I’ve got a good idea for a future video: homemade beef jerky! I’ve recently learned
you can make it yourself at home in the oven for a 1/4 the price of store bought.
And you can fit it to your taste or diet. I would love to see Guga’s take on jerky

Makes sense that the 1 month version is hard, koji rice is used in the process of
making katsuoboshi (if i used wrong romanji spelling sorry) which is a fish filet
that has dried and shrunk to an almost woodlike consistency and generally is shaved
using something similar to a carpentry planer

The word for rice in Chinese language is 米 "mi" as in the smartphone Xiaomi 小米

I wonder if dry aging a 3-4 bone rib roast for a week (or a month) with Koji rice
vs your traditional method would be a more fair comparison. This way you remove the
pelicose on both before deciding which method you think works best.

Quickly scrape off most of the Koji, cover in a lot of salt, 1h/inch in the fridge,
wash it all off. That's the easiest way.

Guga, I wonder if you try doing the same 1 week or 1 month process to a thicker cut
of ribeye (6lbs or more?) and then trimming the bark off before cooking it, would
it have a different result? Because it seemed, atleast aesthetically, the 1 week
steak looked more of an actual proper dry age but the rice on the edge might’ve
overpowered the flavor...

Starting with a larger piece of meat, then trimming and slicing after the aging
would give more usable product.
I've heard pre refrigeration that the pieces would hang large cuts to age in a
relatively dry room, and they'd "cut off the green layer" to get to the good meat
when ready to use.
Either to age for flavor, or store for a cold season... stuff can get weird

I wonder what Guga or Guga and Angel would do if they had Biltong. Its pretty much
dry age meat and tastes better than Beef Jerky because if has no preservatives or
any thing add only natural herbs, salt and spices. Biltong can be dry aged up to a
month or more dependent on your method or if you have a drying box a lot sooner.

I don't think koji is very active at refrigerator temperature. If you keep
experimenting with it I'd love to see what you get when you allow the koji to grow
on the steak after inoculation. it would be at a much more 'dangerous' temperature
and time, but if the koji takes, it should out-compete any pathogens. And if you
let it grow it will create more enzymes to break down the proteins. For instance
times could be 4 8 24 36hrs 48hrs at 86-89F and super high humidity 80-90%. This
would be a more controlled version of that brisket you sacrificed to bacteria a
couple years back.
would be super cool to see.

Guga, I do not believe you are using the Koji correctly. From what I remember you
are supposed to take equal parts koji and regular white rice, take the white rice
and blend it in a food processor until it is powderized. Then mix the koji with the
rice powder and enough water to turn it into a slurry, then let rest at room
temperature for a day or two until you see that it is active. Adding the rice
powder feeds the Koji and gives it food to produce the enzymes that transform the
meat, without the added food the fungus doesn't do very much. Then take the slurry
and coat the meat with it, then let rest in a more humid and slightly warmer
environment you would use for dry aging. You wouldn't want to do long dry aging
with it, like 3 days max.

When you dry age something and it builds that dark moldy crust you gotta trim all
of that off to get the good inner meat, cooking the steaks with the dry aged crust
just brings those nasty fermented meat flavors to the steak.

Guga, at 4:42, you're still slicing rib eye with the grain. Could you please slice
on a bias so your final slice is across the grain? You yourself told us that one of
the reasons picanha is a great cut is that the way it is cut leaves the last slice
you make before eating it a slice across the grain. Why don't you do that with rib
eye?

meat? I think any meat thats dry aged for a long time would taste bad when you dont
cut the dry parts off. So the one in the video thats dry aged for a month might
have tasted fine when prepared better brfore cooking. Im not sure tho…

I obviously don’t know any better but considering this dry age doesn’t fully seal

Koji mold isn't harmful to humans, even when you breathe it in. Japanese
authorities have invested heavily on studies over Koji mold. In fact, people use
masks when working with it not to protect themselves, but to protect the mold. If
not innoculated right, it can die out quick.

I am a bit disappointed: a) we have had this already before- but really you don’t
use koji rice but directly the koji spores (powder). b) the cool kids on the block
are really culturing the mold in the steak at the right (high) humidity and
temperature (also pretty high). For a couple of days. Sounds crazy- but it
apparently works because the spores will fight of all food spoilage and illness
microbes.
Guga (again) wasted a perfectly edible steak for the clickbait only - and there is
no learning curve at all. Sad.

umm guga... why didnt you use the same method as with other dry aging experiments?
of course it was dry, if it stayed for a week in a fridge even without the rice it
would be dry. for a true result you needed to have a big piece of meat covered in
it so you can remove the "pelicose" and have the true beauty inside. that way maybe
the 1 week one would win.

So you're always talking about how it is important to remove the pellicle because
it ''doesn't look good, doesn't taste good and that'S the way to do it'' but this
time you kept it? why? I was looking into this experiment, now it's compromised and
irrelevant.

have rotten rice nothing more.

Welcome back to Guga Foods everybody. I want to thank today's sponsor Lords Mobile

Preparation
0:12
This is koji rice, unlike the traditional rice we eat it has a very special fungus
called aspargirlus aurase.
0:17
Even if you've never heard of koji rice you've put it in your mouth in one form or
another and that's
0:22
because this ancient fungus is responsible for miso, soy sauce, sake and many
other things we use.
0:28
And many chefs claims this is the cheat code for dry aging steaks quickly because
it only takes
0:34
48 hours. So today we will be pushing the koji limits by dry aging four steaks at
different times.
0:40
To ensure that the koji rice will stick to the steak the first thing I like to do
is to run it
0:44
to a food processor, this will break the rice in smaller grains so that it can
stick to the steak,
0:49
and as you can see it worked like a charm. Talking about steaks I chose to use
ribeye
0:53
for every single one of them, and this one is going to be dry aged with koji for a
month.
0:58
If you take a closer look you can see that this is a wonderful steak, that's
because it has that
1:03
great marbling that we are always looking for. And to make sure I keep this
experiment consistent I
1:08
got all of the steaks the same size and weight, that way we can really find out
what the koji
1:12
rice really does to the steak. To prepare it it's pretty straightforward, all we
have to
1:17
do is to ensure that the koji rice sticks to the steak. You can either press it
down
1:21
like I am or just sprinkle a little bit on top. The next most important thing is
to make sure
1:25
that we put it in a cooling rack so that the air can circulate throughout the
whole steak.
1:29
As you can see once I was done I made sure that every single edge of the steak had
a little bit
1:33
of koji rice. Now that is what i'm talking about! Now since this is the one that
is going to be dry
1:38
aging for a whole month I made sure to prepare it first. Now there's nothing else
to do but put it on
1:43
the refrigerator and let it rest. Three weeks after that was time for me to
prepare the second steak
1:48
and as you can see this one looks as good as the other one. And the process is the
same exact thing
1:53
there's no difference you just gotta make sure you cover the whole thing with the
koji rice. Now I did
1:58
the same exact thing for the three-day steak and also the one-day one, because
once they're
2:02
fully covered with the koji rice the only thing left to do is to let it rest in
the refrigerator.
2:10
Once the time was up I took it out and take a look at this. From left to right; we
got the one
2:15
day steak, the three days, the one week and the one for a whole month. The next
thing we have to do is
2:21
to go ahead and remove all of the koji rice. It is very important to be very
careful whenever
2:26
you're using koji rice you don't want to breathe in any of the fungus and mold
that comes with it,
2:31
think about it it will not be a good thing. One thing that I will tell you is
removing the koji
2:35
rice is a pain. I'm talking about a lot of work, especially this one right here
which was done
2:40
for a month. The one that was done for a week is not that big of a deal. As you
can see the
2:44
top layer easily came off, the edges on the other hand was a little bit harder.
But once
2:48
I was done removing the koji rice from every single steak this is what it looks
like. Can
2:53
you guess which one is which? And most importantly, which one would you eat?
Here's the one for a day,
2:59
then we have the one for three days, one week and a month. I mean what else there
is to say? I truly
3:05
hope that they taste a lot better than they look. At the same time after removing
all of the koji
3:09
rice i can say that it has a very nutty smell. Unlike real dry aged these are very
different
3:14
and at the same time I am excited to find out how they're gonna taste. So for that
the next thing to
3:19
do is to go ahead and season them, so I started with a little bit of salt,
followed by freshly
3:23
ground black pepper and garlic powder. As always I made sure to season it well. I
have no idea if
3:28
it's gonna be good bad or ugly but I'm gonna give it my best shot. But now that we
got them
3:33
perfectly seasoned here's the plan; the first thing I'm gonna be doing is putting a
wonderful
3:38
searing in all of them once that's done i'll be cooking them in indirect heat until
I reach an
3:42
internal temperature of 135 degrees fahrenheit. And for that I'll be using my
wireless thermometers.
3:47
So now i say it is enough talking and it is time to cook some beautiful steaks. So
let's do it!

Taste Test
6:20
All right everybody here we have our beautiful steak spread today. What do you
think about that Angel?
6:25
Are you excited?
6:27
Why? Why are you shaking your head? Look at him. Huh? All right that one that one
look a little weird.
6:32
-Bro that looks... this is not astronaut steaks? -No, no, no, no, you remember that
that? -That looks...
6:37
-Angel did not enjoy the astronaut steaks everybody. -That looks worse. You
6:39
know I... -Well let's let's start here. -You brought this one out and I was like
oh yeah let's go
6:44
-And then I brought the last one? -And then you started it started getting like oh
they oh you're
6:48
kind of overcooked now compared to the other one. -Well let's see right now. Are
you ready for this?
6:52
Let me know. Let me see, let's see if you're gonna get excited for this one.
Cheers everybody! -Cheers.
7:00
-What do you think? -This is the control. This is a Guga steak. -It is a Guga
steak. Give me five, I agree.
7:06
That is a Guga steak um not much to say it tastes incredible everybody, the flavor
7:13
is there. -What do you think? -It's a Guga steak bro salt, pepper, garlic. -Yes! -
Cooked good .
7:18
-Do you feel any difference at all whatsoever? Because there's something very
unique
7:23
but it's very mild, don't know if you can tell. I could tell because I know what
it is. But you?
7:28
-Like I can't really put my finger on it at all like I know that there's something
7:32
in there, but I don't know what. -What it is. I got you. -It's not something that I
would eat normally I guess.
7:39
-Well you see you cannot really tell with this one so much hopefully you'll be
able to tell what it
7:44
is on the second one. Did you like the first one? -It's a Guga steak almost. -It's
a.. almost? -Yeah.
7:51
-It's like a barely scratching the surface of a Guga steak that's what it is. -
That's
7:55
exactly what it is. -All right well fair enough. You put your finger right on the
money. -Second
7:58
one cheers everybody. -I got the cheers out before you. -That's good all right
cheers to you buddy.
8:05
-Oh yeah. -Come on now! Do you feel it now? -Yeah dude I'm gonna say this too.
What? -The crust is a little
8:16
bit harder too. -Yes, it's drier the crust. -Yeah. Which one you like better this
one or the first one?
8:21
-I like this one. -I agree with you. -It tastes like it's not, but it feels like
it. -What are
8:27
you talking about you're not making any... -It's like dry age, but not really. -It
feels like
8:33
dry age but not really very interesting. -Cuz of the crust. -Because of the crust.
-There's like...-Look at
8:39
him his eyes are even squeezing like he's his brain is working really hard. -Trying
to get the answer out
8:44
of him. -Hey i'll tell you one thing you are very close. It feels like a dry age
steak but it's really
8:51
not, it resembles a dry-aged steak but it's not a real dry age steak especially if
you
8:57
had it before. Do you like this one better than this one? -Yeah. -This one is the
winner so far.
9:03
-So far is this one this one. -I agree with you it has a unique flavor, it's not
dry aged,
9:10
it's not a fresh steak, it is obviously drier than this one here. It has a more
beefy flavor,
9:16
but it is not a dry aged steak. Are you ready for this one here? -Let's do it. -
All right let's go.
9:24
-Oh. -I don't like that one. -Oh you don't like that one? -No. -What do you mean
you don't like that one?
9:29
-No. -That is... -It's too intense. -It's intense and it's dry. -This one had like
the perfect amount.
9:37
-Yes. -Whatever it, it, it had the perfect amount of it. -Whatever it is. -But that
one...-It's like it's like you
9:48
went to a hotel and you stay your stay. Maybe you stay for a week that give you a
hint of anything?
9:54
-It's dry aged? -You're gonna find out in a few seconds are you ready? -It's not
dry age because one
9:59
week dried it tastes good. -Yeah it doesn't taste that bad, yes. -One week is
tasty that's disgusting.
10:08
So whatever that one week did it was terrible. -Fair enough that's what we have to
say about this steak
10:14
over here. I am excited for this one. Are you pumped Angel? Look at the color of
it. Come on
10:20
give me a break. I mean look how, look how wonderful this looks everybody and the
smell is
10:29
fantastic. Are you ready Angel? Huh? Oh you already went for that one? That one is
really good?
10:34
I thought you liked this one better. Yeah? Yeah. All right let's do this. -This
one is just farther
10:38
from that one so I went for this one. -Fair enough, fair enough. All right let's
try this one. Get yourself
10:44
choose your weapon. That sounds like mortal combat. Anybody play mortal combat out
there
10:50
let me know in the comments down below. Tell me how hard, describe to them how do
you cut it.
10:55
What are you doing bro? What are you doing? Is a chopping block that's
11:02
what it is. -You go first yeah? -All right cheers everybody. Cheers. Oh you did
it.
11:11
-What was that? That was too quick. Excuse me. -This is way better. I'm mad
11:20
that I put this in my mouth after that, because now this has a little bit of that.
-It has a little
11:29
bit of that. What is that? How do you describe that? -An abomination, rotten,
disgusting.
11:36
Words like this like. -Sometimes you gotta exaggerate to find out what something
will taste
11:42
like. This is horrific! It tastes like...-And it's like a brick, like i spit it
out it's like I didn't even
11:48
chew. It driest to the max, extremely unpleasant smell. -I think I bit it and it
split in half.
11:58
-That was a quick throw out. That was incredible. -I think I gave it like two
bites.
12:02
-That was not pleasant everybody. D not give it a try it's way too long. Are you
ready to find out
12:06
what this is? This is the koji rice experiment. You know that rice that I have that
has that fungus,
12:13
special fungus. Huh? So we got one day here, we got three days, we got one week and
we got a
12:19
month. -No wonder okay. -One month. Definitely we recommend you go in three days. -
Yeah anything
12:27
past maybe... -I think four days. -Four, five?-Yeah it starts getting a little bit
too funky this steak right here which is the one
12:34
day it is a lot more juicier, but this one has that unique flavor and very mild. -
This one will
12:40
make you think, uh is this dry age? -Yeah. -Is this dry age or what is it. -It
resembles. -It'll it'll give you
12:46
that like huh you know. -I agree. -That one is more just it feels like the way that
a dry steak feels right?
12:52
-I agree yes. -That's how I get it. -We are in agreement, that's what it is. -That
was disgusting
12:57
that one feels like a brick. -Come on Angel a little bit more bite. -Get that away
bro. -So here's the deal
13:02
first of all if you want to try a real dry age steak I recommend doing the real
deal. -Yeah.
13:06
-You have plenty of videos about I show you how to do that. If you want to give it
a try to a
13:11
fast unique dry age experiment for your family I highly recommend the koji rice for
only three days.
13:17
-I mean you gotta be careful, with koji rice. You don't wanna breathe that thing. I
already explained
13:22
that on the video. But, if you wanna just give it a try I highly recommend because
it's a unique flavor that
13:28
you can taste at the same time. -Or maybe you're just like impatient. -Yes. -Maybe
you want it and
13:33
you want it now. -Listen everything in life that is wonderful takes time right. -
But sometimes you
13:39
don't want to wait. -But sometimes you don't want to wait. -That's why you order
from uh like amazon
13:44
because you want to know right. -It's quick -You want it tomorrow. -Exactly. -Not
today, no you can't do that
13:48
that's like impossible, but tomorrow... -Yes. -You need it. -Anyway guys these are
the results. I hope
13:53
you enjoyed this video. If you do enjoy it make sure you give it a thumbs up. If
you're not a subscriber
13:57
be sure to subscribe for future videos. Remember if you are interested in anything
I use everything .
14:02
is always in the description down below. Thank you so much for watching and we'll
see you guys
14:06
on the next one. Take care everybody bye-bye. -One month. -One month bro yeah I'm
gonna go back
14:10
for this one right now. Yeah I agree. -A month. -A month is too much.
14:13
-How dare you? -Don't do a month everybody. -Why would you?
14:17
See you guys on the next one, take care.
