I’ve got a good idea for a future video: homemade beef jerky! I’ve recently learned
you can make it yourself at home in the oven for a 1/4 the price of store bought.
And you can fit it to your taste or diet. I would love to see Guga’s take on jerky

Makes sense that the 1 month version is hard, koji rice is used in the process of
making katsuoboshi (if i used wrong romanji spelling sorry) which is a fish filet
that has dried and shrunk to an almost woodlike consistency and generally is shaved
using something similar to a carpentry planer

The word for rice in Chinese language is 米 "mi" as in the smartphone Xiaomi 小米
(small rice or foxtail millet).

A piece of steak aged using rice shall be called a mi-stake. It's a mistake!

This one was interesting. Less enzymatic activity than I would expect. That said, I
would really like to see a mustard dry age experiment. I think it would turn out

I would've liked to see you do a batch in the dry age bag just to see if there was
a difference between just putting it in the fridge on a rack with koji rice or
using an Umai bag with the koji rice.

I wonder if dry aging a 3-4 bone rib roast for a week (or a month) with Koji rice
vs your traditional method would be a more fair comparison. This way you remove the
pelicose on both before deciding which method you think works best.

So I did the 2 day Koji vs 45d dry age. My wife and me both agreed. The Koji was
just better.

Quickly scrape off most of the Koji, cover in a lot of salt, 1h/inch in the fridge,
wash it all off. That's the easiest way.

My family loves my steaks off the grill as much as the ones from high end steak
houses. I have Guga Foods to thank for the huge improvement in my steaks over the
last year. This channel kicks ass.

Although Guga repeats the same remarks in many videos (marbling, simple seasoning
being salt, pepper and garlic powder, the way he likes dry brine), in this case
it's good because it's consistent and reaffirming. Thank you and much appreciation!
I was able to do my first medium rare steak on a pan thanks to your tutorial.

You gotta do the 35 day dry age vs. The Koji dry age but using the 4 rib roast
like the other dry age comparison videos. The single steak was too small for this
experiment.

Try the combination of the koji-rice with a dry-age bag! And to it to the big chunk
of meat and then cut of the drier outer part, just as you would with regular dry-
aging!

Guga, I wonder if you try doing the same 1 week or 1 month process to a thicker cut
of ribeye (6lbs or more?) and then trimming the bark off before cooking it, would
it have a different result? Because it seemed, atleast aesthetically, the 1 week
steak looked more of an actual proper dry age but the rice on the edge might’ve
overpowered the flavor...

Did you do a dry age experiment with soy sauce yet? That apparently also uses koji
in it, so it might be a way to get the same flavor without it completely overtaking

best way to use it is to turn it into powder, then proceed to wash the meat after
dry aging for your target number of days.

Although just apply the powder just enough to coat it so that it'll be easier to
wash before patting it down and cooking the meat.

I'm looking at the 1 month steak like:

1. there is still rice on it


2. you didn't cut the black parts off like normal
3. similar issue with the 1 week steak.

Just feel the 30 day one at least should have been trimmed.

I definitely would have trimmed the 1-month one.
Sometimes aging requires removing a sacrificial layer.
Starting with a larger piece of meat, then trimming and slicing after the aging
would give more usable product.

I've heard pre refrigeration that the pieces would hang large cuts to age in a
relatively dry room, and they'd "cut off the green layer" to get to the good meat
when ready to use.
Either to age for flavor, or store for a cold season... stuff can get weird

I wonder what Guga or Guga and Angel would do if they had Biltong. Its pretty much
dry age meat and tastes better than Beef Jerky because if has no preservatives or
any thing add only natural herbs, salt and spices. Biltong can be dry aged up to a
month or more dependent on your method or if you have a drying box a lot sooner.

I don't think koji is very active at refrigerator temperature. If you keep
experimenting with it I'd love to see what you get when you allow the koji to grow
on the steak after inoculation. it would be at a much more 'dangerous' temperature
and time, but if the koji takes, it should out-compete any pathogens. And if you
let it grow it will create more enzymes to break down the proteins. For instance
times could be 4 8 24 36hrs 48hrs at 86-89F and super high humidity 80-90%. This
would be a more controlled version of that brisket you sacrificed to bacteria a
couple years back.

sauce with some rub seasoning mixed in, then he grills it with bbq sauce brushed on

Guga, I advice you to try seasoning your steak with salt, black pepper and
coriander seed. Its is amazing with the grilled steak. Make sure to toast the
coriander seed a little bit util colour change and grind it like you do for the
pepper. You will thank me. 😉 this how we like it in Middle East.

It has been proven to this point NOT to go a week or month doing these experiments.

Guga: Do not dry age/dry brine/defrost etc more than a week everybody

Also Guga: Ok for today's cook we will be dry aging 1 day, 3 days, 1 week, 1 month

I didn't see Guga remove the pemmicles formed from the dry aging, isn't that normal
to do even when you use a fungus to do it? Maybe that's why it tasted so bad, since
removing the outside layer probably would completely remove the mould and rice too.

You aren’t meant to dry age in your normal home fridge because the door gets opened
too much and the temperature is too inconsistent and it ruins it,

Guga, I do not believe you are using the Koji correctly. From what I remember you
are supposed to take equal parts koji and regular white rice, take the white rice
and blend it in a food processor until it is powderized. Then mix the koji with the
rice powder and enough water to turn it into a slurry, then let rest at room
temperature for a day or two until you see that it is active. Adding the rice
powder feeds the Koji and gives it food to produce the enzymes that transform the
meat, without the added food the fungus doesn't do very much. Then take the slurry
and coat the meat with it, then let rest in a more humid and slightly warmer
environment you would use for dry aging. You wouldn't want to do long dry aging
with it, like 3 days max.

When you dry age something and it builds that dark moldy crust you gotta trim all
of that off to get the good inner meat, cooking the steaks with the dry aged crust
just brings those nasty fermented meat flavors to the steak.

Guga, at 4:42, you're still slicing rib eye with the grain. Could you please slice
on a bias so your final slice is across the grain? You yourself told us that one of
the reasons picanha is a great cut is that the way it is cut leaves the last slice

meat? I think any meat thats dry aged for a long time would taste bad when you dont
cut the dry parts off. So the one in the video thats dry aged for a month might

Koji mold isn't harmful to humans, even when you breathe it in. Japanese
authorities have invested heavily on studies over Koji mold. In fact, people use
masks when working with it not to protect themselves, but to protect the mold. If
not innoculated right, it can die out quick.

I am a bit disappointed: a) we have had this already before- but really you don’t
use koji rice but directly the koji spores (powder). b) the cool kids on the block
are really culturing the mold in the steak at the right (high) humidity and
temperature (also pretty high). For a couple of days. Sounds crazy- but it
apparently works because the spores will fight of all food spoilage and illness
microbes.
Guga (again) wasted a perfectly edible steak for the clickbait only - and there is
no learning curve at all. Sad.

umm guga... why didnt you use the same method as with other dry aging experiments?
of course it was dry, if it stayed for a week in a fridge even without the rice it
would be dry. for a true result you needed to have a big piece of meat covered in
it so you can remove the "pelicose" and have the true beauty inside. that way maybe
the 1 week one would win.

That's not special japanese fungus and you would know this if you ever looked up
how koji rice is used. The spores for the special fungus to make sake are added to
the rice after its cooked and cooled down. The rice alone does jackshit you just
have rotten rice nothing more.

This is koji rice, unlike the traditional rice we eat it has a very special fungus
called aspargirlus aurase.

Even if you've never heard of koji rice you've put it in your mouth in one form or

other things we use.

And many chefs claims this is the cheat code for dry aging steaks quickly because

48 hours. So today we will be pushing the koji limits by dry aging four steaks at
different times.

To ensure that the koji rice will stick to the steak the first thing I like to do
is to run it

to a food processor, this will break the rice in smaller grains so that it can
stick to the steak,

and as you can see it worked like a charm. Talking about steaks I chose to use
ribeye

for every single one of them, and this one is going to be dry aged with koji for a
month.

If you take a closer look you can see that this is a wonderful steak, that's
because it has that

great marbling that we are always looking for. And to make sure I keep this
experiment consistent I

got all of the steaks the same size and weight, that way we can really find out
what the koji

rice really does to the steak. To prepare it it's pretty straightforward, all we
have to

do is to ensure that the koji rice sticks to the steak. You can either press it
down

like I am or just sprinkle a little bit on top. The next most important thing is
to make sure

that we put it in a cooling rack so that the air can circulate throughout the
whole steak.

As you can see once I was done I made sure that every single edge of the steak had
a little bit

of koji rice. Now that is what i'm talking about! Now since this is the one that
is going to be dry

aging for a whole month I made sure to prepare it first. Now there's nothing else
to do but put it on

the refrigerator and let it rest. Three weeks after that was time for me to
prepare the second steak

and as you can see this one looks as good as the other one. And the process is the
same exact thing

there's no difference you just gotta make sure you cover the whole thing with the
koji rice. Now I did

the same exact thing for the three-day steak and also the one-day one, because
once they're

the refrigerator.

Once the time was up I took it out and take a look at this. From left to right; we

rice i can say that it has a very nutty smell. Unlike real dry aged these are very
