Since then, need has been felt for updating the standard in the light of recent trade practices and the knowledge obtained in its use. In this revised version requirements of plain country spirit and blended country spirit have been modified and requirements of spiced country spirit incorporated. The requirements of various characteristics of country spirit, has also been modified. The detection of methyl alcohol has been incorporated in this revised version, In the preparation of this standard, due consideration has been given to (a) The Prevention of Food ‘Adulteration Act, 1954 and Rules’ framed thereunder; (b) The Standards of Weights and Measures (Packaged Commodities ) Rules, 1977; and (c) The State Excise Duty Rules which permit the with- drawal of duty-free samples for testing. It is recommended that sample for testing by the Bureau of Indian Standards, whenever called for, may also be exempted from excise duty. The standard is subject to restrictions imposed under these rules wherever applicable, ‘Common names of country spirit are given in Annex B. For the purpose of deciding whether a particular requirement of this standard is complied with, the final value, observed or calculated, expressing the result of a test or analysis, shall be rounded off in accordance with IS 2: 1960 ‘Rules for rounding off numerical values ( revised)’. ‘The number of significant places retained in the rounded off value should be the same as that of the specified value in this standard. IS 5287 : 1989 Indian Standard ALCOHOLIC DRINKS — COUNTRY SPIRIT ( DISTILLED ) — SPECIFICATION ( Second Revision ) 1 SCOPE 1.1 This standard prescribes the requirements and method of sampling and test for plain country spirit, blended country spirit, and spiced country spirit. 2. REFERENCES: 2.1 The Indian Standards listed in Annex A are necessary adjuncts to this standard. 3 TERMINOLOGY 3.1 For the purpose of this standard, definitions given in IS 6749 : 1972 shall apply. 4 TYPES 4.1 There shall be the following three types of country spirit ( distilled ): ) Plain country spirit; b) Blended country spirit; and ©) Spiced country spirit. 5 REQUIREMENTS 5.1 General 5.1.1 Plain Country Spirit It shall be the alcoholic distillate obtained from fermented mash of cereals, potato, cassava, fruits, molasses, jaggery (GUR ), juice/sap of coconut, palmyra and other palm trees, mahua flowers of any other source of fermentable carbohydrates. ‘The distillation shall be carried out in such a way that the spirit has flavour derived ftom the natural volatile principles already present in the raw ‘materials used or formed during fermentation. 5.1.2 Blended Country Spirit It may be a blend of potstll distillate, rectified spirit of Grade I conforming to IS 323 : 1959 and or neutral alcohol conforming to IS 6613 : 1972. It shall possess the characteristic taste and aroma associated with the product. 5.1.3 Spiced Country Spirit It shall be plain or blended country spirit which hhas been flavoured and or coloured. For colouring, permitted natural food colours should be used. 5.2 Ethyl Alcohol Content ‘The ethyl alcoho! content in country spirit shall be between 19°9 to 42°8 percent by volume ( 67 to 25 degrees underproof ) at 15/15°C when deter- ined according to the method prescribed in 3 of IS 3752: 1988. The tolerance limit for ethyl aleohol content shall be ++3°0 percent by volume of the declared strength. The ethyl alcohol content and its tolerance may vary according to the Rules and Regulations prescribed by the State Excise Rules. 5.3 Freedom from Harmful Ingredients Country spirit shall be free from any ingredients injurious to health. 5.4 Hygienic Conditions Country spirit shall be manufectured in premises built and maintained under hygienic con (see IS 5837: 1970). The handling equipment like fermentation vessels, storage vessels, bottling ‘machinery and packing equipment shall be clean. 5.5 Water used for fermentation and blending shall be as per IS 4251 : 1957. 5.6 Country spirit shall also comply with the requirements given in Table 1. 6 PACKING 6. Country spirit (distilled ) may be filled in glass liquor bottles (see IS 1662 : 1974) or glass bottles of any other capacity as agreed to between the purchaser and the vendor. It may also be filled in any other suitable container which does not affect its quality. ‘The bottles or containers shall be properly sealed. NOTE — Net volume shall be the volume indicated fon the container subject toa tolerance of 21 per- cent on individual bottle and -40°5 percent in total Solume of 12 bottles. The volume shall be measured at a fixed temperature of 27°C. 8 SAMPLING 8.1 The method of drawing representative samples of the material and the criteria for conformity shall be as prescribed in IS 3753 : 1984. 9 TESTS: 9.1 Tests shall be carried out as prescribed in §.2, 5.6 and col 6 of Table 1. 9.2 Quality of Reagents Unless specified otherwise, pure chemicals and distilled water ( see IS 1070 : 1977) shall be used where the use of water as a reagent is indicated.
