Ingredients:

- 4 large bell peppers

- 1 cup cooked quinoa

- 1 cup chopped mushrooms

- 1 cup chopped zucchini

- 1 tsp cumin

- Salt and pepper to taste

Directions:

1. Preheat the oven to 375°F (190°C). Cut o the top of each


pepper and remove the seeds and membranes.

2. In a skillet over medium heat, sauté the mushrooms, onions,


zucchini, and garlic in olive oil until tender, about 5-7 minutes.

3. Add the cooked quinoa, oregano, cumin, salt, and pepper to the
skillet and stir until well combined.

4. Stu the mixture into the prepared peppers and place them in a
baking dish.

5. Pour the tomato sauce over the peppers, cover with foil, and
bake for 45 minutes.

6. After 45 minutes, remove the foil and sprinkle the cheese over
the peppers (if using). Return to the oven and bake for an
additional 10-15 minutes, or until the cheese is melted and bubbly.

7. Serve hot and enjoy!
