Aloo Puri

¼ kg mince - Cook mince (use samoosa recipe)

5 medium potatoes - Use mondial potatoes (not soft cooking).


2 T flour - Wash and scrub the potatoes well.
1 tsp fine salt - Boil the potatoes with the skin on.
1 pinch baking pwd - Do not soak the potatoes in the water for
long as it absorbs water.
- When done drain immediately.
- When almost cool, peel and grind through
mincer.
- Add remaining ingredients and mix well.
- Use the potatoes immediately to shape the
aloo puri.

Bhajia

½ cup cake flour - Mix all ingredients (except baking powder)


½ cup chana flour well to form a stiff batter.
1 egg - Add a little water at a time if required.
2 tsp ginger garlic - Just before frying add baking powder and 1T
1 rounded tsp salt hot oil to batter and mix well.
2 tsp dhana jeero - Fry in deep oil till golden brown.

Bhaji Rotla

½ cup cake flour - Mix together.


½ cup bread flour
½ cup mielie meal
½ cup gram flour
3 tsp salt
1 tsp crushed red
chillies
2 tsp dhana jeero
1 tsp gharam
masala
½ tsp arad

3 med onions - Spin ingredients in food processor.


1 bunch dhania - Ingredients should be at room temperature.
6 bunch methi bhaji - Add baking powder just before frying.

Chicken Cups
Makes 2 dozen

2 cups chicken - Cook chicken with normal spices.


1 med onion - Add all ingredients to food processor and
¾ cup cheese chop till well blended.
3 T flour - Place spoonfuls into cupcake pans.
1 tsp baking powder - Sprinkle seeds or herbs.
4 eggs (beaten) - Bake at 160C for 15-20 minutes.

Chicken Cutlets

½ kg chicken fillet - Add all ingredients to food processor and


3 slices bread process till mixed well.
green chillies - Add baking powder just before frying.
1 tsp salt - Add a little oil to frying pan.
½ tsp pepper - Drop spoonful of batter and pat with spoon
¼ tsp crushed jeero to shape.
¼ tsp cinnamon - Freeze if required.
1 T ground almonds - Before serving braise in garlic butter.

Chicken Nests

1kg chicken fillet - Cut fillet into thin strip and mix well with
3 T soy sauce remainder of ingredients.
2 tsp freshly ground - Marinated chicken must have a sticky
pepper consistency (not too dry and not too moist)
1 tsp zeal salt (or
aromat)
juice of 1 sml lemon
(or 3T juice)
2 tsp garlic
2 eggs
1 tsp green chillies
salt to taste

2 packs samoosa - Cut the samoosa pur in half horizontally.


pur Then vertically cut each half into 5mm strips.
- Loosen strips and place a small handful in the
palm of your hand.
- Place 1 tsp of chicken filling onto the middle
of this pur. Squeeze in the palm of your hand
till the chicken is covered and it forms a ball.
- Do not handle too much and freeze well.
- Fry semi-frozen in deep oil, turning only
once.
- Serve with a sweet chilli chutney to which you
can add some soy sauce and dry roasted sesame
seeds.

Dhodi Rotla

2 cups dhodi - Mix all ingredients together.


(grated) - Drizzle oil in pan.
1 med onion - Drop a tablespoon of batter onto pan and
(grated) flatten.
½ bunch dhania - When brown, drizzle oil on top of rotla and
(chopped) turn over.
1 cup bhaji - Do not press flat when cooking.
(chopped)
1 tsp green chillies
1 rounded cup
chana flour
3 T cake flour
1 egg (beaten)
1 ½ tsp baking
powder
¾ tsp fine salt
½ tsp dhana jeero

Farmer’s Pie

3 ½ cups flour - Form dough using rubbing in method. Keep

½ tsp salt - Divide in two and roll out to size of pan.
½ lb margarine - Put one half at bottom.
1 egg - Add filling and close with the other half.
±½ cup milk - Brush with remaining egg.
±½ cup water - Bake at 180C.

Steak filling:
1kg steak - Cube steak and cook with ginger garlic, green
3 medium potatoes chillies, salt and pepper. Leave a little moist.
1 large onion - Place over dough. Sprinkle lots of lemon juice
and some chillies (optional).
- Place onion rings.
- Cover with mash (season slightly).
- Cover with the remainder of the dough.

Kieve

500g chicken mince - Mix all ingredients together.


1 tsp crushed garlic - Flatten a little in palm.
1 T lemon juice - Place garlic butter sticks in center.
4 tsp green chutney - Roll and form seekh kebab shapes.
2 T fresh dhania - Roll in bread crumbs.
(chopped) - Dip in egg and shallow fry.
½ tsp dhana jeero
½ tsp salt
¼ tsp pepper

Lagan - Bhaji

1 cup cubed chicken - Add spices to chicken and cook.


1 cup mix veg - When ½ done add mixed vegetables.
1 can creamstyle - Cool and then mix all ingredients together.
sweetcorn Ingredients should be at room temperature.
1 ½ cup cake flour - Pour into an oven tray and sprinkle sesame
3 tsp baking powder seeds over.
1 cup gram flour - Bake at 180C for approximately 40 minutes
4 eggs and then reduce to 160C for 10 minutes.
1 cup milk
1 cup grated onion
4 bunch methi bhaji
(chopped)
½ bunch dhania
(chopped)
1 cup oil
2 tsp green chillies
1 tsp fine salt
¼ tsp pepper

Lagan – Sweetcorn

1 tin creamstyle - Mix all ingredients together.


sweetcorn - Pour into glass tray.
2 eggs - Sprinkle with thill or khus-khus.
1 cup milk - Bake at 180C for 30-40 minutes.
1 cup flour
1 tsp baking powder
2 T mielie meal
1 tsp fine salt
1 tsp green chillies
2 T ghee (melted)

Lemon Swissroll Bread

500g chicken fillet - Cube fillet and cook in oil with salt, green
1 tsp salt chillies and ginger garlic.
½ tsp white pepper - When water has burnt out add flour, butter
1 tsp green chillies and milk.
1 T ginger garlic - Cook till thick and saucy.
1 tsp oil - Remove from heat.
5 T flour - When cool add lemon juice and white pepper.
2 T butter
1 cup milk
8 T lemon juice

1 ½ loaves white - Roll out bread flat with a rolling pin.


bread - Place filling at the end of a slice and roll like
a swissroll.
- Seal with flour and water paste.
- Now freezer suitable.
- Dip in beaten egg and fry.

Magic Dough

5 cups flour - Mix together to form into a soft dough.


2 tsp salt - Cover dish and leave to rise in a warm place.
1 pkt dry instant - Once risen, punch dough down and use as
yeast desired.
¼ cup sugar
1 cup oil
1¼ cup boiling
water
1¼ cup cold milk

Mince Bread Sandwich

bread - Remove crust from bread.


mash - Spread mash on 2 slices of bread.
mince - Put a layer of mince over 1 potato slice.
egg - Turn over the plain potato slice onto the
mince slice and cut into quarters.
- If required freeze and semi-defrost before
frying.
- Dip in beaten egg and fry in shallow oil.
- Sprinkle salt and pepper over both sides and
serve with chutney.

Mince Cutlets

1 kg mince - Wash and drain the mince.


2 tsp green chillies - Remove the crust from the bread and spin in
1 full tsp fine salt the food processor with the dhania.
½ tsp black pepper - Add the rest of the ingredients to the food
1 tsp ground jeero processor and mix well.
3 slices bread - Shape into balls and pat it flat.
dhania - Bake at 220C for about 10 minutes.
100g butter - Do not burn out the water.
- Can now be frozen.
- Dip cutlets in egg and fry.

Moons Filling

½kg chicken fillet - Cube the chicken small.


1 T ghee - Braise jeero in ghee.
1 T whole jeero - Add chicken with spices and cook till water
1 tsp green chillies has burnt out.
½ tsp salt - Add tomato and cook till water has burnt
1 tsp dhana jeero out.
1 T ginger garlic - Add corn, cook for 2 minutes and then
1 T green chutney remove from heat.

3 cups flour - Boil water with butter and salt.


2 – 2½ cups water - Add flour and mix, remove from heat and

Mug Dhar Bhajia

2 cups moongh dhal - Soak dhals overnight. Rinse well, drain and

shallot - Shape and fry in deep oil on medium heat.

Pandella

1 large English - Grate cucumber and mix together all

8 T chana flour - Add enough water to make a firm batter
1½ tsp mielie meal that drops easily from a spoon.
3 tsp flour - Drop some oil onto the pan.
½ tsp salt - Drop a heaped tablespoon of batter and
¼ tsp arad flatten.
½ tsp dhana jeero - When bottom is brown, drop a little oil on
½ tsp green chillies the top, turn over and fry till done.

2 ½ cups flour - Cook 600g chicken cubes in ghee with salt,

6 oz butter - Rub 6 oz butter into flour mixture. Make into

Serves

4 cups flour - Make dough.


1 tsp salt - Divide into 3 and roll out into rectangles.
4 T oil - Spread sauce (keep some aside for the

3 cups flour - Sift together dry ingredients.


125g butter - Rub butter into flour (butter must be at room

1 cup chicken fillet - Cook chicken in a little ghee with green

¼ cup dhania - Mix all ingredients together.
¼ cup red and green - Pour into greased tray and sprinkle topping

Samoosa – Cheese and Corn
Makes app. 10 dozen

1kg sweetcorn - Finely chop the onions and braise till soft in a
(frozen) little oil. Do not brown. Leave aside.
2 large onions - Cook corn with salt till water has burnt out
2 tsp green chillies and process in food processor for a few seconds.
2 tsp salt - Add chillies and onions and mix.
300g cheese - When cool add grated cheese and chopped
1 sml bunch dhania dhania.

Samoosa - Mince
Makes app. 10 - 12 dozen

1kg mince - Braise till all the water had evaporated.


1 T green chillies
1½ tsp rough salt
3 tsp ginger garlic
3 tsp dhana jeero
20ml oil

400g onions (cubed) - Add onions, arad and pepper and braise till
¼ tsp arad the onions are soft.
¼ tsp pepper - Remove from heat and cool completely.

Samoosa – Potato
Makes 8 dozen

6 med potatoes - Braise green chillies and ginger garlic in oil till
1 tsp salt hot.
1 tsp lemon juice - Add potatoes and cook on low heat.
2 tsp green chillies - Add a little hot water as necessary and cook
½ tsp ginger garlic on low till done.

Spring Roll Filling
Makes app. 4 dozen

½ kg chicken - Boil spaghetti and keep aside.


1 cup mixed veg - Braise onions in 2 T ghee until soft and keep
½ green pepper aside.
1 med potato -Mix all ingredients together.

1 cup spaghetti
(cooked)
handful shallot
1 T soy sauce

1 tsp ginger garlic - Cube the meat and cook with spices.
¾ tsp salt - When ¾ done add the mixed vegetables and
½ tsp black pepper potatoes.
1 tsp green chillies - Cool.
2 tsp dhana jeero
¼ tsp arad
2 T ghee

- Place a spoonful of filling at the corner of a pastry sheet.


- Roll up, turning twice then tuck ends in.
- Moisten sides with flour paste and continue rolling until the end.

Spinach Pie

1 bunch spinach - Chop spinach. Wash and drain.


1 sml onion - Add all ingredients to a pot and cook on

sweetcorn - Grease pan with a little oil.

¼ - ½ tsp green - When bubbles pop, turn over and cook till
chillies done.
½ cup flour - Cook on low heat.

Steak Pie Filling

1 kg steak - When ¾ done add cubed potato.

Steak Schwarma

steak - Chop cucumber and carrot fine.


cucumber - Cube onions and green pepper and fry it in a
carrot little ghee for 2 minutes.

Stir Fry for Pita Bread

½ kg Hawaiian mix - Heat oil, add Hawaiian mix, cover with lid
¼ kg cooked chicken and cook for 15 minutes on medium heat
20ml oil stirring occasionally.
10ml olive oil - Mix together remaining ingredients (except
10ml soya sauce meat).
5ml sugar - Add sauce and meat to pot and cook on low
10ml cornflour till the mixture thickens.
3ml vinegar
½ cup water
½ tsp salt
¼ tsp pepper
1 tsp chilli powder

Filling:
1kg chicken fillet - Cook chicken till done.
3 T oil
1 L onion
1 tsp ginger garlic

Sauce:
½ tsp cornflour - Mix together all ingredients.
1 tsp brown sugar - Add fried mushrooms, diced onions, tomatoes

2 tsp soy sauce
