to be implemented.

II. Product certification – Initial samples for each product from different batches are sent. NSF
will check if the IR spectrum from different batches are equal to see the consistency in
production and hygenic standard.

III. ISO 21469 certification clearly states that this certification is applicable not only for food
industry but also for Cosmetics, Medicine and Animal feed.
19.08.2017 / Page 22 BPA Silver March, 17

Additional points to be considered in an ISO 21469 plant

 Specific Packaging

 Seperate storage of ISO 21469 raw materials and products to avoid contamination with any other
raw materials

 specific cleaning

Auditor:
- checks hygenic standard of the plant and measures to avoid contamination
- checks raw-material documents (confirmations, specification)
- checks records of released products
- checks quality of control features

Certified acc. to NSF ISO 21469

Based on ISO 21469, the NSF (National Sanitation

Foundation) – as an internationally recognised institute
with a comprehensive certification programme for
the drinking water and food-processing industries has developed a
certification procedure.

Certification according to the NSF ISO 21469 certification programme

currently is the most demanding
and comprehensive certification of H1 lubricants.

Important points which have to be taken into

consideration in a food-processing plant

1. Using special lubricants for the food-processing industry is necessary to

ensure that the lubricant does not affect the foodstuff's odour or taste nor
causes any health detriment.

2. Training of production and maintenance staff

3. Storage and handling of lubricants

4. Management systems for food safety, lubricant management programs,

HACCP lubrication plans, management of possible contamination risks due
to residues in the product without health detriment
