I. Using the control panel :

1.1. Preparing the oven for service :

For activate a mode, used the rotative switch

- For each mode, the display panel shows the temperature setting made during configuration for five
seconds, then shows the temperature inside the oven.

- The button start stop begins or stops the cooking

If the oven door is closed :

• The light inside cavity is activate

• The choosen mode is ON

1.2. Shutting down the oven :

- Positioning the rotative switch on

The displays are desactivated.

The components fans are desactivated.

1.3. Cleaning of the oven :

- Positioning the rotative switch on

- With the keys and , choose :

1 to 8 = the automatic cleaning program which carry the washing cycling from 1 to 8

0= the program of manual cleaning for which after a 7 minutes of pre-wash in steam
mode, the buzzer is activated to indicate to the user that it must spray the cleaning
product in the cooking cavity and close again the door to finish the washing/rinsing
cycle (washing cycles details page 15 and 16)

the time display indicate:


- The duration of the chosen washing procedure
- Press START to start this program (you can stop it when you want with the stop)

Be careful : In case of defect or voluntary stop during washing (mainly lack of water), this defect
indicates that it necessary to manually rinse the cooking cavity before using the oven.

1.4. display panel and setting :

The buttons to the right of the display panel are associated


with the pictograms shown in the display panel, and each pictogram
corresponds to an indicator (temperature, time, etc.).

Each indicator displays a setting or a value measured


inside the oven.

In temperature display, the lighting point in right top indicate


the heating request.

To change a setting, press the button located at the right of chosen display,

a lighting point blinking in left bottom of this display to indicate that

you can make changes the set point with the buttons

Before the start :

- the displayed temperature is the temperature of cooking cavity

- the clock indicate the manual mode

or the programmed time

After the start :

- The displayed temperature is the temperature of cooking cavity


- The clock indicate the remaining time to finish the cooking

During the cooking, settings can be recalled and changed

If you wish to work in Manual mode, move the cooking time

setting to obtain

To cool the oven, positioonning the rotative switch on cooling mode.

The cooling symbol appears

You can choose a temperature (minimum of 30°C) and press the start

Water injections with the moving turbines will then cool the cooking cavity.

1.5. Special functions :

Humidity quantity in cavity :

Activate the key to choose a + or – important proportioning


(3 leds lighted = maxi proportioning)

10 % Led EAA = Electromagnetic valve activated 1 sec by 20


20 % Led DAA = Electromagnetic valve activated 1 sec by 10
40 % Led DEA = Electromagnetic valve activated 1 sec by 5
50 % Led DDA = Electromagnetic valve activated 1 sec by 4
70 % Led DDE = Electromagnetic valve activated 1 sec by 3
100 % Led DDD = Electromagnetic valve activated 1 sec by 2

water injection :

Only in convection mode, if oven is on, press this button to inject


water into the cooking cavity.

Spout :

In convection mode, activate this key for choose the open or close
position of spout (a lighted led indicate this position)

Core probe

To run this function , press the button to the right of time displays for 5 seconds. The temperature setting
(from 20°C to 99°C) is displayed for 5 seconds.

You can change this setting with the button and

When the setting disappears, the temperature measured by the core


is displayed in its place.

(if the probe is not connected, the defect 7 appears at the right of
temperature display)

When you have pressed START, the cooking stops when the
temperature setting of the core probe has been reached.

II. Settings :

Settings are adjusted by technical services

This menu can be accessed when the oven is off

Press the following three buttons for 5 seconds :

The version program appears : 2004 12 23

year Month day

The setting menu (1 to 14) scroll through using the key

the settings parameters are numbered from 1 to 14 in time displays.

The proposal values are indicated in temperature display.

The modifications are obtained with the keys

Each modified value will be confirm by the key

To exit the menu, press the key

III. Particularities of operation :

3.1. Water injection :

- Automatic (cooling) :

If cooling mode or steam mode is selected and cavity temperature :

- > 150 °C
Injection during 1 second every 3 seconds

- From 150° to 105°C


Continuous injection of water

- the injection of water stops when the temperature is 105°C for steam mode

- the spout is open

3.2. Regulation of the heating :

3.2.1. Convection and combination with water injection :


After the start, if the temperature of the oven is lower than 13°C (convection/combination) or 8°C (steam)
compared to the set point, the full power is activated as far as the set point.

• If the temperature falls

§ Convection mode:
25 % of power activated to the set point
50 % of power activated to the set point – 0,5°C
100 % of power activated to the set point – 2°C

§ Steam and combination mode :


50 % of power activated to the set point
100 % of power activated to the set point – 1°C

• If the temperature rises :

§ convection mode
the heating is stopped to the set point –2°C

§ Steam and combination mode :


The heating is stopped to the set point –2°C

In combination mode to the set point + 3°C when the water injection is activated, the heating is maintained
to 100 %.

If the rise of temperature in oven is more than 1°C for 2 seconds, the heating is stopped.

3.2.2. Steam with water injection :

The heating is regulated in the same conditions of combination mode with maximum set point 100°C.
The turbine is activated.
The water is injected continuously in the turbine (EV PA2).

After the steam mode choice or after door closing, the spout closes.

3.3. Management of the static contacts cooling :
As soon as a mode is selected, the cooling electromagnetic valve is activated to filling up the heater.
If the start is activated (heating on), the electromagnetic valve is activated with the following configuration
(settings from 1 to 20).

A temperature probe situated on the CPU board controls the ambient temperature. If this temperature is
upper than 65°C, the heating is stopped , the defect 0 over heating components is indicated (paragraph
IV)

3.4. Scrolling of the numeric displays :


The scrolling of the numeric displays progresses to 10 units and then by 10 units at a
time, if the buttons stay pressed.

3.5. Connexion of device to the systems of optimization of energy :


- Connect the control coming from the system on the J4 connectors of CPU (free contact of
potential)
- Position the configuration 12 = 1 in order to the regulation of the oven takes into account the
control of system of optimization (if this control is to zero, the oven heating is desactivated)

Option : (for connexion to the SICOTRONIC system)

It’s possible to take an information “lit consumer” “terminal A” by connecting this information to the static
contactor L1 convection, on the one hand, and the neutral at exit of the D1 circuit breaker, on the other
hand.

3.6. Turbine stops if the door is opened :


The stop and braking system of the turbine engines is activated immediately on door opening.

3.8. Spout control :

- The spout is open : if the door is opened


- The spout is closed : in steaming and combination modes
- Spout closed = Electromagnetic valve desactivated

In each spout closing, the electrovalve of cooling water is activated during 30 seconds.

IV. Notifying and handling defects :

Some defects of operation are controlled by the electronics and visualised on the temperature screen (at
space of C or F)

These defects are numbered and if one of them appears during the operation of the oven, the
corresponding number will be displayed and blinked.

8 Washing defect

It is necessary to correct the defects if not the display of the defect will appear for each cooking
mode concerned.

If a defect appears, a message is indicated in the screen.

The message stay displayed if the concerned mode is not available : choose an other cooking
mode.

4.0. Over-heating components (defect 0) :
A probe of temperature located on the CPU board checks the temperature of the components
if it reaches 65°C, the heating of all cooking modes is stopped.
A probe of temperature measurement located near the statics contactors controls the temperature of
radiator. If this temperature reaches 55°C, the electrovalve of cooling is then activated at 100 %.
If this temperature reaches 65°C, the heating is stopped.
The defect 0 is indicated (check the water arrival).

4.1. Over-heating cooking cavity (defect 1) :


The thermostat of security positioned on the cooking cavity will open if the temperature goes over 350°C.
If it is opened, the convection heating is stopped.

If the turbine is working when the defect appears, it keeps rotating. This defect is visualised by a red led
on the convection relay-board (lighted led = OK).

4.3. Temperature probe on cooking cavity (defect 3) :


If the probe is failing, the corresponding temperature is not anymore displayed on the screen.

The convection heating is stopped.

4.7. Core temperature probe (defect 7) :
If this probe is failing, the corresponding temperature is not anymore displayed on the screen, the core
probe mode is not usable.

4.8. the turbines are controlled on the power-supply board (defect 8) :

if the intensity measure is = 0, 20 seconds after the switching on of the engine, the defect is indicated.

This defect is visualised by a led on the power-supply board (lighted led = 0K).

The convection heating is stopped.

4.9.

4.A. Power cut of the heating (defect a) :

If the oven is linked to the power controlling system and if it’s shut down by this system, the defect
appears. If the power cut disappears, the heating restart (the defect remains displayed until the reset with
the key OFF).

In all modes, the heating is stopped.

4.b. Washing defect (defect 8 ) ):

In case of defect or voluntary stop during washing (mainly lack of water), this defect
indicates that it necessary to manually rinse the cooking cavity before using the oven.

V. Diagnostics :
In case of fault of operation, the technician has disposal of the TESTS’ menu in which he can force all the
activators and visualises their actions to guide the diagnostic.

Some tests (example : command of the boiler heating) do not take into account the securities of the
functional program.
This menu of tests has to be used with care.
In order to use these tests, you need to verify if the configured parameters are conformed to the user’s.

This menu can be found at the end of the setting’s menu position 14/test by pressing the key

- The first procedure carries out a test of displays, of leds, of buzzer to visualize those.

The key activated, sends to you towards the following procedure

- The second procedure permit to test the keyboard keys and the switch. A number appears in time
screen for indicate the good functioning.
